Es más que un simple plato de comida; es una expresión cultural y un auténtico símbolo de la gastronomía de Colombia. Originario de la región de los Andes, especialmente de Bogotá, este plato es una amalgama de sabores, texturas y aromas que capturan la esencia del país. As a strictly amateur cook, I do *often* mess up my cooking. This was one of those, when I managed to overcook the green jackfruit. Here's how I attempted this. First off, I must say, pre-diced green jackfruit is a lifesaver. Thankfully, the veggie sellers in the market I frequent are happy to provide that service for a small fee. This time, I got 1 1/2 kilos of jackfruit, which I washed thoroughly before loading it into a pressure cooker with enough water and a tablespoon of turmeric powder. The turmeric neutralizes the stickiness of the jackfruit. A little hack I learned from Mom. I cooked the jackfruit for two whistles. Then I turned off the flame and let the cooker cool on its own. I also boiled two diced potatoes with a tablespoon of salt in a bowl of water and set them aside. Next, I sauteed two finely chopped onions, a tablespoon of ginger-garlic paste, two chopped capsicum, and four sliced tomatoes in four tablespoons of mustard oil. I added two teaspoons of whole cumin, a teaspoon of black pepper and a little salt. I stirred everything well, before draining the potatoes and adding them into the pan. I gave everything a good stir and added two powdered @maggiindia chicken cubes into the pan. Now, it was time to drain the jackfruits and add them to the pan. I kept stirring everything gently for about thirty seconds. Then I added around 150 ml of water and brought everything to a boil. I let the jackfruits cook for about 4 minutes, stirring ocassionally. Then, I added two teaspoons of ghee, gave everything a good final stir, turned off the flame, and adjusted seasoning. The jackfruits did look overcooked and lost quite a bit of their firmness, but I must say, it tasted heavenly. Will definitely try making this again, soon. ❤️❤️❤️

ℕ𝕚𝕜𝕚𝕥𝕒 𝕠𝕗 𝕄𝕒𝕕𝕖𝕚𝕣𝕒 Originally from a fishing village of Câmara de Lobos the cocktail was conceived by a man called Marcelino who immigrated from Brasil and was seeking to recreate tropical flavours. It consists of the combination of ice cream, white beer, pineapple juice, pineapple and, some times, white wine. The village is also widely known for another famous gentleman. Sir Winston Churchill visited here with his wife after the WWII and dedicated himself to painting the scenery of the viewpoint of Espírito Santo, which is located at the entrance of Câmara de Lobos Going back to Senhor Marcelino, the story has it that he loved the Elton John’s song Nikita so much that he named his creation after it. Currently, there are different version of the cocktail that can be prepared with tropical fizzy drinks like the local “passion fruit” Brisa and white wine instead or in addition to beer. Here, I leave what seems to be the classical recipe. 500 ml. pineapple juice 6 scoops of (vanilla) ice cream Sliced pineapple Beer q.s. (enough to flavour) Whizz the ice cream and juice in the mixer. Add the beer to the mixture. Mix well until you get a homogeneous result. Pour in a tall glass with a slice of pineapple, serve with a straw. NASI GORENG KAMPONG 🇸🇬🇲🇾 Recipe 2 of 10 Fried Rice has always been my top fave comfort food and this Malaysian & Singaporean variant is definitely one of my all time fave! Nasi Goreng Kampong translates to Village Fried Rice. It is packed with so much flavour and is so dangerously addictive! There are 2 important rules for me when making fried rice: 1. MUST use cold rice. Leftover rice from the day before that's refrigerated overnight is the best kind. Never ever make fried rice with freshly cooked rice, that's blasphemy. 2. MUST use wok to cook. This I can be more flexible, but using wok truly WOK wonders! 😄 Ingredients: 3 cups cold rice 2 cloves garlic 2 shallots 5 chilli padi (bird eye chilli) 1 cup ikan bilis (dried anchovies) separated, set aside some for garnish 150g chicken breast, cubed A small bunch of water spinach 2cm belacan (fermented shrimp paste) 2 eggs 1-2 tbsp sambal belacan (will share recipe on the highlight) 1-2 tbsp sweet soy sauce (kecap manis) Salt to taste Cucumber and tomatoes for garnish Instructions: Make the sambal belacan (shrimp paste chilli condiment), you can make ahead of time and keep refrigerated in a tight lid jar and it can last for 2 weeks or so. Cut the water spinach, take only the leaves and upper part of stem. Separate the leaves and stem, cut into the length of your pinky finger. Cut chicken breast into cubes. Toast the belacan (sambal shrimp paste), set aside. Make the paste mix: Chop garlic, shallot, and chilli padi. Pound 1tbsp dried anchovies, then add the chopped garlic, shallot and chilli padi into the mortar and pestle. Then add in the roasted Belacan. Heat wok and add oil, crack both eggs and scramble. Then set aside. Using the same wok, add more oil, then deep fry the Ikan Bilis until crispy golden. Set aside some for garnish, set aside the rest to cook with rice later. Using the same oil, saute the paste mix until fragrant. Add in the cubed chicken, stir to combine. Then add in the water spinach stem, followed by Sambal Belacan (feel free to use store bought ones if you dont feel like making them from scratch). Continue ⬇️
