Hallo zusammen 🤗! Die Wärme ist wieder da und die Lust auf etwas leichtes und leckeres 😋. Deswegen habe ich mir überlegt diesen leckeren Salat zuzubereiten 👌 Dafür braucht ihr: 2 Handvoll Babyspinat 150 Gramm Cherrytomaten 1 Knoblauchzehe 1 rote Zwiebel 2 Scheiben Brot Feta Käse 8 EL Olivenöl Kräutern ( Oregano, Basilikum, Thymian) Salz, Pfeffer Paprika edelsüß Chili Flocken 2EL Zitronensaft Ca. 100 ml Wasser 2 EL Essig 1 Prise Zucker Feine Balsamico Creme Zwiebel schälen, in Spalten schneiden, Wasser, Essig, Zucker und etwas Salz hinzufügen, vermischen und zugedeckt ca. 30 Minuten marinieren lassen. Cherrytomaten waschen, abtrocknen, halbieren. Knoblauch schälen, pressen. Tomaten, Knoblauch, Kräutern, 2EL Öl vermengen, Paprika edelsüß und Chili Flocken unterheben, mit Salz und Pfeffer abschmecken und für 15 Minuten in den vorgeheizten ( 180° Ober-, Unterhitze ) schieben. Aus dem Backofen holen und abkühlen lassen. Das Brot grob würfeln, mit Paprika edelsüß würzen, mit 2EL Öl beträufeln, im Backofen (180°) goldbraun anrösten, abkühlen lassen. Spinat waschen, abtropfen lassen, auf ein tiefen Teller geben, darüber die Tomaten verteilen. Von den Zwiebeln das Wasser abgießen, abtropfen lassen und über den Tomaten verteilen. Feta zerbröckeln, über die Zwiebeln streuen. Letztendlich die Croûtons verteilen. 4EL Öl mit Zitronensaft vermischen, mit Salz und Pfeffer abschmecken, den Salat mit der Vinaigrette beträufeln. Ingredients: 1 cup Rocket 100g Quinoa cooked 100g Roasted Butternut Squash or sweet potatoes 50g Roasted chickpeas 1/2 Avocado 150g Chicken 1tsp cinnamon 1/2 tsp ginger 1/2 tsp cumin 1 tsp maple syrup Sweet delicious Tahini dressing Dressing: 1 tbsp tahini 1 tbsp maple syrup 1 tbsp lemon juice 1 tsp dijon mustard salt pepper The Salad of Autumn is one of my absolute favourites to make. Sweet cinnamon creamy squash or sweet potato and crunchy chickpeas are the taste of fall. 1. Roast Butternut squash or sweet potato. I added 1tsp of cinnamon and 1 tsp of maple. I used the roast option on my airfryer 15 min at 170 2. Rinse chickpeas well, spray with oil and add spices: 1tsp cinnamon, 1/2 tsp cumin, 1/2 tsp ginger. I roasted these in my air fryer for 15 min at 170, Be sure to toss half way. 3. While they roast simply grill some chicken or your protein of choice. 4. Prep your bowl with your gorgeous veggies. 5. Hello again Instagram friends- It’s been a long time, nearly a year! So many times in the last year I’ve taken a photo of my plate of food and wanted to share but then forgot to post it or decided in my mind it was not different or interesting enough. Do people care what I make or eat? Does it inspire anyone? Either way, I know that I enjoy looking back at what I’ve made in one place so here goes- I made a new salad today to manifest a warm spring and summer 😂 chickpea and mango salad! Ingredients: 1 can of chickpeas drained and rinsed A small handful of finely chopped parsley and coriander The following all diced: 1 mango (not an Indian mango) Half a red onion 2 small bell peppers 1/4 cucumber 1/2 green chilli de-seeded Juice of one lime 1 tbsp extra virgin olive oil A pinch of salt and pepper Mix or shake it all up!
