Guess which one is the crazy one 😅. I love ‘em dearly. But boy are they expensive. We put away 250 bales of hay for our winter and tomorrow we will use up the last two on these girls. We’ve been holding off letting them into the pasture until after our first cut of hay (likely at the end of the month), but that means we used 250 bales we produced last year, that otherwise could have been sold at $15-20/bale, to keep them fed and happy over the winter and early spring. That’s over $1000/cow. On top of the purchase price. And we still have another 5 months to go to the processing date this year. So when you gasp in shock at the grocery store when you see the price of those steaks, yeah, it really does cost a lot to raise beef. A heck of a lot. And beef farmers do it with care and love for their animals. So much grazing going on! Our second batch of broiler chickens are out in the #rovabarn getting a bit of fresh grass every half hour during daylight hours The layer chickens are out by the road at the moment. But not for long, as they will be moved on to another farm in order to make room for our new batch of 200 young layer chickens that come next week. And off in the distance is a herd of happy heifers. Beautifully spiced slow-cooked shredded pork, fried up to crisp perfection and served up with the most amazing juices for dipping, Sounds great, but it must be hard if it tastes that good?!? #yummmm #pastureraisedmeat #floridafarm #pastureraised #floridafarmers #cincodemayo #cincodemayo2024 NOT AT ALL! This is a set-it-and-forget-it kinda dish Give it a try and you'll say Ole! Ingredients: 4 lb Pork shoulder boneless (5lb bone in) 2 1/2 tsp Salt 1 tsp Black Pepper 1 Onion , chopped 1 Jalapeno , deseeded, chopped 4 Cloves Garlic, minced 3/4 cup Orange Juice Rub 1 tbsp dried oregano 2 tsp ground cumin 1 tbsp olive oil Instructions: Rinse and dry the pork shoulder, rub all over with salt and pepper. Combine the Rub ingredients then rub all over the pork. Place the pork in a slow cooker (fat cap up), top with the onion, jalapeño, minced garlic (don’t worry about spreading it) and squeeze over the juice of the oranges. Slow Cook on low for 10 hours or on high for 7 hours. (Note 2 for other cook methods) Pork should be tender enough to shred. Remove from slow cooker and let cool slightly. Then shred using two forks. Optional: Skim off the fat from the juices remaining in the slow cooker and discard. If you have a lot more than 2 cups of juice, then reduce it down to about 2 cups. The liquid will be salty, it is the seasoning for the pork. Set liquid aside – don’t bother straining onion etc, it’s super soft. To Crisp: Heat 1 tbsp of oil in a large non stick pan or well seasoned skillet over high heat. Spread pork in the pan, drizzle over some juices. Wait until the juices evaporate and the bottom side is golden brown and crusty. Turn and just briefly sear the other side – you don’t want to make it brown all over because then it’s too crispy, need tender juicy bits. Remove pork from skillet. Repeat in batches (takes me 4 batches) – don’t crowd the pan. Just before serving, drizzle over more juices and serve hot, stuffed in tacos (see notes for sides, other serving suggestion and storage/make ahead).

For lunch, I made pasture-raised lamb with rainbow chard. I prepared the lamb by first slow-cooking onions in spring water, then added fresh basil, Herbs de Provence, lamb mince, salt, and lastly, organic citric acid-free tomato puree. Almost everybody likes bacon, but who doesn't love Bacon Crack? :)) Sunday is National Pecan Day - the pecan is native to central and southern United States. “Pecan” is an Algonquian word, meaning a nut requiring a stone to crack. They are an excellent source of copper, iron, magnesium, manganese, phosphorus, zinc, and vitamin E. Pecans can help reduce LDL cholesterol and increase HDL cholesterol levels in the blood. They are also rich in dietary fiber. So there you have it, its healthy! Ingredients: 2 tablespoons pecans chopped fine 2 tablespoons brown sugar 1 1⁄2 teaspoons pepper 12 slices bacon thick cut style Instructions: Preheat oven to 400. Stir together pecans, brown sugar and pepper. Place bacon on lightly greased wire rack in aluminum foil lined pan. Press pecan mixture into bacon and bake 20-25 minutes. 2024 marks seven years for us as Earnest Roots Farm. For the past four years we have really focused on getting nutrient dense, quality meats to our local areas through deliveries, on farm pickups, and drop locations. The past year we have learned as much as we can about the logistics of shipping - and here we are. To look back at where we started to where we are today is truly humbling. If you would have told me back then we'd be where we are now, I would have laughed and named my first born Isaac. The years have not been without their obstacles and I'd be lying if I didn't say we talked about throwing in the towel many times in those early years. But my goodness, how the Lord has blessed and guided us along. He is good, through all we have faced HE has been our constant. We have learned SO much by failing and seemingly falling on our face. Thank goodness a little dirt doesn't scare us and we know how to wipe it off and keep going. From the time it took us seven hours to process 20 birds, building makeshift brooders in our basement & mobile shelters out of bamboo, and all the in-between that goes with running a business, we've grown so much as people. I'm thankful for the beginning we had and how it led us to where we are today. We wouldn't be who we are without it. We don't have it figured out by any means - each day has its own new obstacle (believe me) and problem to solve and we plan to keep on solving. Here we are now - offering Alabama some of the best there is. We strive everyday to produce quality meat and goods you can trust. And our promise to you is that we won't stop striving for better.
