a simple combination i constantly crave - yoghurt with some form of roasted fruit. and from the time i made it at the start of this month, it’s been coffee roasted plums. and if anyone is wondering why coffee always comes up… it’s because i love coffee - love to drink it and have it in my food. i think it just adds the right amount of bitterness to anything sweet. coffee roasted plums with thick skyr, honeycomb, pistachios and mint always feels like such a treat in the morning! oh and with added watermelon my grandma got when i was unwell to get rid of my heatiness🤞🏼

IT’S DELICIOUS! PESTO CHICKEN PASTA with ROASTED BRUSSEL SPROUTS! Who doesn’t LOVE simple meals like this? My daughter in @seattlewashington prepared this yummy Sunday meal… Had to share! It’s a SAVER too! Ready in the time it takes to roast chicken breasts & Brussel sprouts…😋😋 . Here’s the ‘how to’…for four… . • On a parchment covered baking sheet, placed two large boneless chicken breasts. Sprinkle liberally with garlic powder & smother with pesto sauce. • Clean & half 1 1/2 pounds of Brussel sprouts… Toss with salt, pepper & olive oil. • Place chicken & sprouts in a 375 F oven for 40 minutes. Toss sprouts half way thru cooking time. Sprouts will be bright green & slightly charred. Chicken will be ~165 F . • Meanwhile…Cook a pound of pasta… we used orecchiette shaped pasta. Drain pasta & return to pot… toss with 1/2 cup pesto sauce. • Cube chicken & add to pesto pasta with Brussel sprouts… Add 1/3 cup Parmesan cheese. Blend well. • Serve in bowls with a garnish of Parm & a sprinkle of crushed red pepper flakes. Salmon crudo mini toasts—little cutie pieces of brioche pan-fried in rendered pork belly fat, topped with labneh, chives, yuzu-marinated salmon sashimi, ikura/salmon roe, cucumbers, and dill. The darling dainty flowers are forget-me-nots. ⁣ ⁣ I’ve seen/visited a few sushi restaurants lately that have really fancy toasts on the menus. They usually involve wagyu and uni and even caviar but this is my more “budget-friendly” version of a sushi x toast mashup (and it still felt quite bougie to me)! ⁣ ⁣ I have been saving the fat that I skim off whenever I make braised pork belly and I’ve finally found an incredible use for it, which is pan-frying thick slices of plush brioche until the outsides are crispy and smell amazingly of pork. Mulled Apple Cider is brewing up in the kitchen! 🍎🍏 The “ber” months are upon us! Not only is it delicious, but it also doubles as a whole home fragrance! This is such a simple way to add cheer to any gathering this fall! A real crowd pleaser that can sit simmering on the back of your stove while you whip up dinner or enjoy take out! Recipe: 1.5 liters Apple Cider 1 large orange (sliced) 1 Granny Smith apple (sliced) 1 Macintosh Apple (sliced) 1-2 cups fresh cranberries 1/4 cup mulling spice blend or - 8-10 star anise - 1 tsp allspice - 2 tsp whole cloves - 5-6 cinnamon sticks Add all the ingredients to a pot and allow to simmer on low for approximately 1 hour. Hopping into summer! 🐸 and 🍄 and 🐌 OH MY! This little “Toadstool Cake” might just be my favorite ever! I may or may not have been heavily influenced by the illustrations of Frog and Toad by Arnold Lobe. Quirky little amphibians living out their best life just seems like the ideal scenario to me! An easy lunch, a simple twist on caprese salad. An early ode to summer, this is fresh ricotta, Kumato tomato (because they’re the only ones I can find during the winter that have the right amount of sweetness), fresh basil, a sprinkling of zaatar, and evoo. Preserved Lemon and Herb Baked Orzo 💕 Inspired by a Syrian yogurt-baked orzo, this dish gets it all done in one pot. I used my Le Creuset and changed the method slightly to sauté the veg first — in my case, garlic, leftover red onion, kale, asparagus — in olive oil with coriander, fennel seed, Aleppo, sumac, lemon, minced preserved lemon, salt and pepper, herbs. Added the orzo to toast in the same pot, then took off the heat and folded in yogurt mixed with an egg. Poured in boiling water. Then baked with the lid on for 25 minutes at 450 degrees F. Took off the lid and baked for another 5 minutes until crispy and golden brown on the edges. Served with chermoula, rose harissa, feta and olives. Delightful, healthy, and an easy one pot meal! We liked that the orzo got a nice bottom crust and became more rice like with this preparation. Halloumi, Broccoli and Chickpea Bake 😋 A wonderful traybake from One Pot, Pan, Planet @we_are_food 👍 Oven roasted chickpeas are one of our favorite snacks or salad ingredients. We love them, so this recipe was an easy pick for today’s #rainydaybitescookbookclub . The challenge was to cook a recipe from the traybake chapter and oven roasted chickpeas caught my eye. The chickpeas are oven roasted in ras el hanout (made my own from @epicurious ), the zest and juice of an orange and some olive oil. After ten minutes a block of halloumi, broccolini and pumpkin seeds are tossed in tahini, olive oil, orange zest and juice and added to the tray of chickpeas, then broiled till the halloumi is nicely browned. The whole pan gets a garnish of pomegranate seeds, parsley and the halloumi gets a drizzle of honey! Served with flatbreads and #dinnerisserved 😋😍😋. SALMON + SMASHED FETA AVOCADO 🐟🥑 on a bed of sweet gem lettuce leaves, fragrant rice & then topped off with fresh herbs, spring onion, chillies and fresh lime for a true flavour sensaaation 💥 Ingredients: Salmon (I grabbed some from Tesco who do 4 fillets for around £5 so works out at £1.25 a fillet) 🐟🐟 Garlic Paprika Onion granules Chilli butter @allthingsbutter__ 🧈🌶️ (normal butter is also fine but this really did slap) 1 large avocado 50gish feta / salad cheese Fresh herbs e.g. coriander and dill Fresh lime 1 sweet gem lettuce Lime and coriander rice @tildarice Recipe: Preheat oven to around 205-210°C. Add salmon to a tray with 2 diced garlic cloves and a few lime wedges placed in between the fillets. Season the salmon with a good sprinkle of paprika, onion granules, chilli flakes, salt, pepper. Pop a few small slices of the chilli butter on top of the salmon so that it cooks the salmon + melts over the top of it whilst in the oven. Bake for 10 to 12 minutes / until cooked through. Meanwhile blitz / mash together avocado, feta, fresh chopped herbs, a clove of garlic, a good squeeze of lime juice, a small drizzle of olive oil and a little salt & pepper. Taste test as you go along and adjust as needed. Assemble lettuce leaves on a plate, followed by the rice, followed by the salmon. Add the avocado feta mix on top. Garnish with spring onion, extra fresh herbs, extra sprinkle of salt, pepper, chilli flakes / fresh chilli. Another squeeze of lime juice. Tuck in with cutlery (optional) OR use the lettuce leaves as little food boats 🤭

Bakewell Tart for the @sundayafternoonbakingclub’s “Best of British” theme. I love Bakewell Tart- a simple dessert with raspberry and almond is just what I like best. But was a little distracted with Sunday chores while this came together. The back balcony to the house is being demolished and rebuilt this week, so I had to remove everything and find a temporary place for it. Those of you who know me very well know there’s been a squirrel-related activity taking place out there the last few months, so putting away certain items took a little more consideration. While my mind was on squirrel stuff, I almost let the tart crust burn and then I very nearly dropped the entire thing while taking it out of the pan, but we survived to tell the tale (though the squirrels have not). Easy Sourdough Roll Recipe using fresh stone-milled flour! These soft and chewy, easy to make rolls are so delicious. We topped some with flaked sea salt and some with a slice of Brie cheese. Yum! I’ve made these rolls using fresh stone-milled flour from @farm2flour. If you’ve not made sourdough using fresh flour, it can be an adjustment. This no-knead recipe is a perfect place to start. Ingredients * 454g (16 oz/ 1 lb) bread flour (I’ve used @farm2flour organic bread flour * 8g (2 tsp) salt * 370g (1 1/2 cups) water * 110g (~generous 1/2 cup) active sourdough starter, 100% hydration Instructions Combine starter and water; mix to combine. Add flour and salt. Combine first with a fork or dough whisk (my preferred method) and then using a dough scraper into a shaggy dough. Autolyse (let rest) for one hour, stretch and fold several times to make a more smooth dough and proof all day or overnight in a warm place. Turn out onto floured board, stipple with your fingers to de-gas, let sit for 10-15 minutes. Weigh dough and divide by 12 (1006/12=83g each approximate) and shape dough into balls. To bake later - at this point you can proof at room temperature or put in the fridge to cold proof for up to 24-48 hours. When ready to bake, remove and let come to room temperature, rise, then bake. To bake now - place dough on a sheet pan sprinkled with flour or semolina or on parchment and let rise on a warm spot for 2-3 hours or until the dough doubles in size and gets puffy. Optional, top with flaked sea salt or Parmesan, Brie or another cheese. Bake on a sheet pan at 425° for 15-20 minutes until the rolls are a golden brown. Little known fact! I’m still running private virtual classes. Whether you are near or far, I can pop into the comfort of your home and guide you through whatever dish(es) you want to learn! Today I got to work with an amazing mother daughter team in Massachusetts. We made three dishes together- a proper omelette stuffed with soft-ripened triple creme, mushrooms, and shallot. We also cooked salmon en papillote with leeks and spring veggies, and lastly, a classic long-braised beef stew, which is surprisingly perfect for spring, in spite of it being a typical winter food. A little tip? Make some quick gremolata and serve it with the stew. Lover’s Pasta!   . The very first time that Rebekah and I went to lunch together we were just “friends”.  We both worked at the same TV/film production company in LA and this lunch was “totally professional”. The only problem was that I was insanely in love with her. That was years ago. Time flies when you’re having fun... and raising four kids. We call them the crowded years.  That first lunch was at a sidewalk restaurant on Sunset Blvd was amazing. Maybe it was the company, but with a glass of ice cold Rose, this dish got seared into my memory bank as what lovers should make together. We have now transformed the meal in many ways. Baked dhal with tamarind glazed sweet potatoes for our final recipe challenge from One Pot, Pan, Planet by @we_are_food for our #rainydaybitescookbookclub. This recipe comes from the One Tray chapter and our group could choose any recipe from this chapter to make. I actually made several recipes from this chapter and posted them this week including the brown butter double chocolate cookies, chocolate olive oil rosemary cake, sticky sesame baked cauliflower, and all were so good! I actually had another four tabbed to make, but, I ran out of time! This sweet potato dhal was absolutely gorgeous! Flavorful and hearty this is a great vegetarian main that heats up well the next day too. Picture a bed of lentils that are cooked with onions, ginger, garlic, cumin, cardamom, turmeric, chili, tomatoes, stock, and coconut milk until all the flavors come together. Then thin long slices of sweet potatoes are nestled over the top, forming a lid, and the top of the potatoes are brushed with tamarind. The skillet is then baked in the oven until the sweet potatoes soften, and almost caramelize at the edges, and the dhal softens underneath. It’s served with a squeeze of fresh lime juice and I actually liked it with a dollop of Greek yogurt too. This makes quite a bit so there were plenty of leftovers for the next day too. I can’t wait to see what you made from this chapter. This book fast became one of my favorite vegetarian cookbooks. Every single recipe was delicious, easy to make, and with a great balance of flavors. I have two of her other books and I know I need to get her other two now too. One-Pan Roasted White Fish with Tomatoes, Zucchini and Olives We’re in the business of writing about food, so curiosity about ingredients comes with the territory. But when it comes to buying fish, we tend to go with the familiar — a salmon fillet, shrimp, or a variety of shellfish if we’re feeling fancy. But there’s so much variety in sustainable fish offered at the fish counter or in the frozen aisle, it’s a shame not to branch out and try something different. This recipe is perfect with any thick white fish, like cod, hake or haddock, though we can’t really think of a fish that wouldn’t work with these flavors. In this one-pan recipe, it’s just as good with slightly out of season vegetables as it is with perfect summer tomatoes and zucchini from your garden. brown butter sage fried eggs + crispy capers! perfect for a gloomy spring morning (or any day that requires a little bit of extra comfort, really) 🌥️🫶⁣ ⁣ melt some butter in a pan, then add in fresh sage leaves and leave to fry until they stop sizzling (throw some capers in too, if you’d like). remove the sage and optional capers from the pan, then transfer them to a plate lined with paper towel so as to absorb any excess fat. once the butter in the pan has gone nutty brown, top it up generously with olive oil to stop it from burning and turn the heat up. when the fat is shimmering hot, crack in your eggs (careful, things’ll crackle and pop!). cook until the edges are crisp and lacy, basting the whites with fat to cook them quickly, all while avoiding the yolks — you want those to stay nice and runny. grab some toast (no need for butter), top with a fried egg or two, then garnish with fried sage leaves and crispy capers & season to taste. a truly satisfying balm for the soul 💛😌

▷ Biscuit base 100g biscuit crumbs|45g melted butter ▷ Blueberry cheese 160g whipping cream|200g cream cheese|60g sugar| 7g gelatine sheets | 50g hot milk | 100g blueberry jam ▷ Glazed Milk Cap 30g cream cheese | 70g light cream | 15g sugar | appropriate amount of milk - ▷ How to do it ❶Biscuit crumbs➕Mix melted butter, press into molds and refrigerate until ready to use ❷Cream cheese➕sugar🥣mix smoothly ❸Soak soft gelatine slices in cold water in advance and mix with hot milk until melted.
