Cask Layers - What Do They Mean?🥃 If you have ever come across a whisky stave or perhaps peered inside an empty cask, you may have noticed several layers deep within the wood. The layers within the casks themselves reveal much about the whisky making process. Prior to filling, many casks undergo toasting or charring, a crucial step that unlocks compounds like vanillins and lignins through the caramelization of sugars within the wood. As you can see here, not only can the charred surface be identified but also the depth to which the whisky has been able to penetrate the cask, extracting the compounds found deep within these layers. Modern sherry profile on the nose, gooey sherry, rich syrup, super light brine, bourbon cask influence, perfumed raisin, apricot liquor, apple tree blossom, light forest foliage, reduced cherry liquor, with time sherry note dissipates. But after 30 minutes, it re-emerges quite pronounced. It does need time to breathe of course. Palette. Medium to thin finish. Pencil shavings, icing sugar, bitter, astringent, cherry seed, wood bark, earthy, not very pleasant, shockingly light finish. Not a pleasant dram. Exhausted sherry casks are very evident. Very forgettable. An abomination to its former glory. Charge an arm and a leg, hope very few actually drink the stuff. Likely sherry seasoning period has taken a nose dive. Expected way more. Score: 80.25. Dreadful for somthing of this caliber. Nose was 86+, but unfortunately, proof is in the pudding. I wonder what sort of conversations are taking place at Macallan.
