We decided to look to Scandinavia for a little Easter inspiration this year, so dug out Simon Bajada’s The New Nordic to help steer this particular Viking longship of a menu into port. To kick things off, a small Smörgåsbord of lax with Bajada’s Finnish Sweet Mustard sauce, plain and curry sild (thanks Scandi Kitchen) and some prawn skagen on the husband’s onion and pumpernickel breads respectively. Then there was a little rack of lamb served with Janssons Frestelse (Jansson’s Temptation) - one of the glories of the Nordic kitchen. The sweet, salty, savoury sprats in the potato dish went so well with the sweet lamb. All this richness just needed some plainly steamed chard to go with. Slow cooked Ras el Hanout Lamb as Good Friday dinner. Juicy lamb on the bone served with potatoes, shallots, garlic, a buttery steak jus and a fresh side salad with mixed greens, pear and orange. A great start to his weekend full of great food. Inspired by a Recipe developed by @hoglander 2 kg leg of lamb 1 pot of fresh thyme 1 pot of fresh rosemary 2-3 tbsp ras el hanout 5 banana shallots 10 king solo garlics 200 grams of butter 900 grams of ratte potatoes 300 ml dry white wine about 1 liter of water salt pepper Sauce steak jus 0.5 lemon 50 grams of butter Set the oven to 180 degrees C. Cut and tie the herbs together into a bouquet. Rub the meat with ras el hanout, salt and pepper. Place the meat in an ovenproof dish, cut the butter into slices and cover the meat. Peel the onions and place the shallots, garlic and potatoes around the baking dish. Pour in the wine and water and put the herbs down. Finish with a little more of the spices. Wrap the whole mold in aluminum foil so that it stays tight. Place in the oven and cook for 2 hours. Remove from the oven and raise the heat to 220 degrees C. Remove the foil and cook the meat for another 20 minutes until the meat has a nice color. Take out the meat. Strain the liquid from the mold into a saucepan, reduce until half is left. Taste the sauce with lemon juice, salt and pepper and just before serving, stir in the butter. Last night I enjoyed a Bali Sling while watching the most beautiful sky while the sun set before dinner. Nando Boon ex mixologist at the Writers Bar at Raffles Bali created their own signature cocktail. Sipsmith Gin, Balinese arak infused with blue pea tea, tangy jackfruit, grenadine and topped with a Balinese frangipani. Nearly everything is grown within the resort, or on the island of Bali. Raffles Bali has their own garden where the blue pea flower and jackfruit are handpicked. Häromkvällen blev det en middag på @gran_cicchetti i Kalmar. Vi har ätit där förut, men nu har de ett nytt koncept som består av italienska smårätter - typ lite tapasvibb fast italienskt cuisine. Låt oss stanna upp ett ögonblick - är det inte det trevligaste man någonsin hört? Vi går vidare. Sällskapet bestod av halva detta konto + två vänner och vi beställde följande att dela på: Tryffelpasta med salviasmöremulsion och parmesan, Pasta fylld med ost/päron med krämig gorgonzolasås och valnötter, Gnocchi med Karl Johan-sås och pancetta, sauterade tigerräkor med chili, vitlök, tomat och crostini samt en pinsa (en slags pizza, isch) med zucchinikräm, friterad zucchini, mozzarella och färsk mynta. Det var så OTROLIGT gott! Verkligen en matupplevelse värd varenda krona. Favoriten var pastan med päron och gorgonzola - den var så god att en till beställdes in efter ett tag. Gnocchin var lite väl mjuk i konsistensen för vår smak, annars var alla rätter kanongoda. Däremot har vi några anmärkningar på andra detaljer. Dels fick vi inga valnötter på vår första portion päronpasta. Sånt händer, men ändå. Dels var det fyra (!) rätter på menyn som var slut. Det tycker jag är lite väl, faktiskt. Givetvis kan någon enstaka ingrediens sina, men att både två sorters pinsa, en viss typ av toast OCH friterade fiskbollar tagit slut när klockan är 18 en fredagskväll - det känns lite slappt, faktiskt. Bara småtankar såhär på morgonen. Är ”Less is more” och ”downscaling” något du tänker dig för årets julfirande eller kör du all in? Ett av de recept jag använder Saffransglass 6 äggulor 1 dl strösocker 3-4 msk honung 2 -3 förpackningar saffran 1 (ev 1,5 g) 6 dl vispgrädde Innan servering toppa gärna med lite brynt smör och ringlad honung 😋 Steg för steg 🪜 1. Vispa äggulor, socker, honung och saffran pösigt. Vispa därefter grädden som du sen vänder ner i smeten. 2. Kör i glassmaskin och frys i bunke ELLER fördela i portionsformar som du låter stå i frysen i minst 4-5 timmar. 3. Fördela i portionsskålar från bunke. alternativ, ta ut de färdigfördelade skålarna ca 15 min före frysning.
