"Culottage d'une marmitte en fonte" Dénichée à Emmaüs, cette marmitte a presque 100 ans! Pour donner une seconde vie à la fonte non émaillée, le "culottage" est très important. Cette patine va protéger la fonte et empêcher les aliments d'accrocher. Je la réalise en 3 fois avec de l'huile d'olive au four: - bien nettoyer avec un degraissant et selon l'état avec de la laine d'acier. - bien sécher et appliquer une très fine couche d'huile d'olive, essuyer. - mettre à chauffer au four a 160 ° en partant à froid maintenir 10 min - laisser tiédir et recommencer une 2ème fois en appliquant une fine couche d'huile essuyée, puis une troisième fois à 200° cette fois ci . Vous devriez obtenir un fond légèrement brillant. 🦆✨ Experience the classic elegance of Julia Child's Duck à l'Orange! It's a masterpiece of flavor waiting to be savored! 🍊🍽️ Ingredients: • 1 whole duck, about 5-6 lbs • Salt and pepper • 2 oranges • 1 cup orange juice • 1/2 cup chicken broth • 1/4 cup Grand Marnier or Cointreau • 2 tablespoons honey • 2 tablespoons red wine vinegar • 2 cloves garlic, minced • 1 shallot, minced • 2 tablespoons unsalted butter • Fresh parsley for garnish Directions: 1. Preheat your oven to 375°F (190°C). 2. Rinse the duck inside and out and pat dry with paper towels. Season generously with salt and pepper. 3. Zest one orange and set the zest aside. Juice both oranges. 4. In a saucepan, combine the orange juice, chicken broth, Grand Marnier, honey, red wine vinegar, garlic, and shallot. Bring to a simmer and cook until the mixture is reduced by half and slightly thickened. 5. Place the duck on a rack in a roasting pan, breast side up. 🦞 Julia Child's Lobster Thermidor Recipe 🍽️ Ingredients: • 2 lobsters, about 1 1/2 pounds each • Salt and pepper to taste • 2 tablespoons unsalted butter • 1/4 cup shallots, finely chopped • 1/4 cup dry white wine • 1/2 cup heavy cream • 2 egg yolks • 1/4 cup grated Gruyère cheese • 1/4 cup grated Parmesan cheese • 1 tablespoon Dijon mustard • Pinch of cayenne pepper • Fresh parsley, chopped (for garnish) Directions: 1. Preheat your oven to 375°F (190°C). 2. Bring a large pot of salted water to a boil. Add the lobsters and cook for about 8-10 minutes, or until they turn bright red. 3.
