Work from home lunch. Isn’t this nice? The number of work from home days I experienced during Covid was 0. I was essential, and I’m grateful that I got to keep my job and continue bringing home a paycheck during a time where so many others did not. With that said, it’s a nice change to have a work from home day where there is sunlight, comfortable chairs, and good food. 🌞 This took me 15 minutes. The green sauce is a whole bunch of parsley leaves and stems blended with olive oil, salt, and pepper. I used a mix of garlic, chili, and regular olive oil. Use whatever olive oil or spices you like, but remember the parsley is the feature so just don’t overdo it. Homemade toasted sourdough, crispy capers, a soft cheese (you can go mild or pungent - I had a mild cow’s cheese with herbs in my fridge), and a couple of anchovies. Super tasty.
