Back after a year to grace your feed with Ammu’s delicious Christmas dinner! 🎄😌 Although we don’t traditionally celebrate Christmas, Ammu does make a point of preparing us a nice meal, considering it is one of the few times in the year where we all have time off together. The star of the show was Ammu’s hearty Morog Pulao (“chicken pilau”), which you may remember from a previous post as being quite distinct to your standard chicken biriyani. Alongside this we had Gorur Mangsher Bhuna, a rich Bangladeshi beef curry similar in taste and texture to the popular Beef Rendang. Accompanying these dishes were an array of homemade achars (“pickles”) — one mango, one lemon, and one garlic to be precise — with the garlic being my favourite, of course! 🧄 For dessert, we enjoyed an assortment of traditional mishtis (“sweets”). Devouring some gulab jamuns, rasgullas and kala jams was the perfect way to end my day - what more could a girl want? 🤗 Whilst most of us around the world have been celebrating this festive season with our loved ones, the people of Gaza continue to experience death and destruction at the hands of the Israeli State. • DHAKAI MOROG PULAO 🐓 Translating to “chicken pilau/ pilaf”, this one-pot dish is a guaranteed crowd pleaser. This signature Bangladeshi meal is first thought to have been developed in Puran (Old) Dhaka during the Mughal era as it perfectly captures both Bengali and Persian flavours. Although it largely uses the same ingredients, it should not be confused with chicken biriyani! Not only are different cooking methods used, but the Morog Pulao uses rooster chicken which gives it a much gamier taste. It also requires the famous Bangladeshi chinnigura rice as opposed to your standard long-grain basmati. Ammu has been perfecting her recipe for years, using an array of ingredients such as, saffron, mawa (dried whole milk), aloo bakhara (dried plums), onion, mixed spices, and nuts, to name a few! • NANU’S BOROFER SHORBOT 💕🧊 Translating to “ice drink”, this beverage is something my Nanu used to make for Ammu and her siblings on exceptionally hot days and also for iftar, during the month of Ramadan! A close relative to the Thai pink milk, ‘Nom Yen’ or shaved ice dessert, ‘Nam Kang Sai’, here, large quantities of condensed milk and Rooh Afza (a special rose syrup that is hugely popular in the Indian Subcontinent) is poured over crushed/ shaved/ cubed ice and then stirred. Finally, the drink is garnished with finely chopped pistachios and almonds to give it that extra bit of texture and colour. Quick, simple and easy. What makes this drink so unique and original is the fact that it does not use any water or milk to create a liquid base. Rather, it relies solely on the melting of the ice! In Bengali/Bangladeshi households, we typically have ‘shemai’, a sweet vermicelli milk pudding infused with rose water, cinnamon, cardamom, and an array of nuts and raisins. • DHAKAI KACHI BIRIYANI 🐐 Biriyani is one of the most popular dishes in the Indian Subcontinent, with myriad versions in existence. Having first appeared in the royal Mughal kitchens, it is thought to have been inspired from the Persian pilaf. When Dhaka was declared a provincial capital in 1610, high-ranking Mughal officials brought with them many different goods, traditions and cuisines, including the biriyani. Much like the famous Hydrabadi, Bombay, Kolkata and Lucknowi biriyanis, Dhaka has developed its own unique and wonderful take on the dish which can be distinguished from other regional varieties. The most delicious one I have tried is the famous Fakruddin’s Kachi biriyani, located in Puran (Old) Dhaka. 🕌🇧🇩 “Kachi” - derived from the word “kacha”, meaning “raw” - refers to the method of slow-cooking the uncooked biriyani ingredients in a chapati dough sealed pot. Succulent cuts of goat meat (khashir mangsho) are layered together with potatoes and rice, all of which are left to marinate in a melange of aromatic spices, ghee (clarified butter), caramelised onion, saffron, rose and kewra water, aloo bakhara (dried plums), yoghurt, milk and more! The infusion of spices is incredibly important to this dish, and Ammu has perfected the blend - delicate and subtle yet still full of complex flavour. 🥩🧄🌿🧅🌶 Here, Ammu has followed tradition and served her biriyani with a glass of “borhani", a minty, lightly spiced yoghurt drink which helps to settle the stomach after eating rich food. FIRNI & JORDA 🧡 A traditional Eid dessert, the creamy and fluffy firni (rice pudding) is made from coarse and finely ground chinigura rice which is native to Bangladesh. The rice is boiled in milk that has been carefully infused with cardamom and rose water. The raisins and pistachio-almond paste add an extra layer of richness. 🍚 Paired with this is the jorda (or otherwise known as zarda), a boiled sweet yellow/ orange rice dessert, also made from chinigura rice. Here, the rice is soaked in sugar syrup and flavoured with all sorts of nuts, raisins, saffron and cardamom! An idea of my Nanu’s, it might seem strange to combine two rice desserts into one, but thanks to the difference in taste and texture, the union between the firni and jorda is extremely special. LECHE FLAN CAKE 🍮 Sponge cake baked with a layer of leche flan (crème caramel) with caramel syrup drizzled on top, this Filipino dessert is to be a sure hit at any dinner party. Light, fluffy and not too sweet, it is certainly a departure from your traditional Bengali sweet. But, if I was to name one foreign dessert which is adored by all Bangladeshis, it would certainly be the crème caramel (or “egg pudding”, as is referred to in Bangladesh). ROSHOGULLA 🤍 A popular deshi mishti (sweet), enjoyed across the subcontinent, the roshogolla — or otherwise known as the rasgulla — is said to have originated from Bengal. Its namesake is derived from the words “rosh/ras”, meaning ‘juice’, and “golla/gulla”, meaning ‘balls’. Made from homemade cottage cheese (chhana) and semolina, these delicious dumplings are cooked in sugar syrup for around 45 minutes. CREAMY MURGIR KORMA SERVED WITH MOTTOR PULAO🍗 Among the most popular currys in the world, this traditional chicken Korma dish is favoured across the Indian Subcontinent and is a guaranteed crowd pleaser on any special occasion. For us Bangladeshis, chicken Korma is always served during Eid-ul Fitr, typically alongside aromatic peas pilau rice. 🕌 Korma's roots can be traced back to 16th Century India, a time when the region was mostly ruled over by the Mughal Empire. A dish fit for royalty, it not only perfectly encapsulates authentic Indian cuisine, but also the influence of culinary practices inherited from Central Asia, Turkey and Persia, where the early Mughal Emperors came from. 👑 Using doi (yoghurt), milk and mild spices to slowly cook/braise succulent meat still on the bone, this Korma is a far cry from the one we might find at a British Curry house. In fact, when we first came to the U.K., the Korma Ammu encountered here came as a bit of a shock! British Korma, with its garishly coloured, heavy, sweetened gravy and boneless meat, can perhaps be viewed as a distant descendant of its Indian ancestor - one which distinguishes the traditional Korma as a dish so adored that many different cultures have produced their own take on it. To me, Ammu's Korma will always be the best - rich, creamy, fragrant and perfectly spiced. CHHANAMUKHI 🍡 After fish, Bengali sweets form a quintessential part of Bengali cuisine. With such a huge variety to choose from, I thought today I’d talk about the “Channamukhi”; a hardened, square shaped sweet made from cottage cheese (chhana) coated in sugar syrup. These moreish little delights are unique to Brahmanbaria, Ammu’s ancestral home.🌴 Although Channamukhi can be found in sweetmeat shops in other parts of Bangladesh, none come close to those prepared in Brahmanbaria. The taste of Ammu’s Channamukhi (with the cottage cheese made from scratch!), is uncannily similar to those found there. I can’t say I’m surprised — after all, she is a Brahmanbarian at heart. 💕 In Brahmanbaria, the sweet is often locally referred to as “Lady Cany/Kanni”. The name was born during British colonial rule, where Lord and Lady Canning sang praises for the Channamukhi after trying it 🇬🇧. A delicious sweet snack on any occasion, they perfectly accompany Bengali cha (sweet milk-tea prepared over the stove) ☕️ Ammu would tell me how Nanabhai (my grandfather) would bring dekchis (large pots) of sweets back to Chittagong city following a visit to Brahmanbaria. ILISH MAACH BHAJA 🐟 (Hilsha Fish Fry) I couldn't possibly pay true homage to Bengali cuisine without talking about fish! Our love for fish is known across the world, perhaps due to how plentiful they are in our region. The hilsha — also known to Bengalis as “ilish” — is related to the herring. Being the National fish of Bangladesh and the State fish of West Bengal, I think it is fair to say that the much revered ilish is to Bengalis as whisky is to Scots 🏴󠁧󠁢󠁳󠁣󠁴󠁿. Rightly so, as its flakey, oily flesh is steeped in rich flavour, and its roe is deserving of culinary praise all of its own. This fish can be prepared and cooked in myriad ways, however, my favourite is crispy fried ilish topped with caramelised onions. Ammu tells me that the ilish she has used today is from the Chandpur District of Bangladesh, home of the most famous ilish in the world and renowned much like Scottish salmon (as well as their whisky!). It is intended to be eaten by hand in order to pick out the fine bones the fish possesses. NANU’S SHOSHANGA SERVED WITH CHITA ROTI 🌹🍳 ~ AN ORIGINAL RECIPE ~ In honour of Ammu’s birthday, she and my Khalamoni (aunt) made this very unique dish for breakfast. 🥳 The floating eggs, known in our home as “shoshanga” (of which my family has no literal translation for), are poached in sweetened golap jol (rose water). They are served alongside a lace textured rice flour flatbread/pancake called chita roti (“chita” = splattered) which is a very common sidedish in Bangladesh, West Bengal and beyond 🇧🇩🇮🇳. The eggs, on the other hand, are pretty much one of a kind - as far as I know - and have been passed on for generations by the women in my family. 💗 My Nanu (grandmother), was born into the Chowdhury family, one of the smaller Zamindari (hereditary landowning) families of Bengal, originally residing from the region of Rupsa, in the Chandpur District of Bangladesh. Due to their proximity to and dealings with people hailing from outside the Indian Subcontinent, many of these families developed unique dishes influenced and inspired by other cultures. While attempting to research the possible origins of this recipe, the closest similarity I discovered was with a Quebec-an version in which the eggs are poached in maple syrup 🍁. It is fascinating to think of all the possible interactions my ancestors might have had that led to my Ammu and Khalamoni making this dish today! Though its genesis may still be something of a mystery, I am proud to say that this weird and wonderful dish is ours! ALOO DIYE GORUR MANGSHER JHOL 🥩🌿🧄 Translating to “beef curry with potatoes”, this dish is unlike any other. No yoghurt, cream or tomato base to rely on, just a rich blend of spices and oil that flavours the meat beautifully. I think it’s safe to say that almost every Bangladeshi has a fondness for this curry, and several variations of it exist throughout Bangladesh. This version which Ammu has made - simple, light and spicy, served with potatoes - is one of the most common. I love to eat this alongside a portion of fluffy boiled rice with freshly squeezed lime on top! 🍋 When I was younger, I would be so excited for this dish that I would hang around the rannaghor (kitchen) and beg Ammu to give me some while she was still cooking it! Even after I had already eaten, I would ask her for a lokma (mouthfuls) from her own plate. It is the first part of Apu's Trilogy which is also considered one of the greatest film trilogies. ❣ The film is a true example of presenting humanity. It's beautifully portraited rural life and the perils and pitfalls of poverty. Ray shows the world through the innocent eyes of his protagonist Apu. The family edges closer to financial ruin, but Apu’s eyes are full of dreams. ❤ The characterization in the screenplay reduces the pace of the film quite a bit, but it is a technique to engages the audiences. For me, the most moving character was the ancient aunt who is waiting to die but wishing to live every day fully. I’m reposting a moreish family favourite from a few months ago that I always go back to when I have time/energy/zest for life 👏🏽 Doi murgi (Bengali spiced chicken marinated in yogurt) is by no means a “15 minute meal” but you’ll never be disappointed with the end result. I love charring 🍗🍗🍗 that little bit extra because it adds some crunch, texture and contrast to the rest of the creamy jhol.
