Can anyone confirm that this is Fragaria virgin (wild strawberry)? Both Google Lens and Picture This identify it as such, but here is the thing. I planted one plug-size plant late summer of 2022 and I can not believe it would have spread so quickly in one (2023) growing season. It escaped the cover raised bed in all directions! Stewed Nettles, Wild Garlic, and Goose-grass soup. 🌿🧄🥣 I've only cooked with nettles before, and these ones were amazing. The wild garlic is incredible- Mario and I munched on the stems, green seed pods and flowers dipped in butter all afternoon. The goose-grass is nice raw too. Spruce tips! Another one of my favorite things to forage in spring! The spruce trees in my yard lovingly give their natural medicine each year. I sustainably harvest just a few from each branch and tree to make sure the trees stay healthy and have fresh growth. Usually, they grow quickly, so be sure to pick them while they are still lime green to get the most nutritional value. "Spruce, Fir, and even Pine trees are all edible plants and have a long history of being used as medicinal ingredients in traditional medicine. All of these conifers are exceptionally high in vitamin C and even contain some vitamin A as well as other beneficial compounds. Drinking tea made from the needles and twigs will prevent scurvy in survival situations and was regularly used by Native Americans as a decongestant, remedy for bronchial infections, and even rheumatic ailments. In the spring, when trees start producing new growth you can pick the little bright greens buds of needles and use them to make tea as well. This new growth will have the highest concentration of vitamin C and can be almost sweet in flavor. I got to spend a beautiful Sunday afternoon down in RI with the Restler family. Their 11 year old, Sol, was interested in learning how to forage, so for his birthday they booked a private forage followed by a specially prepared picnic. We strolled through fields and wood edges, gathering violets, dandelions, spring onions, garlic mustard, Norway maple flowers, shagbark hickory bark and more. Then, they feasted on a spread of magnolia jelly, ramp compound butter, pickled magnolias, pine needle soda, pickled eggs topped with ramp leaves, cheese and bread. Still eating as many Black Locust flowers as possible! My favorite way has to be adding them to salads with a light sauce on them - like the cucumber salad with a light peanut sauce. They add a beautiful floral component and the texture changes so it's not all just crunchy! I also top just about everything with them! Wild Garlic Pesto This version is plant based dairy free, but you can add 1/2 of parmesan if you prefer the creamier more traditional version. Ingredients & Method: - 100g wild garlic, washed thoroughly - 1/2 cup Cashew nuts - 1/2 cup of good quality olive oil - 1 1/2 tsp lemon juice - A generous pinch of Maldon salt & black pepper Add all ingredients to the food processor and whiz to your desired texture. I like it a little chunky. Season taste and add more if needed or more lemon juice if needed. New discoveries are a scarcity, largely there is very little that has not been done before leaving us to reinvent the wheel. While this may sound initially unexciting, I find this to be the very heart of discovery and experimentation, breaking new ground with personal expression. A unique stamp, a fingerprint of individual experience gleamed from our heritage and environment. The wilder side of a ‘Prawn Cocktail’. That beloved classic banished to the back of the cupboard, reinvigorated with locally sourced seasonal ingredients. Here I have taken the core elements of what a prawn cocktail is to me. A beautifully balanced dish of textures and flavour delivering a crisp crunch and acidic bite enveloped in an unctuous mayonnaise. This all comes together to showcase the sweetness and delicate texture of the humble prawn. A crayfish tail wrapped in pickled magnolia petals, ribbons of raw forced rhubarb and garlic mustard leaf. Garnished with a wild garlic mayonnaise style sauce and whole claws packed full of sweet meat. Finished with dried magnolia dust and a garlic mustard flower. Gingery sweet pickle flavour delivered by the magnolia complemented by the floral sweet acidity in raw rhubarb. While garlic mustard can be bitter, this is hidden by the pickle, leaving the milder garlic vegetal flavour to come through. Served as a verrine or rolled and plated. Often found rising over suburban backyard fences, along train lines or growing wild on marginal land, this invasive, contentious and tasty cactus is not only known for its brightly coloured fruits, but also its edible pads and flowers. Prickly pear (Opuntia spp.), also known as barbary fig, cactus pear and nopal cactus, is often spotted growing wild. It’s a hardy cactus whose large pad-like stems – called cladodes or nopals – can be peeled and eaten, as can its various-coloured flowers which, in Australia, are most often shades of yellow. The fruit, which contains, vitamin C, magnesium, copper and potassium, is high in fibre and has antioxidant properties. To prepare the fruit, you want to access the flesh under the skin. You can hold the fruit with a pair of tongs while you cut off the ends before standing the fruit up to remove the skin. Soft and sweet when ripe, the flesh of the fruit can be used to make jams, syrups, drinks, dressings or desserts. The pads, or nopals, can be used in stir-fries, salads and even added to smoothies. They have a meaty texture and mild asparagus flavour with a slight citrus tang. Remove the thorns using a sharp knife and rinse really well to wash away any remaining glochids. If your prickly pear pads are young and tender, you can use them once the thorns and glochids have been removed. Chicken of the woods, or less commonly known as Sulphur Shelf, is THE sweetest vegan munch. Whilst this one was just starting to go a little grim, most of its fanning shelves still had that bouncy chicken-like weight and texture. It was a joy to see the excitement on everybody’s face (especially chippy!😜) when we found that particular mushroom 🥰 Marinated and cooked simply on the fire, it was the most delicious surprise! ❤️ I mean, I’ve been vegetarian in my whole life so I’m certainly no expert, but that definitely tasted like how I would imagine chicken would taste 🤣 Except - no animal was killed, it was medicinally beneficial for us all and we helped spread the spores of this incredible mushroom! 🍄‍🟫 There are still a few more growing so really looking forward to a few more opportunities to delight in this unique flavour. Other than that, I think the wild garlic sauerkraut and the fire roasted babaganoush were my favourites. Professional photos to come soon. It was a beautiful day yesterday so I made some ice cream and canna infused foraged magnolia and lilac syrup and it was honestly so good 🍨🥰🍦 The syrup can be used for loads of things such as cocktails and you make it by boiling 1:1 water and sugar, add your decarbed flower/cannabutter or coconut oil, add the magnolias and lilacs and let it simmer and then steep for a few hours 💜🩷 The vegan coconut icecream is really simple you just blend coconut milk you can add coconut cream if you wish, agave syrup or whatever sweetener you want and a drop of vanilla extract. First Nature Journal Club was a success! ✍️ 🌿 We meandered through the woods, taking a closer look at all the plants around us. Noticing. Being curious. Asking questions. It was beautiful! 😩 Then it was sketching! For some, their first time ever, for others, something they already practice! I loved getting to see everyone’s interpretations of what they observed. How they observed it and what questions they asked themselves to learn more about what they were looking at! 🔥 Did you know being curious stimulated the reward center of our minds? When we asked her how her favorite way to prepare these delectable little plants, this is what she said. “It’s super popular for people to make ramp butter but my favorite way is slicing them and garnishing my roasted veggies and potatoes which adds the perfect, fresh, aromatic flavor.” Says Caitlyn So the next time you’re outside exploring, take a look around! Ramps can be found in rich, moist soil, usually in partly shaded areas. Wooded areas close to river banks or streams are great places to start looking! A great way to identifying a ramp is by the distinct smell. It almost smells like a fresh mixture of onion and garlic. But did you know that the original this folk song are a bit grim? While the song “Here We Go Round the Mulberry Bush” was not recorded as a children’s singing game until the mid-19th century in England, the song and its instructional directions - like washing your face, putting on your clothes, and mending your shoes - might have actually been sung by the female prisoners of HMP Wakefield in West Yorkshire. The women conceivably passed the song on as a game to their children when/if they were released and that is how the song spread and eventually became associated as a playground tune. Another local legend suggest that I’m an effort to compete with Chinese silk production, the British government planted mulberry trees (prime habitats for silkworms) to grow the industry and bolster their textile trade. However, the mulberry trees could not stand up to the cold winters and the lyrics, “in the cold and frosty morning”, might actually be poking fun of this effort. What’s your take? For me, I’m inclined to believe that female prisoners passed the song on to their children. That seems pretty logical and it’s a story backed up by local historians and folklorist, so I’ll go with that! Anyway, I’m just excited I caught the tree near our swamp producing and was able to grab a handful. Mulberries are great but their shelf life is only a few days and if you eat them when they are not ripe they can be toxic.
