These trees loose their leaves in the fall and by winter they are fully bare. Something else that they lose in the fall is their delicious pecans. They begin to be harvested early September when the husks begin to spilt. DID YOU KNOW THAT PECAN TREES CAN BE OVER 100 FEET TALL? That’s about a ten story building!! That’s an extremely tall tree if you ask me. FUN FACT: Pecan trees live up to 300 years, that’s 3 centuries! They live so long because they only produce a large amount of pecans every two years.

Recipe courtesy of Trisha Yearwood @foodnetwork Makes 9 muffins Ingredients * Nonstick cooking spray * 1 cup chopped pecans * 1 cup brown sugar, packed * 1/2 cup all-purpose flour * 2 large eggs * 1 1/3 sticks butter, melted Directions * Preheat the oven to 350 degrees F. Place paper liners in 9 muffin cups and spray with nonstick cooking spray. * In a large bowl, combine the pecans, sugar and flour. Recipe for healthy pumpkin granola pictured in this post: ⭐𝗗𝗿𝘆 𝗜𝗻𝗴𝗿𝗲𝗱𝗶𝗲𝗻𝘁𝘀: -3 cups rolled oats -1 c raw almonds, chop them roughly -¾ c raw pecans or walnuts, whatever you prefer, chopped roughly -½ c raw pumpkin seeds, whole or chopped either okay - ½ c combo ground flax seed and whole flax seed, but one or the other is okay too -1/2 tsp salt -2 tbsp or more pumpkin spice as desired ⭐𝗪𝗲𝘁 𝗜𝗻𝗴𝗿𝗲𝗱𝗶𝗲𝗻𝘁𝘀: -heaping ½ c pumpkin purée -½ c maple syrup, honey, agave, or other liquid sweetener* (*if you have a sweet tooth, double the amount of liquid sweetener) -1–1½ c chopped dried fruit, whatever fruit(s) you prefer -2 egg white, beaten until foamy ⭐𝗗𝗶𝗿𝗲𝗰𝘁𝗶𝗼𝗻𝘀: 1. Gather and prepare dry ingredients. 2. Mix dry together in a large bowl. 3. Pre-heat oven to 325°F or 163°C. 3. Prepare 3 wet ingredients in this order: pumpkin purée+maple syrup combo, chopped dried fruit(s), then beaten egg whites. 4. Mix purée+maple syrup combo into dry ingredients. 5. Lightly mix in and try to distribute egg white foam throughout whole mixture. 6. Stir in chopped dried fruits. 7. On two standard sized or larger baking trays/cookie sheets, place parchment paper and then spread granola mixture into flat layers approx. ½ inch or 2–3 cm thick.
