Leinöl ist ein echter Gesundbringer. Warum Leinöl (insbesondere wenn es mit EPA und DHA versetzt ist) so wertvoll ist, was beim Kauf, Lagerung & Verzehr zu beachten ist, erfährst du im Text und in den Slides. Was ist nun das Besondere am Leinöl? Dazu müssen wir einen kleinen Exkurs zu den Nahrungsfetten machen: Unter den Fetten sind einige wenige Fettsäuren essentiell. Das heißt wir müssen sie unserem Körper mit der Nahrung zuführen, da er sie selbst aus anderen verfügbaren Fettsäuren nicht herstellen kann. Leinöl enthält eine essentielle Fettsäure, die alpha-Linolensäure (ALA). In fettreichem Seefisch wie Lachs, Hering & Makrele sind die Fettsäuren Eicosapentaensäure (EPA) und Docosahexaensäure (DHA) enthalten (nicht als essentiell eingeordnet). Leider schaffen es die meisten nicht Ihren Bedarf an EPA und DHA (250 mg/Tag) mit der Aufnahme durch Fisch zu decken. Die gute Nachricht ist, dass unser Körper in der Lage ist bei ausreichendem Angebot an ALA (z.B. aus Leinöl) EPA und DHA in gewissem Maß selbst zu synthetisiert. EPA und DHA könne also aus einer essentiellen FS hergestellt werden und werden daher auch als semi-essentiell eingeordnet. Wer also nicht auf 1 bis 2 Portionen Fisch pro Woche kommt (und das sind die meisten unter uns), sollte auf eine ausreichende Zufuhr an alpha-Linolensäure (ALA) achten. Neben Leinöl sind Walnüsse und -Öl, Hanfsamen und Rapsöl gute Quellen für ALA. Da es allerdings schwierig sein kann auch diese Quellen in ausreichenden Mengen zu sich zu nehmen, um so dem Bedarf an ALA, EPA und DHA zu decken, die Umwandlung von ALA in EPA und DHA außerdem begrenzt ist und durch hohe Omega-6-Konzentrationen blockiert wird, ist ein mit EPA und DHA angereichertes Leinöl sinnvoll. Wenn die empfohlene Menge an Fisch wöchentlich gegessen wird, reicht ein Leinöl ohne EPA/DHA-Zusatz aus. Um zu überprüfen, wie gut man mit den essentiellen Fettsäuren versorgt ist, kann man beim Arzt übrigens seinen Omega-3-Index messen lassen (Laboruntersuchung). Today's latest pesto obsession brekky was a 3 X egg pesto, mushroom, onion and cheese omelette on a piece of multigrain bread. It was my first time ever making an omelette but it turned out great.
