Just back from an early Sunday morning walk after finding a new mushroom to add to my “identified and tried edible mushroom” list (No. 21)- the Shaggy Ink Cap or Lawyers Wig. It dissolved to just about nothing on contact with the hot buttery frying pan but was up there for yummy mushroomy flavour. Historically, ink caps are named after being used for signing important documents. The ink comes from the way they dissolve into a puddle of black liquid when mature. Coprinus comatus (shaggy inkcap / lawyer’s wig / shaggy mane) A common sight in grass, often found in lawns, fields, verges, etc. these pretty fungi start off as a shaggy (variable) neat white closed fungi, before they start to deliquesce (turn to ink). This group shows the entire range! They’re edible and very good, but the best time is in the closed fully white stage - unfortunately this doesn’t last long and you need to cook them quick! They are still edible when turning, but will stain everything black and lose the firmer texture. The ink can be used as an edible ink or for crafts too! Lookalike wise, Coprinopsis picacea - magpie inkcap - is the only thing vaguely close. This tends to prefer woodland, and isn’t shaggy, but has a more slick dark cap with spaced out white fragments. Fungus February Day 6 Shaggy Mane (Coprinus comatus) has very tightly packed gills that start out white. As the mushroom matures the gills turn pink, then black, then inky as they auto digest or "deliquese" their caps and gills. As it liquefies, the cap curls upward, which helps open the gills to disperse spores. The inky substance also contains spores and helps disperse them. It's #mushroommonday and today's Mushroom is the Shaggy Inkcap or Judges/Lawyers Wig (Coprinus Comatus) It's Season is April to November in Britain and Ireland, but most plentiful in Summer and Autumn, these edible inkcaps appear in greatest abundance soon after rain and can be found in meadows, woods and roadside verges. This edible mushroom is apparently absolutely delicious and must be cooked before eating, but has an extremely short shelf life. If you leave one on your table overnight you will come down to a black ink stain in the morning. In the 17th and 18th centuries this black liquid could be used as an ink substitute. It could be used straight as writing ink or in a more concentrated form by boiling it down with phenol as a preservative.
