Lentil and rice Soup recipe. It is perfectly balanced - it's creamy, but still has some texture and chew. Hearty but leaves you feeling light. It has big depth of flavor from the caramelized onions. 😋😋 *Ingredients* • 3 tablespoons olive oil • 2 onions, finely diced • 2 1/2 cups dry red lentils, rinsed • 2 cups short grain rice • 4 cloves garlic minced • 2 .5 L water • 1/2 tablespoon salt • 1 teaspoon cumin powder • 1 teaspoon coriander powder • 1 teaspoon arabic seven spices • 2 teaspoon turmeric powder • 1/2 teaspoon black pepper • 2 chicken cubes *For garnish * •3 tablespoons olive oil •2 onion thinly sliced •1/4 teaspoon salt * Instructions* • In a medium pot over medium-high heat. Add oil until hot . • Add the onion and and cook, stirring occasionally until starting to soften, about 5 minutes . They break the fast every day at sunset with Iftar (= food) to replenish energy levels followed by prayer. One of the things they start with is nutritious soup. In Iraq they most commonly eat Shorba: a red lentil rice soup with chicken. It is packed with essential nutrients, fiber, protein and it definitely will boost your spirits after a day of fasting. This is my version and can be eaten anytime, also when you’re not fasting but desperately in need of a bowl of comfort food Nutritional value: 24.4 g dietary fiber, 39.7 g protein, 225 g veggies Prep: 15 min incl soaking the lentils & rice, Cook time: < 30 min Serves: 2-3 Ingredients: •125 g red lentils, soaked for 15 min and drained •50 g brown rice, bashed up so it becomes broken rice, soaked for 15 min and drained •800 ml chicken or vegetable stock (for a vegan version), but make 1 L •1 onion, roughly chopped •2 garlic cloves, roughly chopped (optional) •½ tsp cumin •½ tsp coriander powder •¼ tsp turmeric powder •1 whole dried lemon/lime, pierced once with a skewer (substitute: 1 tbsp lemon juice) You can find this in Middle Eastern supermarkets •1 tbsp of lemon juice, or more •sea salt & ground black pepper to taste •pinch saffron, dissolved in 1 tbsp warm water (optional) •2 tbsp olive oil + extra Garnish: •1 lemon, cut in wedges •Handful of flat-leaf parsley, chopped For method see comments Tip: The soup can be stored in the fridge for 4-5 days or 3 months in the freezer Tip: Add some chicken when you add the lentils and rice to pump up the protein levels #lentilricesoup #redlentilricesoup #shorba #redlentilsoup #redlentil #ramadansoup #iftarfood #iraqicuisine #iraqfood #feedfeed #f52community #thekitchn #veganrecipes #dairyfree #subtleasiancooking #thewayweeat
