This is the best tasting quinoa bowl you’ll ever have. It packs a good amount of protein and takes less than 30 mins to make. Did I forget to mention? It’s vegetarian. Ingredients: Quinoa - 1/2 cup Firm tofu - 1 box Soy sauce - 1 tbsp Sriracha - 1 tbsp Vegan fish sauce - 1tsp Chilli oil - 1 tsp Cucumbers - 1 cup Lettuce - 1 cup Dressing: Mint and parsley- 1 bunch Greek yogurt- 2 tbsp (sub plant based yogurt for vegan bowl) Lemon juice - 2 tsp 1. Drain water from your tofu and crumble it onto your hot pan with some oil 2. Sauté the tofu till all the water is drained 3. In a separate bowl, add siracha, vegan fish sauce, soy sauce, chilli oil 4. Pour the mixture over the tofu and let it cook for 2-3 mins For the dressing: 1. Blend mint and parsley along with some Greek yogurt 2. 👉🥳Viernes!!😉 Se termina la semana!! y vamos a preparar una cena liviana, fácil y muy rica!👏👏👏 Probala!😋 Hamburguesas de quinoa🍔 Ingredientes: 🍔½ taza de quinoa 🍔2 tazas de hojas de espinaca 🍔1 cebolla pequeña 🍔2 dientes de ajo 🍔1 puerro 🍔½ cucharadita de comino molido 🍔½ cucharadita de sal 🍔1 cucharadita de orégano 🍔5 cucharadas de copos de avena 🍔1 pizca de pimienta negra 🍔2 cucharadas de aceite de oliva Preparación:🙌 ♨️Cocinar la quinoa . Para ello, lavarla muy bien y llevar al fuego una cacerola con 1 taza de agua. ♨️Cuando hierva, añadir la quinoa y un poco de sal. ♨️Dejar que se cocine de la misma manera que el arroz, hasta que se seque. ♨️Mientras tanto, preparar las verduras picando la cebolla, el ajo y el puerro . ♨️Rehogar estas verduras en una sartén con un poco de aceite hasta que estén doradas. ♨️Añadir las espinacas a la sartén y saltear junto con las verduras hasta que se doren. Ingredients - 1 cup quinoa - 2 cups water - ¼ cup olive oil - ⅓ cup balsamic vinegar - 1 tablespoon lemon juice - 1 tablespoon maple syrup - 1 teaspoon dill - 6–10 white mushrooms, sliced - 1 red pepper, chopped - 1 medium zucchini, chopped - 2 Roma tomatoes, chopped - 15-ounce package mixed baby greens, washed and patted dry Instructions: 1. Cook quinoa according to package, and allow it to cool completely. 2. Whisk together olive oil, balsamic vinegar, maple syrup, lemon juice, and dill. Divide the vinaigrette among the jars, then add in the quinoa. 3. Stuffed Eggplant Ingredients: 2 medium eggplants 1 tablespoon olive oil 1 onion, finely chopped 2 cloves garlic, minced 1 bell pepper, diced 1 cup cooked quinoa 1 cup cherry tomatoes, halved 1/4 cup chopped fresh parsley 1/4 cup grated Parmesan cheese Salt and pepper to taste Directions: Preheat oven to 375°F (190°C). Cut the eggplants in half lengthwise and scoop out the flesh, leaving about a 1/2-inch border around the edges. Chop the scooped-out flesh and set aside. Heat olive oil in a large skillet over medium heat. Add the chopped onion and cook until softened, about 5 minutes. Add the minced garlic and diced bell pepper to the skillet and cook for another 2-3 minutes. Stir in the chopped eggplant flesh and cook for 5-7 minutes, until softened. Remove the skillet from the heat and stir in the cooked quinoa, cherry tomatoes, chopped parsley, and grated Parmesan cheese. Season with salt and pepper to taste. Spoon the quinoa mixture into the hollowed-out eggplant halves, pressing gently to pack the filling. Place the stuffed eggplants on a baking sheet lined with parchment paper.
