CREAMY COCONUT RAMEN 🍜 by @jacobking written recipe below 👇🏾 A deep, rich and creamy ramen full of umami flavours and goodness 😃 👇🏾ingredients👇🏾 -3 garlic cloves -2 spring onion -1 tbsp curry powder -2 tbsp peanut butter -2 tbsp crushed roasted peanut need -500ml veg stock -250ml coconut milk -juice of 1 lime -1/2 tsp MSG -1 tbsp soy sauce -1 tbsp brown sugar -1 tbsp soy sauce -handful of mushrooms + 1 tbsp garlic powder + oil -handful of crushed peanuts -ramen/soup noodles to serve to 2 -wonton/dumplings -chilli oil, crushed roasted peanuts, chives, coriander, lime, sesame seeds, nori sheets to garnish 👇🏾method👇🏾 -fry your minced garlic and spring onion until soft and browned then add the spices and fry for another few minutes before the veg stock, lime juice and then simmer to thicken and reduce. -mix the peanut butter, sugar and soy sauce then add your broth to this mixture. -roast your seasoned mushrooms in the oven, halfway through add the crushed peanuts. -boil/steam your dumplings, also boil your noodles until almost cooked then serve with the hot broth and dumplings topped with the garnishes and enjoy x

Italian wild rice soup By @helens_vegan_kitchen Ingredients 1 tbsp olive oil 1 large onion, chopped 3 garlic cloves, finely chopped 1 tsp sea salt 1 tbsp tomato purée 400g tin chopped tomatoes 1.5 liters of vegetable stock 1 tbsp vegan Worcestershire sauce 400g tin cannellini beans, drained and rinsed 750g potatoes, chopped 3-4 large carrots, chopped into chunks 2 tsp of Italian allrounder 1 cup rice (I used a combo of wild, brown and red rice) Salt and pepper Juice of 1/2 lemon Chopped parsley Method 1️⃣ Add the onion to a large pan with the oil and 1 tsp of sea salt and sauté for 5 mins then add the garlic and cook for a minute or two more 2️⃣ Add the tomato purée, tinned tomatoes, carrots, potatoes, beans, sauce, spices and stock and stir well 3️⃣ Finally add the rice and cook for about 40 minutes or until the rice is cooked 4️⃣ Season well, top with some chopped parsley, a squeeze of lemon juice and serve 😋 . . . #veganfoodspot #veganrevolution #planteater #plantbasedlifestyle #veganmeal #vegetarianpizza #veganburgers #vegancandy #veganprotein #veganrecipeshare #plantbasedmeals #veganskt #vegannachos #plantbasedsnacks #veganmeat

Credit where credit it due 👏🏻 I have officially been eating the starch solution way for 8 years now. I truly feel like I found the best kept “secret” to a happy, healthy, trim, fit life. I’ve read all the books (multiple times :) went through the 12 day program, got my starch solution certificate, worked with their program coach for a year, started a meal prep/private chef company in San Diego that was meals based on the starch solution, and now I teach/coach this lifestyle for a living. We were out a chunk of today and it was FREEZING (how on earth is it nearly May and still this cold?! 😭) so was in the mood for a classic warming dish - mini roast it was! 😍Crispy tofu fries by @sharansvegekitchen Ingredients ❇️Wet batter 1 cup flour 1 tsp salt/pepper/garlic powder/paprika Add enough water to make a pancake-like consistency ❇️Bread crumb mixture I ran out of panko bread crumbs so I blended up whatever I had on hand in my pantry: Saltine crackers Cornflakes Random chips Chex mix Salt and Pepper Garlic powder Oregano Sesame seeds Seasoning Blend all of the above ingredients until it resembles fine bread crumbs. 💚 Method Press and slice the tofu into thick sticks. It’s a quick dunk into the wet batter and then into the seasoned breadcrumbs mixture. Raspberry Coconut Bars ❤️ recipe below 🫶🏻 by @georginaburgess_ One of my fave no bake treats 🙌🏻 very similar to my raspberry coconut truffles from a year ago (scroll way back on my reels!) - minimal ingredients and so quick and easy - basically like a raspberry bounty bar 😍 140g desiccated coconut 190g frozen raspberries 2 tsp vanilla extract 4 tbsp maple syrup 250g good quality dark chocolate (or chocolate of choice) Line a loaf tin with baking paper Add the coconut, raspberries, vanilla and maple syrup to a food processor and pulse for a few seconds until it starts to come together Press into the loaf tin and place in the freezer until solid (1-2 hours) - slice into bars and place back in the freezer while you melt the chocolate Coat each bar in chocolate (use 2 forks to do this!) place back in the freezer to set 🫶🏻

Banana Nut Chia Pudding with a Date Pecan Crumble by @plantbasedrd just 15 mins of prep time that involve blending and mixing together. Bonus, since this gives you about 10 grams of fiber per serving, it’s also a great way to start your day so it’s easier to hit your fiber goals for the day (goal: 25g fiber daily for women and 30g fiber daily for men). Note: Not a fan of the chia seed texture? Try blending it together with the banana milk to help smooth it out. 1 banana 3/4 cup unsweetened plant-based milk (I used soy milk) 1/3 cup unsweetened plant-based yogurt (I used soy yogurt) 2 tbsp maple syrup 2 tbsp raw pecans 1 tsp vanilla paste or extract 1 tsp ground cinnamon 1/4 tsp ground cardamom 1/3 cup chia seeds Pecan Date Crumble 2 soft medjool dates, pitted 1/3 cup raw pecans
1/2 tsp cinnamon
Kosher salt To serve: Extra banana slices, coconut flakes, etc. To a blender cup, add the banana, milk, yogurt, maple syrup, pecans, vanilla, cinnamon, cardamom and a pinch of salt. Blend everything until completely smooth, scraping down the sides of the blender cup as needed. To a large storage container, add the chia seeds then pour in the blended banana milk. Whisk the mixture together well, cover and let the mixture set for 5 minutes. Whisk again to help remove any clumps that may have formed then cover again and allow to refrigerate for at least an hour before using. In a mini-food processor, add the dates, pecans, cinnamon and a pinch of salt. Pulse the mixture together until it becomes crumbly to your liking. To serve, layer a spoonful of the crumble in a small cup, then add the chia pudding on top. Top with another spoonful of the crumble mix and extra banana slices as desired.

I must have some great followers. I was visiting Jess In Vermont #iykyk. While I was with Desiree, when I was twenty-two years old, she had a three story circular house that was built by buddhist. Which holds specific characteristics like there being a large space at the bottom of the door to let evil spirits leave. ( long story short ) I was sleeping so heavily. I actually was walking through the house but in a different portal or dimension and saw all these tiny little castles 🏰 and crystal items very particular and when I woke I was still in a second vision and appeared a Medusa figure, a bright ice blue eyed lady with bright white snakes moving about on her head absolutely terrifying me frooze me! Anyways I know who that is now and what it meant. Will not explain anymore. But I believe in time travel and the supernatural. I will never share my personal life on a social platform ever again. VEGAN SWEET AND SOUR NOODLE STIR FRY WITH CRISPY TOFU NUGGETS By @leeksnbeets ❇️ FOR THE STIR FRY ⤵️ 🔹8oz noodles, cooked according to package instructions (I used pad thai noodles) 🔹1 cup shiitake mushrooms, sliced 🔹1 cup baby bella mushrooms, sliced 🔹2 cup broccoli florets 🔹3 cups mustard greens (or sub with kale or spinach) 🔹1 medium onion, chopped 🔹1 clove garlic, minced 🔹1 tsp ginger, grated 🔹1 tbsp avocado oil 🔹1 tsp sea salt 🔹Crispy tofu and sweet and sour sauce 🔹Chopped scallions, sesame seeds and basil to top ❇️ METHOD ⤵️ 🔹Heat up the oil and once hot add the onion and cook 3 mins. For starters they brought us a free appetiser of celeriac soup which was insanely delicious, as well as a sourdough roll. The main I chose was spinach, leek and tofu encroute - with bok choy and wild garlic purée. Unfortunately, for the price (£17) it wasn’t very filling and the encroute was so so small! Also lacked in flavour. So the main was a little bit of a flop. (I ordered some chips with this as well as it wasn’t very big and the chips were lovely and crisp). Dessert redeemed the overall taste score with a beautifully rich chocolate fondant and vg vanilla ice cream. Lentil Mushroom Patties w/ Smoky Sweet Potatoes by @janetsmunchmeals 🌿 Such a nutritious bowl! . Patties Ingredients 1/3 onion chopped 1.5 cups mushrooms chopped 2 tsp oil 1.5 tsp smoked paprika 1.5 tsp garlic powder 2 tsp tamari 2 T panko breadcrumbs 4 sun-dried tomatoes chopped 1/2 tsp salt 1/2 tsp pepper 1.5 cups cooked lentils 1/4 tsp liquid smoke Add onions, mushrooms and oil to pan. Cook a few minutes, add smoked paprika amd garlic powder. Cook until browned, about 8 to 10 minutes. Add bit of water if too dry during cooking. Add mixture to a food processor with remaining ingredients. Pulse until mixture comes together. Form into about 5 patties, mixture will be quite wet. Gently place into an oiled tray and bake at 400 degrees for 20 min, gently flipping halfway. Roasted Potatoes Peel and roughly chop 2 sweet potatoes. Place on baking try and add 1 T oil, and generous sprinkle of salt and smoked paprika. Toss to coat, bake for 20 to 30 min until tender, flipping halfway. @boxparkliverpool @thisismadre @girlsdontsync 🧡 Went to the girls don’t sync opening for boxpark last weekend and had a grand old time!! Got a phat vegan burrito from madre (tweaked a veggie option) and had a good old boogie fuelled by rum and pineapple juice🖤 Cool venue tbf, toilet queues were long but bar queue was quite short all through the night and nice outdoor part, will be interesting to see what else they do but there’s a lot of loc fav food vendors there!

Roasted Cailiflower, Fennel and Leek soup (Puree) Vegan 🌱 Recipe 👇 1 head of cauliflower chopped 1 head of fennel chopped (white part only) 3 leeks chopped and soaked in water for a couple minutes (discard the top dark green part and the roots, I freeze it for veg broth) 4 or 5 cloves of garlic smashed Cover in olive oil and sprinkle 2 or 3 tsp of dry thyme and a little salt and pepper. Roast on a pan in the oven at 350 for 40 minutes or until roasted. Pour 4 or 5 cups of vegetable broth in a pot and add 1 fresh bay leaf. (My home made broth uses lots of bay leaf and thyme but if your doesnt, add 4 bay leafs and more time) Add 1 or 2 tsp of salt *The leeks can cook faster so if thet start to brown take them out and add them to your pot of broth.* When everything is roasted put it into your pot with your veg broth, bring to a boil and then simmer on low with the cover on for 25 minutes. Let cool to room temp and blend in batches ! Uzbek Potato Samsa (just like samosas) By @naturallyzuzu Makes 4-5 servings 1 package of spring roll skins. Dynasty brand is the best for this recipe. 5 medium size boiled potatoes 1 medium red onion 1 bunch of cilantro 1 cup of spinach 1 jalapeño seeded and diced 2 tsp of garlic powder 2 tsp of turmeric 2 tsp of curry powder (that’s my twist on a recipe) 2 tsp of black pepper 1 tbsp of avocado or olive oil Salt to taste Black Sesame seeds Method: Preheat oven at 380F. If your spring roll skins were sitting in the fridge, make sure you take them out and leave outside for at least 1 hour. That will help the dough become more pliable. Peel the skin from the cooked potatoes and place the peeled potatoes in a large bowl. Mash the potatoes by hand or with the masher and mash them roughly. Diced the onions finely. Add them to the bowl. Chopped the spinach and cilantro and add those the bowl. Add the diced jalapeños. Add your spices and oil. Mix everything until all well combined. Adjust seasoning as needed. Fill each dough sheets with 2 tbsp of potato mixture, brush the edges of the dough with some water, and fold it like a sack by bringing all corners and edges together or like an envelope. Fill all dough wrappers with the filling. Line cookie trays with some parchment paper. Place the samsas with folder side down on the cookie sheets if you did envelope style folding or folded side up if you did a sack wrap. Pumpkin Soup with Coconut & Ginger By @beferox Serves 4 Ingredients: •800g Hokkaido pumpkin, washed, deseeded and cut into pieces •600g carrots, peeled and sliced •1 onion, cubed •5 cm ginger, peeled and thinly sliced •2 tbsp. vegan butter or margarine •1 liter vegetable broth •1 can (400ml) coconut milk •Salt, pepper and soy sauce to taste •Juice of 1 lemon Directions: •Heat 2 tbsp. vegan butter in a big saucepan over medium-high heat. Add pumpkin pieces, carrots, onion and ginger. Cook for 5 minutes, then add vegetable broth •Reduce heat to medium-low. Cover pot with a lid and cook for 20 minutes or until vegetables are soft •Remove saucepan from heat and finely puree the soup with an electric mixer. Add coconut milk and lemon juice. One-Skillet Baked Greek Lemon Chickpeas and Rice by @crumbs.and.caramel 🌿A simple and tasty recipe, perfect for sharing! Get the recipe below! 👇🏼 Ingredients 1 tbsp olive oil 1 yellow onion, diced 4 garlic cloves, minced 1 tsp dried oregano 1/4 cup white wine 1 cup long-grain white rice, rinsed 2 cups cooked chickpeas, drained and rinsed 1/2 cup sun-dried tomatoes, oil packed 1 tbsp oil from oil packed sun-dried tomatoes 2 tbsp fresh dill, chopped 1/2 tsp salt 1 large lemon, sliced and seeded 2 1/4 cups vegetable stock, boiling 1/3 cup Kalamata olives, pitted 3 cups baby spinach 1 pint cherry tomatoes, sliced in half salt, pepper and chili flakes, to taste Instructions Preheat the oven to 375°F. In a large cast-iron skillet over medium, heat the olive oil. Add the diced onion and cook until soft and translucent, about 5 minutes. Add the garlic and oregano. Cook for another minute, then deglaze with the white wine. Cook for another minute until the wine has reduced but things still aren't starting to stick to the pan. Stir in the rice, stirring to coat. Add the chickpeas, sun-dried tomatoes, oil from the tomatoes, dill, and salt. Mix well. Carefully pour the hot stock over the mixture and gently mix. Wedge the lemon slices into the mixture. Cover tightly with tin foil, and bake for 35-40 minutes, or until the rice is cooked. Carefully remove the foil, and stir in the spinach, olives and cherry tomatoes (or serve them over the top). Let sit for 5 minutes so the spinach wilts. Friday taste test time! @chicagotown_uk #peppernonipizza🍕 As frozen pizzas go, this wasn't half bad. The dough was tasty, the stuffed crust did have some flavour but could have done with more filling, the sauce was bang on and the cheese was good and didn't stick to my teeth which is a rare plus side for vegan pizzas. The star of the show, the 'pepperoni', was OK, a very mild flavour, and I have definitely had better.
