SPICY TOFU LEEK STIR FRY & NOODLE SOUP By @sncxkitchen Recipe➡️ 🔹Main Ingredients 🔸2–2½ tbsp grapeseed oil 🔸½” ginger (finely sliced) 🔸5 dried red chili pepper (soaked & cut to ½” slices) 🔸½ tbsp Sichuan peppercorn 🔸1 tbsp fermented black beans/douchi 🔸2 tbsp Pixian doubanjiang 🔸3 garlic cloves (finely minced) 🔸298 gm/10.5 oz. five spiced tofu (sliced) 🔸1 leek (white part only – sliced diagonally) 🔹Seasoning (whisk until well combined) 🔸¼ cup water 🔸1 tsp cooking wine 🔸1 tsp vegan fish sauce 🔸1 tsp sugar 🔸1 tsp salt or to taste ▪️Steps ▫️In a large skillet/non-stick pan on medium heat, add the oil. Once the oil heats up, add the ginger, dried chili pepper, peppercorn, douche & doubanjiang. Sauté stirring frequently until slightly fragrant. ▫️When it’s slightly fragrant, add the garlic. Sauté stirring frequently until the aromatics are fragrant. Add the tofu. Stir to combine & sauté for ~1 min. ▫️Then add the leek. Stir to combine & sauté for another min. ▫️Lastly, add the seasoning. Stir to combine & sauté for 1 – 2 mins until the tofu & leek has absorbed the seasoning. ▫️Taste the dish. Super easy potato wedges, perfect for beginner vegans! 🙋🏻‍♀️ 1. Line a baking tray with foil and spray with oil, (or use greaseproof paper) 2. Cut your potato in half then slice up that half into wedges, repeat with the other half 3. I like to sprinkle salt and paprika onto the tray before laying the wedges on. Then add salt and paprika to the top of the wedges too 4. Pop in the oven at 200C for about 20 minutes - depends how crispy you like your wedges! (I like them crispy!) Vegan Black Pepper Tofu By @foodpassionical Prep time: 10 minutes Cook time: 10 minutes (2 servings) Ingredients: 1 block tofu (400g), cut into cubes 3 cloves garlic, sliced 1 onion, roughly chopped 1 small carrot, sliced 2 stalks scallions, cut into 1 inch 2 tbsp cornstarch 1 tsp black pepper 2 tbsp oil for cooking Sauce mixture: 1 tbsp shaoxing wine 1 tsp sesame oil 1 tbsp soy sauce 1/4 tsp dark soy sauce 1/2 tsp mushrooms powder 1 tbsp vegetarian oyster sauce 1 tsp sugar 4-5 tbsp water Method: 1.) To squeeze out the water from the tofu, wrap the tofu in a clean towel and put heavy burden on top. Cut the tofu into cubes, coat with cornstarch and set aside. 2.) In a small bowl mix together all the sauce ingredients and set aside. 3.) Heat oil in a frying pan on a medium heat, pan fry the tofu till golden brown and set aside. 4.) In a same frying pan, add in the garlic and onion sauté till fragrant. Add in carrot and cook for 2 minutes, then add in the sauce mixture, tofu and black pepper. Stir to mix well, lastly add in the scallions. Stir fry to combine everything and remove from the heat. Potato and Cauliflower curry bake! I sautéed onion, garlic and ginger. Added Garam Masala, Nigella seeds, cumin seeds and turmeric. Mixed in some coconut milk and vegetable stock. Blended the above so it was nice and creamy. Poured over parboiled potato, cauliflower and (not parboiled) spinach. Topped with fine breadcrumbs and baked. Not to mention how damn easy they are to make. The choc tart shell is nutty and chewy and the raspberry jam is uber gooey and sweet. They are the perfect sweet treat to whip up this Mother’s Day. 🤍 Vegan, refined sugar-free, gluten-free and oil-free. Recipe: Raspberry Chia Jam: - 2 Cups Frozen Raspberries - 2 Tbsp Chia Seeds - 2 Tbsp Rice Malt Syrup - 2 Tbsp Hot Water Choc Tart Shell: - 1 & 1/2 Cups Roasted Almonds - 1 & 1/2 Cups Oats - 7 Large Medjool Dates (Soaked in hot water for 5 minutes and drained) - 3 Tbsp Cacao Powder - 3-4 Tbsp Oat Milk - 1 Tsp Vanilla - Pinch of Salt Garnish: - 5-10g Melted Vegan Dark Choc - 6 Vegan Dark Choc Squares 1. Place all jam ingredients into a bowl and mash until smooth. Be patient with it, the raspberries with eventually melt and become jam-like. 2. Place all tart shell ingredients into a food processor and process until smooth. Push into to a 6-hole silicon tray and use your hands to create a well in each. 3. Fill with the raspberry jam and set in the freezer for 30 minutes. Garnish with chocolate and set in the freezer for 5 minutes. Enjoy! 4. Store in the refrigerator for up to 5 days.

BLACK OLIVE TAPENADE PASTA🖤 By @terianncarty Ingredients 400 grams gf fusilli 3 tbsp olive oil Pinch chili flakes 1/2 onion diced 2 cloves garlic minced 3 cups cauliflower florets 7 cremini mushrooms 8 brussel sprouts trimmed and halved 1/2 cup chickpeas 1 cup cherry tomatoes 1 cup green olives 3/4 cup tapenade Fistful spinach 1/2 cup pasta water Sea salt and cracked pepper 1/2 cup vegan Parmesan Sprouts (optional) Method Preheat oven to 400. Toss cauliflower and brussels sprouts in olive oil and season with salt and pepper. Spread onto baking sheet and bake for 25 minutes. Set aside. Cook pasta in salted water. Reserve pasta water. Heat olive oil and chili flakes in a large pan. Cook onion until translucent. Add mushrooms and cook until soft. Add garlic, cooked cauliflower and BS, add in spinach tomatoes, olives and cooked pasta. Scoop in tapenade and toss to combine. Add pasta water to create sauce. Season the cheese, salt and pepper. Chop the potato, onions and bell pepper finely.⠀ 2. Heat 1 teaspoon of olive oil in a pan and fry the chopped ingredients until the potatoes are done.⠀ 3. Add the the potatoes, onion, bell pepper and the remaining ingredients for the patty into a blender and process until smooth.⠀ 4. Bookmark recipe for ALL YOUR GREENS PASTA 🥦🌱🫑🥬by @healthygirlkitchen ingredients: (5 servings) 12 oz pasta 1 tbsp olive oil 1 diced yellow onion 4 cloves minced garlic 2 cups broccoli florets 1 cup frozen peas 1 cup kale or spinach 1 cup fresh basil 1/4 cup fresh parsley 1 cup unsweetened soy milk 1/2 cup pasta water 2 tbsp lemon juice 1 tsp salt Pinch pepper Vegan goat cheese or feta (or any cheese ya like)! I use @treeline_cheese How to: 1. In a pan on medium heat, saute garlic, onion, broccoli, peas, kale, and olive oil for about 10 minutes until veggies are tender. 2. Add the sautéed veggies into your blender or food processor with basil, parsley, milk, pasta water, lemon, salt, and pepper. Blend! 3. Pour the sauce back into the pan over pasta and still in vegan goat cheese until combined. 4. Serve and enjoy!

Protein breakdown: 200g pasta - 28g 480g chickpeas - 26g 3 tbsp (45g) white miso paste - 5.4g Other ingredients ~ 2-3g = 62g /2 = 31g Ingredients (serves 2) 200g pasta (I used durum wheat semolina, Gemelli shape) 1 shallot or half a small white onion, finely diced. 200g asparagus, woody stems discarded (use the snap method), stalks finely chopped, top parts left whole. 3-5 fat cloves of garlic, minced 1 large courgette, sliced into thin half moons 480g chickpeas, from a jar or can (I don’t bother draining if the can / jar is organic and BPA free) 3 tbsp sweet white miso paste Juice of one lemon To serve: Plenty of freshly cracked black pepper Extra virgin olive oil Tamari roasted seeds (optional) Fresh parsley

Ingredients 2 heads broccoli, broken into florets, stalks chopped or saved for another recipe 15 oz chickpeas, 1 can, drained and rinsed 2 tbsp paprika 1 tsp garlic powder 1 tsp dried parsley ½ tsp black pepper ½ tsp salt 1 tbsp olive oil FRESH INGREDIENTS ¼ cup pistachios, or walnuts, chopped 1 handful fresh dill, large, chopped 1 handful fresh parsley, large, chopped ½ cup vegan feta, crumbled, optional COUSCOUS 1 cup pearl couscous, whole wheat or regular, quinoa or rice subbed 1¼ cup vegetable broth, plus more if needed TAHINI DRESSING 3 tbsp tahini 2 lemons, juiced 1 tbsp mustard, heaping 1 tsp nutritional yeast 1 tbsp warm water 3 tbsp olive oil, optional salt and pepper, to taste Instructions Preheat the oven to 400F and line a baking sheet. Add the broccoli and chickpeas to the sheet pan, and then toss in the spices and olive oil until evenly cover. Roast until the chickpeas are crispy and broccoli is tender, approximately 20 minutes. While the broccoli and chickpeas roast, make your couscous. Combine the couscous with the vegetable broth in a sauce pan. Bring to a boil, and then lower the heat and simmer covered, until the liquid is absorbed and the couscous is tender. While your couscous cooks, make your dressing. In a jar, combine all listed ingredients, and shake until a smooth dressing is formed. In a bowl, add the couscous, then your roasted chickpeas and broccoli, followed by your herbs, vegan feta and pistachio. Pour the dressing over top, and serve. Enjoy immediately, or store in the fridge for up to 4 days

After 2-3 mins, add the seasoning, stir and add the hot sauce. Combine and let it simmer on low heat for 10 mins. Orange-Chili Glazed Vegan Meatballs By @thecuriouschickpea 1 tsp canola oil 1 cup diced red onion 2 cloves garlic, minced 2 tsp minced ginger ½ tsp crushed red pepper flakes 15oz can chickpeas, drained and rinsed 1 6.3oz package Annie Chun’s Brown Rice 2 tbsp soy sauce 2 tbsp tahini, cashew butter, or peanut butter 1 tbsp lime juice 1 tbsp toasted sesame oil 2 tbsp sesame seeds ½ tsp salt ¼- ½ cup panko breadcrumbs (or GF breadcrumbs) if needed 1 bottle Annie Chun’s Chinese-Style Orange Sauce 2 Thai chilies, minced (or 1 tsp crushed red pepper flakes) Thinly sliced scallions, for garnish 1. Preheat the oven to 375 ºF and line a baking tray with parchment paper and spray with oil. 2. Heat the teaspoon of oil in a skillet over medium and sauté the onions until soft, 3-5 minutes. Add the garlic and ginger and cook for 60 seconds, then stir in the chili flakes. 3. Transfer the onion mixture to a food processor and add the chickpeas, brown rice, soy sauce, tahini, sesame seeds, salt, lime juice, and toasted sesame oil. Process until finely chopped, clumping together, and can be shaped into balls. Some larger pieces of chickpeas are okay. If the mixture is too wet, stir in breadcrumbs as needed. 4. Shape 1 tablespoon portions of the mixture into balls, you should make about 24 balls. Place on the baking tray and spray the vegan meatballs with oil. 5. Bake for 15 minutes, flip, then bake an additional 10-15 minutes or until crispy on the outside. 6. In a small pot combine the orange sauce and the chilies and warm up. Bring to just a simmer, then turn off the heat. 7. Inspired by @newlynfermentary 'lilli' kraut pickle, I whipped up some vegan patties made with spring onion, garlic, ginger, tumeric, cumin, fenugreek, soy sauce and pepper! FUCK ME SIDE WAYS this was bloody incredible. We then hoyed in a big spoonful (or 5) of the Lilli kraut into the burg and it took it to a whole new level BITCH!!! now newly fermentary, this is a direct message to you. I have a small following, I'm but a humble influencer, but if you want to do a Collab hit me up. I have really good sale tactics and I LOVE this shit. With the BBQ, we also had some corn with a wild garlic butter I made the other day and BBQ banana which if you haven't done, well that's a crime in itself. Steamed Rice Cake/ Chwee Kueh By @foodpassionical Prep time: 20 minutes Cook time: 40 minutes 8 pieces (muffin cup size) Rice cake ingredients: 125g rice flour 10g tapioca starch 10g wheat starch 1/4 tsp salt 200 ml room temperature water 300ml boiling water 1/2 tbsp oil Toppings: 150g salty preserved turnip, rinsed 1 tbsp vegetarian dried sambal shrimp 3 cloves garlic, minced 3 shallots, sliced 1/2 tbsp sugar 1 tbsp soy sauce 1/4 tsp dark soy sauce 2 tbsp oil for cooking Method- Steam chwee kueh: 1.) Brush a thin layer of oil into the mold, steam the empty cups before use. 2.) In a mixing bowl mix together rice flour, tapioca starch, wheat starch, salt, oil and 200ml room temperature water. Mix well till no more lumps. 2.) Then slowly add in 300ml boiling water, to the rice flour mixture. Keep stirring quickly to prevent lumps. Mix well combine. 3.) Pour the batter into the mold until 3/4 full. Cover and steam for 15-20 minutes with medium high heat. Then remove the lid and continue to steam another 2 minutes. Let it cool completely before unmolding. Make toppings: 1.) Heat 2 tbsp oil, sauté the garlics and onions till fragrant. Add in the preserved turnip, vegetarian sambal shrimp, sugar, soy sauce and dark soy sauce. Stir fry for 4-5 minutes. 2.) Serve the chwee kueh with preserved turnip and drizzle with sambal sauce. Pumpkin Soup with Coconut & Ginger By @beferox Serves 4 Ingredients: •800g Hokkaido pumpkin, washed, deseeded and cut into pieces •600g carrots, peeled and sliced •1 onion, cubed •5 cm ginger, peeled and thinly sliced •2 tbsp. vegan butter or margarine •1 liter vegetable broth •1 can (400ml) coconut milk •Salt, pepper and soy sauce to taste •Juice of 1 lemon Directions: •Heat 2 tbsp. vegan butter in a big saucepan over medium-high heat. Add pumpkin pieces, carrots, onion and ginger. Cook for 5 minutes, then add vegetable broth •Reduce heat to medium-low. Cover pot with a lid and cook for 20 minutes or until vegetables are soft •Remove saucepan from heat and finely puree the soup with an electric mixer. Add coconut milk and lemon juice. PUMPKIN & PEANUT BUTTER GRANOLA 🍁 By @nourishingalex Recipe: 🍂 100g peanut butter 🍂 80g Pumpkin purée 🍂 90g maple syrup/golden syrup 🍂 250g jumbo oats 🍂 1/4 tsp ground ginger 🍂 1/4 tsp ground cinnamon 🍂 1/8 tsp clove Add ins: 🍂 pumpkin seeds 🍂 pecan nuts 🍂 almonds 🍂 cashews Method; 1. Preheat oven to 200C/189C fan/400F/ gas 6. Line a large baking tray with non stick baking parchment. 2. Add all the wet ingredients into a microwaveable mixing bowl, stir together then heat in a microwave for 30 secs to loosen everything up, stir to combine. 2. In a separate bowl, stir together the all the dry ingredients including your add ins (nuts and seeds). 4. Pour the dry ingredients into the wet ingredients, then give it all a good stir until the oats are saturated in the pumpkin peanut butter mixture. 5. Pour onto your lined baking tray, then bake in the oven for 15-20 mins turning the granola over half way through cooking time until golden. 6. Allow the granola to cool for 10 mins before eating to crisp up. Keep stored in an airtight container or clean empty jar. INGREDIENTS: 3 sumo citurs or other tangerine 1 teaspoon agar agar powder 1/2 cup cold water 1 cup evaporated oat milk TO MAKE: - In a sauce pan, combine the agar agar with cold water, transfer onto the stove; - Bring the mixture to a gentle boil while continue stirring, agar agar has to be brought to boil in water for it to completely dissolve and set properly later! CURRY ROASTED VEGGIE BOWL WITH BLACK LENTILS AND CUCUMBER LIME CHUTNEY 🌱 by @jackfruitfulkitchen SERVES 4 1 small head cauliflower, cut into florets 1 head broccoli, cut into florets 1 lime, juiced, divided 2 tsp organic cold pressed avocado oil, divided 1 tbsp curry powder 1/2 tsp cumin 1/2 tsp coriander 1/2 tsp turmeric 1 tsp salt 1/2 tsp black pepper 1 cup black lentils 1 cup red cabbage, shredded 1 bunch lacinato or dinosaur kale, finely chopped 1 lemon, juiced 1/4 cup roasted cashews, chopped Cucumber Lime Chutney 1 ripe avocado 1/4 large English cucumber 3 limes, juiced 1 cup cilantro 1/4 cup mint 1/2 jalapeno 1 garlic clove 1 tbsp fresh ginger 1/2 tsp salt 1/2 cup water 1. Preheat oven to 425. Add the cauliflower and broccoli to a large bowl and drizzle with 1/2 of the lime juice and 1 tsp oil. Toss to combine. Sprinkle with all seasonings and toss to evenly coat. Transfer to oven and roast for 25 minutes. 2. While veggies are roasting, bring a saucepan of water to a boil and add black lentils. Reduce heat and simmer for 12-13 minutes until tender but not mushy. Drain the lentils and return to the saucepan. Add in the shredded cabbage and remaining lime juice and toss to combine. 3. While lentils and cauliflower are cooking, add all ingredients for chutney to a blender and puree until smooth. Season to taste. 4. Drizzle kale with lemon juice and remaining oil and massage for 15 seconds until tender. Transfer kale to bowls and drizzle with chutney. Toss to combine. Top with lentils and roasted veggies. Fresh Broccoli Salad! The @forksoverknives magazine Spring 2024 issue has a section called “Spring Farmers Market Salads” and this is one of the many salads included there. This one is made with wheat berries, broccoli, blueberries, and oranges. We also added some kale to it, and I definitely recommend that addition. I’ve been getting this magazine for years now, so it’s always my go to when I need quick and healthy meal ideas. I love adding fruit to salads, so this one caught my eye right away, but I can’t wait to try some more from this section. Mezzi Rigatoni With Chickpeas & Sage Oil 🍝 By @happyskinkitchen Ingredients: Serves 2-3 people 1 white onion – chopped into quarters 1 carrot – chopped into chunks 1 celery stick – chopped into pieces 4 garlic cloves 2 tablespoons of tomato paste A generous handful of fresh sage leaves 1 can of chickpeas (400gr) drained and rinsed 1 tsp of chilli flakes 3-4 tablespoon of olive oil Salt & pepper to taste Mezzi Rigatoni or ditalini to serve -about 300/400gr Method Add the onion, carrot, celery and 2 cloves of garlic to a food processor and pulse until finely minced. Pour one tablespoon of olive oil into a large pan on a medium heat. Once hot add in the minced veggies. Add a pinch of salt and cook for 8-10 minutes until they have softened. Add in the tomato paste and about 1 cup of water. Bring it to a boil then reduce the heat down to a simmer and cook for another 5 minutes. Add in the drained chickpeas with 2 more cups of water. Cook on medium heat for 15 minutes until the liquid has reduced. In the meantime cook the pasta. With a hand blender blend about 1/2 of the chickpea pasta sauce, making sure not to blitz it all so it retains a chunky consistency. Add the remaining oil to another pan and once hot add in the remaining garlic cloves finely chopped and the fresh sage. Fry the sage and garlic for a few minutes until the sage leaves go all nice and crispy. Make sure to stir from time to time to prevent the garlic from burning. Drain the pasta but reserve about 3 tablespoons of the cooking water. Add the pasta to the pan with the chickpea pasta sauce with the cooking water. Mix everything together and pour over the sage oil. Rainbow Asian Salad By @isha.dalalrana Ingredients 2 cups baby spinach 1 each- red, yellow and green capsicum 2 English cucumbers 1 cup cherry tomatoes 1/2 head purple cabbage 1 head broccoli 100 gm extra firm tofu 3 tbsp sesame seeds (white and black mixed) Handful of fresh herbs: coriander, mint, basil 1 tbsp tamari 1 tbsp maple syrup Sesame oil Coconut Lime Dressing 150 ml coconut milk 1 tbsp ginger paste 2 tbsp tahini 1/2 tbsp maple syrup Juice and zest of 1 lemon 1 tbsp tamari Salt to taste Whisk together all the ingredients with 1/3 cup hot water until nice and smooth. That's all! Method First, slice the tofu into long, thin strips. Mix together the tamari and maple syrup, and coat the tofu evenly. Set aside for 20 mins while you prepare everything else. Finely chop the herbs and set aside. Cut the broccoli into florets and steam it. Chiffonade the purple cabbage, halve the tomatoes and chop the cucumber as you like. Slice the bell pepper into long, thin strips. Dry roast the sesame seeds until they turn a shade darker. In the same pan, heat up some sesame oil and saute the tofu, turning it over to ensure even browning on all sides. On the bed of baby spinach, add all your other elements including the fresh herbs. Toss well, and add a generous helping of dressing.
