Sometimes the best recipes are the most simpleā¦and thatās probably why I make this breakfast sandwich for myself every morning. A perfectly toasted bagel slathered in herb and garlic cream cheese, garlic mayo, maple turkey bacon and a fried egg covered in marbled cheddar. Takes less than five minutes to make. First, get a frying pan on the stove top over medium heat. Now toss your bagel into the toaster and toast to your likeness. Add a little bit of oil to your frying and toss in your turkey bacon. Slice up some marble cheese and wait to flip your bacon. Once you flip your bacon crack your egg next to it in the frying pan. Season egg with salt and pepper. At this point your bagel should be toasted and ready to be slathered with cream cheese and garlic mayo. Place a nice thick layer of cream cheese on the bottom slice of bagel and garlic mayo on the top piece. (Pro tip, make easy garlic mayo by seasoning store bought mayonnaise with salt, pepper, minced garlicā¦or garlic powder if you are feeling lazy, and a touch of lemon juice) If you want to flip your egg, now will be the time. Give it a good flip and cover it with your cheese. (Alternatively you can leave it sunny side up and still cover it with your cheese) Once flipped you want to drizzle your bacon with a bit of maple syrup. Let that bubble up and caramelize around the bacon. Add a smidge of water to the frying pan and cover for 1 minute to let things steam up and your cheese melt. Now assemble! Add your egg on top of the cream cheese, throw your bacon on and cover with the bagel top. Now eat daily.

As a Chef I can sometimes get disappointed when going out to eat. I read the menu and quickly begin to form the plate and flavour profile in my mind. So when itās not up to snuff I take it as a challenge to go home and make it better. So thatās what I did this morningā¦and this time it did not disappoint. I parboiled some potatoes and then pan fried them in butter, throwing in some fresh duck bacon, allowing the fat to render and the potatoes to soak it all up. I topped it with a couple of soft poached eggs, a brown butter ābeurre blancā and then a final toss with goat cheese and truffle oil. If I wasnāt starving and maybe not so lazy I would have grabbed some fresh frisĆ©e from the store to really complete this dish. Incredible umami meets tart in this well rounded creation. Iām definitely going to be making this again. ššš» P.S. If you are looking for duck bacon in Edmonton (which you should be) I highly recommend @fourwhistlefarm for theirs.
SAUSAGE STROGANOFF Weāve got another tasty creation from @baldsmo to share with you today. You may never make stroganoff with beef again after giving this a try. Itās super easy and the delicious sausage makes it even more flavourful. We are certain it will become a family favourite. Shopping List 1 pack of Fuge Sausage (Peruvian or Chorizo Verde), removed from casing & crumbled 1 tablespoon butter 1 tablespoon vegetable oil 1 cup thinly sliced mushrooms 1 teaspoon kosher salt, plus more to taste 1/2 cup diced onion 2 cloves minced garlic 1 tablespoon flour 2.5 cups chicken or beef stock 1 cup water 2.5 cups dried egg noodles 1/2 cup sour cream, plus more for serving 2 tablespoon sliced chives or green onions 1 tablespoon freshly ground black pepper Ā Directions Melt butter and oil in a large skillet over medium-high heat. Add mushrooms, season with salt and sautĆ© stirring occasionally until they turn golden brown, 5-10 minutes. Remove mushrooms and set aside. Crumble sausage and cook in the same skillet until all of the pink is gone, drain all but 1 tablespoon of fat. Add onions and cook until the turn soft and translucent, about 5 minutes. Season with black pepper and kosher salt, stir in minced garlic and flour and cook for 1 minute. Stir in stock and water and bring to a simmer. Cook, stirring occasionally for 10 minutes. Reduce heat to medium and mix in noodles. Cover with a tight-fitting lid and simmer for 5 minutes. Uncover and stir thoroughly. Cover again and cook until noodles are just tender, about 3 minutes.
