Spaghetti Chicken Alfredo 🥰😋😋 Ingredients:🗓 400g spaghetti 2 boneless, skinless chicken breasts, sliced 2 tablespoons olive oil 1 onion, finely chopped 2 cloves garlic, minced 1 cup heavy cream 1/2 cup chicken broth 1 cup Parmesan cheese, grated 1/2 cup sun-dried tomatoes, chopped 2 cups spinach, fresh Salt and pepper to taste Fresh basil, for garnish Directions: Cook spaghetti according to package instructions until al dente; drain and set aside. In a large skillet, heat olive oil over medium heat. Add chicken slices and sauté until golden and cooked through. Remove chicken and set aside. In the same skillet, add onion and garlic and sauté until the onion becomes translucent. Pour in chicken broth and bring to a simmer, then add heavy cream and Parmesan cheese. Stir until the cheese melts and the sauce thickens. Add sun-dried tomatoes and spinach, cooking until the spinach wilts. Return the chicken to the skillet, then add the cooked spaghetti. Sumptuous Golden Roast Chicken with Aromatic Herb Butter Recipe Ingredients: 1 whole chicken (about 4-5 lbs) 4 tablespoons unsalted butter, softened 1 tablespoon fresh rosemary, finely chopped 1 tablespoon fresh thyme, finely chopped 1 tablespoon fresh parsley, finely chopped 4 cloves garlic, minced Salt and pepper to taste 1 lemon, halved 2 tablespoons olive oil Directions: Preheat your oven to 375°F (190°C). In a small bowl, mix together butter, rosemary, thyme, parsley, and minced garlic. Season with salt and pepper. Pat the chicken dry with paper towels. Season the cavity with salt and pepper, and stuff with the lemon halves. Gently loosen the skin from the breast and drumsticks and spread the herb butter under the skin and over the outside of the chicken. Place the chicken in a roasting pan, breast side up, and drizzle with olive oil. Roast in the preheated oven for about 1 hour and 20 minutes, or until the juices run clear when you cut between a leg and thigh. Remove from oven and let rest for 10 minutes before carving. Savory Stuffed Bell Peppers Ingredients: 4 large bell peppers (any color) 1 pound ground beef 1 cup cooked rice 1 onion, chopped 2 cloves garlic, minced 1 can (14.5 oz) diced tomatoes, drained 1 cup shredded cheese (cheddar or mozzarella) 1 teaspoon dried oregano 1 teaspoon dried basil Salt and pepper to taste Fresh parsley, chopped (for garnish) Directions: Preheat your oven to 375°F (190°C). Cut the tops off the bell peppers and remove the seeds and membranes. In a large skillet, cook the ground beef over medium heat until browned. Drain excess fat. Add chopped onion and minced garlic to the skillet and cook until softened, about 3-4 minutes. Stir in cooked rice, diced tomatoes, dried oregano, dried basil, salt, and pepper. Cook for another 2-3 minutes. Remove the skillet from heat and stir in half of the shredded cheese. Stuff the bell peppers with the beef and rice mixture, then place them in a baking dish. Sprinkle the remaining shredded cheese on top of the stuffed peppers. Cover the baking dish with foil and bake in the preheated oven for 25-30 minutes. Remove the foil and bake for an additional 5-10 minutes, or until the cheese is melted and bubbly. Garnish with chopped parsley before serving. 🍖 Mississippi Pot Roast 🍖 Ingredients: 1 (3-4 pound) chuck roast 1 packet ranch seasoning mix 1 packet au jus gravy mix 1/2 cup unsalted butter 5-6 pepperoncini peppers Directions: Place the chuck roast in the slow cooker. Sprinkle the ranch seasoning mix and au jus gravy mix over the roast. Place the butter on top of the roast and scatter the pepperoncini peppers around the sides. Cover the slow cooker and cook on low heat for 8 hours, or until the meat is tender and falls apart easily with a fork. Once cooked, shred the meat using two forks and mix it with the juices and peppers in the slow cooker. Serve the Mississippi Pot Roast hot, spooning the flavorful juices over the meat. Let me start by saying the photo of this loaded veggie cashew chicken meal does not do it justice! 👏 I forgot to take one last night when it was plated bc we were too busy devouring it! 😋but if you’re looking for a delicious veggie packed meal the whole family will love then this is it! Start by making the sauce (I made a huge batch so feel free to cut all this by half but it’s a fantastic meal prep!): Sauce: - 2/3 cup coconut aminos - 1TBSP molasses - 2tbsp almond butter - 1TBSP apple cider vinegar - 1TBSP Avocado oil - put all into a tall measuring cup and use an immersion blender to mix! Stir fry: - One sweet onion diced - One large red bell pepper diced - 1/2-1 bag cabbage slaw (mine had green cabbage, purple cabbage and carrots) - garlic measure with your heart - ginger prob 1” or so chopped - 8oz baby bells mushrooms sliced - 2lbs ground chicken (I don’t like ground chicken from the store so I use pastured boneless skinless chicken breast that I throw in my food processor to chop to make ground-super easy way to get quality ground chicken) - 1TBSP sesame oil - 1/2 cup or so cashews (measure then chop coarsely) - salt and pepper to taste Instructions: - Heat avocado oil in a skillet and add your onion, bell pepper, mushrooms and cabbage- when softened add in your garlic and ginger. I salted mine here as well. Take off heat and put to the side. - Heat your sesame oil in a skillet and add your ground chicken. Cook thoroughly until done. - Add your veggies to your chicken, your cashews, and your sauce and stir. Taste and add more salt and pepper as you like. You can serve these over rice or on lettuce for lettuce wraps! If you give them a it a try let me know! My Little Protein Snack. I just love throwing this mix in a cup and snacking on it. There’s something to say about simple snacks, something you can throw together in a pinch for instant satisfaction. I met with Gerri from Clean Eatz in Roswell last week to see what they might have to offer some of clients who don't have the time to meal prep. They offer either frozen food that you just pop in the microwave (I tried Thor's chicken and sweet potato, somehow I don't look like Thor though!). Half gallon jars of freeze dried smoked ham. It’s perfect to have on hand when you want to add some to an omelette, fry them up with potatoes or add to soup. The key is to capitalize on sales by putting them in your freezer until you’re ready to process them and then make sure you keep the bone to make smoked ham broth. I usually wait until I have three or four ham bones in the freezer and then toss them with vegetable scraps, herbs, spices, and cold water, then simmer on low for 48 hours. Then, I can the broth for use later. This way I’m not wasting anything and I’ve even increased the value of the sale price I originally found. 💪
