Easy Prep 5 min Salad🥗 Something I’ve struggled with is getting enough fiber in so I’m incorporating more greens into my meals to keep me full! I eat 2 “lunches” and this is one of them! Try this quick salad with a low fat protein ranch that you can literally throw together in 5 min: - 80g Kale (or whatever greens you prefer) - 200g Tyson Fajita Chicken Strips (air fry, microwave or stove top) - 25g nonfat Greek yogurt + ranch seasoning (add water for desired thickness) - add veggies/toppings! Week 49! 34 more days to 1 year on this health journey! First meal prep of the week is a yummy Chicken Tortilla Wrap So easy to make! I used…. 2 cans of chicken breast in water, drained Celery diced Red onions diced Green grapes cut in half Dried cranberries 4 tbsp Nonfat Greek yogurt 1/2 c Ranch seasoning Onion powder Garlic powder Pepper Mix it all together and yum … chicken salad! I don’t measure seasonings often, seasoning to your taste. Add more nonfat Greek yogurt if you like it creamier. Add more veggies, if you like. Do what works for you! I used a whole wheat tortilla, top it with coleslaw, carrots and peppers and the chicken mix and munch! It’s delicious! We also ate it on top of a Norwegian cracker from TJs and it was amazing!! Wanted to try some Golden Berries too so I tossed a few of those in there too!! This is a perfect traveling meal, so I made a couple in disposable meal prep containers as well for later this week! Do you get frustrated if you ‘only’ lose 1lb on the scales 😅 Fad diets taught us to expect big losses didn’t they? But we all know those big losses were followed by big gains when it wasn’t sustainable 😅 This is me holding a replica of 1lb of body fat. KEEP IT SIMPLE BUT INTERESTING 😉💥 As you know im having to crack down on my dietary choices at the moment .... and for someone who has always enjoyed a wide variety of foods and dishes .... this has felt a bit daunting at times. Due to the fact im not fully sure what foods (if any) are actually even triggering my bloating, tummy pains, nausea aswell as all the rest of my symptoms just yet 🙄 So i am opting and leaning towards 'simple dishes' that i do genuinely enjoy, but are nutritious, balanced and good for healing my gut. MY THOUGHT PROCESS ON WHY IVE PAIRED ALL THIS TOGETHER FOR EXAMPLE? 👇💡 TUNA: Its a good source of protein, its high in omega 3 fatty acids, its nutrionally classed as a 'superfood' its mild on my stomach and i love it! BAKED POTATO: Its a good source of soluble fiber. The resistant starch found in potatoes acts as a prebioctic which is helpful to the bacteria in our gut, which is very much needed at the moment. LEAFY GREENS: Like my spinach and kale mix here, again these are great at helping fuel the growth of healthy gut bacteria, and are natural anti inflammatories. TOMATOES, PEPPERS, RED CABBAGE: These are all colourful, tasty, good anti-inflammatories and are packed with multiple vitamins. So whilst you may think a baked potato with tuna & salad is a pretty basic meal. 🔸𝗖𝗵𝗶𝗰𝗸𝗲𝗻 𝗧𝗲𝘁𝗿𝗮𝘇𝘇𝗶𝗻𝗶🔸 𝗙𝗨𝗟𝗟 𝗥𝗘𝗖𝗜𝗣𝗘 👉 Creamy Parmesan Chicken Tetrazzini Recipe Ingredients: 12 oz spaghetti, cooked and drained 2 cups shredded cooked chicken 1 cup sliced mushrooms 3 tablespoons butter 3 tablespoons all-purpose flour 2 cups chicken broth 1 cup heavy cream 1/2 cup grated Parmesan cheese Salt and pepper to taste Fresh parsley, chopped (for garnish) Directions: Preheat your oven to 350°F (175°C). In a large skillet, melt butter over medium heat. Add mushrooms and sauté until tender. Stir in flour and cook for 1 minute, then gradually whisk in chicken broth and heavy cream. Bring to a simmer and cook until the sauce thickens. Remove from heat and stir in half of the Parmesan cheese until melted. Combine the sauce with cooked spaghetti and chicken in a large mixing bowl. Season with salt and pepper. Transfer the mixture to a greased baking dish and top with the remaining Parmesan cheese. Bake for 25-30 minutes or until bubbly and golden on top. Garnish with chopped parsley before serving. Broccoli Cheddar Muffins Ingredients: 2 cups all-purpose flour 1 tablespoon baking powder 1/2 teaspoon salt 1/4 teaspoon black pepper 2 large eggs 1 cup milk 1/4 cup unsalted butter, melted 1 1/2 cups shredded cheddar cheese 1 cup cooked broccoli florets, chopped 1/4 cup chopped green onions (optional) Directions: Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners or grease with cooking spray. In a large mixing bowl, combine the flour, baking powder, salt, and black pepper. In another bowl, beat the eggs, then stir in the milk and melted butter. Pour the wet ingredients into the dry ingredients and stir until just combined. Fold in the shredded cheddar cheese, chopped broccoli florets, and chopped green onions, if using. Lunch meal prep from another recipe found on Instagram’s explore page, @pinchofyum’s roasted peanut kale crunch salad. Holy moly was this good! Blitzing the kale (and instead of Brussels sprouts,) and cabbage in the food processor makes everything nice and fine, and so much easier to eat. The real star are all the toppings — lots of peanuts, cilantro, Fresno chiles, and green onions. I also swapped sesame oil for the roasted peanut oil, but liked this recipe so much I’m going to buy some online to try!
