BLITZ AND BAKE STICKY TOFFEE BANANA PUDDING A @bbcfood recipe (still can't find the right account for BBC Good Food mag!) This was amazing, I couldn't believe it had been made in the food processor! It certainly didn't taste like it had. You needed to soak the dates half an hour beforehand, but then you literally put all the rest of the ingredients in the food processor, blitzed it up, poured it into a tin then baked it! Grease an 8-inch square baking dish. In a bowl, combine dates and baking soda. Pour boiling water over dates, let stand for 20 minutes. Asalamualikum, sticky toffee pudding is a classic British dessert. It’s made using dark brown sugar and chopped dates, topped with a sweet sticky toffee sauce and served with vanilla ice cream or custard. I’ve taken this classic pudding and added a slight twist to it by using banana, milk chocolate chunks and soft light brown sugar, as opposed to the authentic dark brown sugar. It’s the most richest, fluffiest, lightest date and banana sponge, it’s a beautiful cross between a classic banana bread and a good sticky toffee pudding, the two together is a perfect combination, sweet, fudgey, caramely and delicious. Traditionally, sticky toffee pudding is made with medjool dates or dates that are chunky and have the most flavour and chewiness. In my recipe I have used Palestinian medjool dates. To get that delicious, gooey and decadent texture and flavour sticky toffee puddings are associated with, whilst the cupcakes were hot out of the oven, I poked holes on top and lovingly poured on the toffee sauce and left it to soak and absorb. When it’s time to serve, I reheated my sticky toffee sauce and generously poured it over my sticky toffee banana cupcakes and served it with pistachio kulfi or vanilla ice cream. Honestly, this dessert is the most comforting pudding known to mankind, its moreish, decadent, rich, sweet, gooey, soft and fluffy all in one and it’s the best cake to make and bake. Such a great meal at Spent Grain! Another Sunderland Restaurant Week visit, this time to @spentgrain_ Really great cooking and lovely service. Two of my favourite things. A dish consisting of Belly Pork, Black Pudding and Mashed Potatoes, meant that I’d already been swept off my feet before I even entered the building. For £20 you can get a starter, a main and one of the selected drinks on offer. I did that, and also added a dessert. Honestly couldn’t fault a thing. So just a quick run down, I had: ⭐️Creamy Garlic & Thyme Wild Mushrooms. Toasted Bloomer. ⭐️Crisp Roasted Belly Pork, Apple Cider gravy & Black Pudding Mash.
