Duck Chettinad . This dish is inspired by the recipe from Atul Kochar in Benares. Here I made a slightly simpler version. Duck breast rubbed with a Chettinad spice mix, pan roasted and finished in the oven to exactly 54 C. The sauce is wonderfully fragrant, reflecting the Chettinad spice mix and coconut and it is served with a Savoy cabbage poriyal, where the cabbage is stir fried with a mix of aromatics marrying spices such as mustard seeds and curry leaves. Your thoughts on Michelin star dining? 🍴 I treated myself to a Michelin-starred vegan Indian feast from chef @chefatulkochhar stunning @hawkynsamersham restaurant. Atul Kochhar is a legend in the culinary world, with two Michelin stars under his belt, but isn’t primarily known for his vegan offerings. His Hawkyns restaurant in Amersham has a stunning vegan takeaway menu, showcasing the vibrant flavours and culinary artistry of India, all plant-based. And let me tell you, it was a revelation for my senses! My vegan take-out consisted of: Purple sprout broccoli porial, aubergine bhaja, broccoli tikki, mushroom masala, yellow dal, Tandoori roti, steamed white rice and a trio of desserts. Each dish was a symphony of textures and tastes, a testament to Chef Kochhar’s masterful understanding of spice and flavour balance. Not only was it entirely plant-based, healthy and satisfying, but an absolute explosion of joy for my taste buds. The portion sizes were equally generous, making it a hearty feast for two, or a couple of sittings if you enjoy having your meal spread over a day. Each dish is so lovingly prepared, cooked expertly to perfection and presented so beautifully – even within food containers for which I plated my meal up at home. To say that this meal warmed my soul is an understatement. Each and every last bite was an absolute delight, from the sumptuous aubergine to the crunch of the broccoli tikki, the fluffy white rice with comforting dal and the juicy earthen richness of the broccoli. Sharing pictures from my favourite show @saturdayjamesmartin where I made Crab Bonda dish. Show will air tomorrow, Saturday from 9.30am on @itv or you can catch up later on @itvxofficial 😊🥂 Try out this delicious dish at home with recipe shared below: CRAB BONDA INGREDIENTS- Picked crab meat x 400 gms Boiled Grated potato x 300 gms Mustard seeds x 20 gms Curry leaves x 2 sprigs Turmeric x 1 tsp Chopped ginger x 1 tsp Chopped chilli x 1 tsp Corriander powder x 1 tsp Lemon juice x 30 ml Panko crumb x 250 gms Cornflour slurry (4 tbsp cornflour + 200 ml water) Oil for frying Salt METHOD- 1) In a pan, heat oil and add mustard seeds, fry till the crackling stops and add curry leaves. 2) To this tempering, add ginger, chilli and saute for a minute. 3) Add turmeric and coriander powder and cook for a minute. 4) In a mixing bowl combine the crab meat, boiled potato and tempering, season with salt and lemon juice. 5) Make 30-40 gm balls out of this mixture and chill in the fridge for an hour till firm. 6) Dip each ball individually into the slurry and coat in panko crumb. 7) Fry at 170 degrees for 1-2 minutes till golden brown. For CHILLI TAMARIND CHUTNEY INGREDIENTS • Tamarind pulp - 1 kg • Jaggery -500 gms jaggery • 50 gms ginger powder • 20 gms fennel powder • 5 gms black salt • 10 gms cardamom powder • 30 gms kashmiri chilli powder • 10 gms roasted cumin powder • Chilli flakes -2 tsp METHOD • In a pan bring tamarind pulp to a boil • Mix all dry ingredients with 100 ml water and whisk into tamarind pulp to avoid lumps. • Add jaggery and cook for 30-40 minutes on low heat till reduced. • Cool down and add chilli flakes. APPLE KIMCHI SALAD INGREDIENTS- • Kimchi -100 gms • Red apple diced - 1 pc • Chilli tamarind chutney METHOD • In a mixing bowl add chopped kimchi and red apple, dress with chilli tamarind chutney. CHARRED CORN INGREDIENTS- • sweet corn kernels -100 gms METHOD- • In a frying pan, dry roast corn kernels till charred. *TO ASSEMBLE- Place apple salad on the bottom, top with corn kernels. So about last night. So after missing the Man City game due to illness was brilliant to be back! League game against Brentford last night, need a win and we got one!! Was a brilliant start to the second half! 2 goals in the space of a minute!! But to the food, guest chef last night was @chefatulkochhar with support from @chefashok_sharma & his team. It’s always a massive pleasure working with these guys. We all work well as a team and it’s so nice to learn how to cook with spice. The dishes are always colourful and packed with flavour!! Fawn-worthy Chocolate Curry Venison Been playing around with this dish since I visited 2 @chefatulkochhar restaurants in a day this summer. Had a tasty venison pie and been working on this since. This is probably the 10th iteration and dear oh deer it was good. Chocolate with venison is a common pairing. The chocolate adds a rich deep smoky flavour that balances with the gaminess of the meat rather than bucking against it. We are talking dark chocolate here cranked up to 70%. Only 8- 10 grams added to a broth from onions, spices and venison bones. I also add some redcurrant jelly for sweetness and acidy to cut through the bitterness. In previous iterations I used pumpkin but I found it was too sweet, bordering on a chocolate moose. This time I opted for celeriac. Buying celeriac makes me feel like Henry VII as the bulbous nature of this root veg reminds me of carrying round a severed head. The fondant was tender, buttery and earthy. The puree slightly sweeter, velvety and mildly acidic from lemon juice. Friday Date Night 🕺🏽💃🏼 Hawkyns, Amersham 📍 One of the best pan-Indian restaurant’s I have ever been to. Amuse-bouche, starters, mains, sides, 0% beers for £120. No complaints with the price, portions were generous and just so bloody tasty. & the waiter’s were spot on. I couldn’t recommend the mushroom side and prawn curry main more….. and the scallop starter with caviar 🤤 This restaurant is part of the Atul Kochhar group. Atul Kochhar was the first Indian Chef to be awarded a michelin star back in 2001.
