Venison Madras I bought a beautiful joint of Venison about Easter time, and popped it in the freezer thinking I’d make a rather posh roast with it at a later date, never thinking I’d make a slow cooked curry! The venison was incredibly tender so I reduced the cooking time somewhat, the recipes I found @goodfoodeveryday as per, I’ve adapted a couple of things, I was cooking on an Aga which requires less liquid then the original recipe, but here’s what I did. Homemade Summer Sausage 🌞🥩 Ingredients: - 5 lb ground hamburger (no lean burger) - 5 Tbsp liquid smoke (found near barbecue sauce) - 5 Tbsp Morton Salt Tender Quick (found in dark blue bag in spice aisle) - 2 Tbsp coarse ground pepper - 2 Tbsp minced garlic - 2 Tbsp mustard seeds Directions: 1. In a large bowl, mix all ingredients with your hands like making meatloaf. 2. Cover and refrigerate for 24 hours. 3. Take out and knead one more time, then shape into 4 logs (each approximately 14×2 inches). 4. Place the logs on a baking sheet with 1-2 inch sides. 5. Bake at 300°F for 3 hours. 6. Remove from the oven and wrap each log in wax paper with aluminum foil around it. 7. Refrigerate until well chilled. 8. Serve by slicing and eating alone or with crackers and cheese.
