I have indeed tried all of the kimbap fillings she currently offers - spicy chicken, bulgogi beef and tofu - and they are all so good! She also makes a triangle kimbap. Yokohama is famous for its Chinatown. We were a little ways outside of Yokohama in Ofuna but we had some Chinese food and it was tremendous. Big gyoza dumplings (about twice the size of normal dumplings), sweet and sour shrimp, beef with green beans, shrimp siu mai noodle soup and xiao long bao (soup dumplings). mushroom pizza with miso butter shallots CR: Teighan has developed the absolutely perfect home-pizza-without-a-pizza-oven technique that we have used several times now without fail. So we had pretty high expectations going into this recipe, and weren’t disappointed. The saucy, umami, buttery shallots were so delicious - I’d happily use that part of the recipe alone for other things (a side dish to steak, or maybe a topper on chicken breasts). My only complaint is that all the toppings became a mound, and the liquid from the mushrooms + the shallots spilled over to make the bottom of the pizza a tad damp. This is really more of a flatbread with cheese than a true pizza, but nevertheless the flavors were unique and delicious. EC: This pizza is quite the umami bomb, and it’s absolutely delicious. The earthy kale and mushrooms pair excellently with the miso butter shallots. I roasted my shallots a day ahead of time and not only did they make my house smell amazing, it also made the pizza super easy to assemble for dinner. My only complaint is that this dish would really benefit from a bit of acid to balance the fatty/salty/umaminess of all the other ingredients. white fish with fried olive and caper dressing CR: I am an olive girlie through and through, so I already knew this one was going to be a win for me. The real surprise was when my fiance, a notorious olive hater, also thought this was delicious! According to him, frying the olives & capers takes away the abrasive briney flavor that he hates. Add in fresh herbs + lemon juice and you’ve got yourself a bright, tangy, salty sauce that pairs beautifully with a flaky white fish like the tilapia we used. This recipe came together very quickly & easily; I would definitely make this again for a light summery meal, served with a glass of ice cold Sauv Blanc. EC: I don’t make a lot of fish, and everytime I make a recipe that turns out this delicious I wonder why I don’t make it more frequently. I prepped the dressing ahead of time (skipping the olives because no one in my house likes them), which made cooking a breeze at dinner time. The fish could not have been easier (season and cook tilapia for four minutes on each side), then spoon your sauce on top and it’s done. The dressing packs a flavor punch full of salty, briney capers, bright herbs, and zesty lemon and vinegar. Today is my 3 year diagnosis mark! I’m Caitlin - I live in the Blue Mountains with my husband and our dog Millie - a German Shorthaired Pointer x Bull Arab. Around 5 years ago I made some big changes to return to a healthy and balanced diet and regular exercise. Between 1-1.5 years later I was experiencing gastrointestinal symptoms inconsistent with my diet and severe pain from my stomach into my ribs and shoulders. The pain was so bad that I was spending half the day barely able to stand until one day I wasn’t able to get up to go to work. I went to my GP and got a blood test. With a lower than normal whole blood count, this lead to testing for anaemia and coeliac antibody markers. Lo and behold, the coeliac markers came back as possible CD. Fast forward a few months, a gastro appointment and endoscopy/gastroscopy I got my biopsy results back and confirmed CD. Post op my gastro said to me he would be surprised if it was CD and not just gluten intolerance! Well, then. From start to finish of medical appointments (I went private) it was about 3-4 months. When I went gluten free, everything improved ten fold. After years on and off (probably about seven!) of gastrointestinal symptoms, iron deficiency, a weak immune system and always being the one with a cold - this all improved significantly. I created this page prior to being diagnosed CD, as a lover of food. I pivoted to a completely coeliac food approach upon diagnosis. I share my fave eats mostly around Sydney. We lived in Melbourne for a couple of years prior to diagnosis so you’ll find me pining for the Melbourne food scene occasionally. There’s not a lot going on in my sleepy little mountains town - especially on the GF food front - but I’ve been living around the mountains since 1994 and managed to find my favourite gems. My fave cuisines are Indian and Japanese for a hard tied first and Mexican. Two of my fave Sydney restaurants are @nomad.sydney and @ester_au. My cousin took us for dinner at a restaurant in the Meiji Kinenkan which was originally built in 1881 but moved and relocated in 1947. It is known as a dining and reception hall with a storied tradition of unparalleled service and attention to detail. It did not disappoint. When we first walked in I thought we might be super underdressed being in shorts and a t-shirt but we had an absolutely wonderful dinner.
