Nandos ๐Ÿ—๐Ÿ— Had a 6 hour dress rehearsal yesterday on a hangover so this was perfect in the evening!!!! One of the only takeaways that is both gluten free and dairy free. I also trust Nandos more than other places as they seem to have a lot of procedures in place when you go to the restaurant. HOWEVERโ€ฆ. one thing that bugs me with Nandos (and other places) is that when you order a collection or delivery, the website says โ€œCurrently, we canโ€™t cater for specific dietary requirements for collect orders.โ€ Why?! I donโ€™t get it. You can cater for me in the restaurant but not when I come and get it? Despite this, I did ring the restaurant and told them I understood they couldnโ€™t cater for specific dietary requirements, but they seemed pretty happy to help- asked me what I was allergic to and I just asked them to avoid cross contamination. They said theyโ€™d pass the message on to the chefs. So the message on the website confused me a bit. ๐Ÿฅ˜ Chicken has been pricey, so I havenโ€™t bought much recently. Kroger had BOGO Tyson chicken this week, so I got four packs. We really like this Gimme Some Oven Slow Cooker Shredded Chicken recipe. After making it a few times a few different ways, we found that we like it better with chicken thighs than with chicken breasts. I paid $9.22 for 4.32 pounds of boneless skinless chicken thighs. Bone in Chicken Thighs on the Egg over indirect heat (375-400 degrees). Dinner last night was so tasty and healthy! Air fried marinated chicken thighs with a cilantro yogurt sauce and a big salad. Recipe is below! Chicken thighs + sauce: 1. Marinate bone in skin on chicken thighs with 2 tbsp of tomato paste, a few cloves of diced garlic, the juice and zest of one lime, 1 tbsp smoked paprika, 1 tbsp oregano, a 1/2 tsp of cayenne, olive oil, salt, and pepper. Marinate for at least 6 hours or up to overnight. 2. Preheat the air fryer to 400 degrees. Air fry the chicken thighs until the internal temp is 165, around 35 minutes. 3. In a blender, combine a cup of greek yogurt, a cup of chopped cilantro, 3 scallions, half of a jalapeรฑo, olive oil, salt, pepper, and the juice of a whole lime. Blend until smooth. 4. Serve the chicken thighs with the cilantro yogurt dipping sauce! Salad: 1. Combine dijon mustard, the juice of a whole lemon, salt, pepper, and olive oil in a large bowl. Mix. 2.
