Like Mousse-ic to my ears 🎵 🐟 The smoked black cod mousse, topped with ikura, & eaten with house made crackers was the most memorable dish of the night @lionessseattle @emilybkim and I also tried the scallop crudo, prosciutto, and cavatelli pasta. We’ll have to go back!
We just got back from a vacation in Puerto Vallarta, a city on the Pacific Ocean in Jalisco, Mexico. The warmth, kind people, breathtaking beaches and mountains, tasty food, and only being a quick 4.5 hr flight from Seattle made this the perfect getaway! I’ll do a separate post with some food and travel photos if you’d like some suggestions if you ever visit! We were still craving some carnitas and guacamole, so we decided to put together a quick carnitas bowl for dinner. I put the carnitas and guac recipes I used below. For the pico de gallo I used a store bought option, black beans I just used canned, and roasted corn was from frozen. Carnitas recipe: -6 lb pork shoulder -1.5 tbs salt -1 tbs dried oregano -2 tsp ground cumin -1 tsp ground pepper -1/2 tsp chile powder -1/2 tsp paprika -2 tbs olive oil -1 cup pineapple juice plus pineapple pieces (if desired) -1 chopped white onion -4 minced garlic cloves 1. Cube pork butt. Rub with mixture of the spices above. 2. Place spiced butt (lol) in Instant Pot. Drizzle with olive oil and add juice/fruit, onion, garlic. Give it a stir. 3. Pressure cook on high for 1-1.5 hrs until pork begins to fall apart. 4. Pull out meat. Once cooled slightly, shred that baby. Guacamole recipe: -3 mashed avocados -1/2 small/med chopped red onion -1/4 cup minced cilantro -Handful of cherry tomatoes or whatever tomatoes you have, chopped. -1 minced jalapeño, seeded or not depending on spice tolerance. I subbed with a small spoonful of TJs Bomba hot sauce since I forgot to buy a jalapeño. -1/2 tsp cumin -1/2 tsp salt -Juice from 2 limes plus some lime zest 1. Mix together above ingredients. Bam- you have guac. 2. Tip- Potato mashers work like a charm for mashing avocados. We enjoyed their April menu, with many baby/young fish options due to the spring season. - Hairy crab - Ginger served two ways - Baby sea bream - Shirasu, egg yolk - Cherry trout, ginger, shiso leaf - Horse mackerel - Kinki rockfish, sake, dashi - Baby bluefin tuna I put together a chill video of our dinner too for our memories. We recently started using @grandcentralbakery and jeez does their hoagie roll + our house vodka sauce take this sandwich to a whole new level. It just goes to show how much of a difference those small changes can make. The spice blend cuts through the signature richness of the sandwich, balancing the flavors out and making it super cravable (in our humble opinion). After all the tweaks and trials, I think the chicken parm is better than ever. . ps: the spicy level is tame enough for most folks, but if you tend to like a little more of a kick make sure to ask for extra hot chicken spice 🌶️ .
