Chilaquiles Estilo Keto. Ingredientes: 2 tazas de chips de tortilla de linaza o tortillas de almendra cortadas en trozos pequeños 🌽 1 taza de salsa de tomate baja en carbohidratos 🍅 1/2 taza de queso cheddar rallado 🧀 2 huevos 🥚 Aguacate en rodajas 🥑 Cilantro fresco picado 🌿 Crema agria (opcional) 🥛 Sal y pimienta al gusto 🧂 Instrucciones: Precalienta el horno a 180°C. Coloca los chips de tortilla en una bandeja para hornear y hornéalos durante 5-7 minutos, o hasta que estén crujientes. Mientras tanto, calienta la salsa de tomate en una sartén a fuego medio. Una vez que los chips estén listos, añádelos a la salsa de tomate caliente y revuelve para cubrirlos completamente. Agrega el queso cheddar rallado y sigue revolviendo hasta que se derrita. Well you are out celebrating Cinco de Mayo, you can still make healthy choices. If you are a fan of burritos, think about cutting it in half and saving the leftovers or sharing with a friend. Perhaps you can get it in a bowl and take out the wrap which would save you almost 300 cal. With Mexican food you can always take out the cheese or sour cream to reduce the fat and calories. Happy Cindo De Mayo!🌮🥑🎉 Here's some inspo from a random Saturday night I hosted a bit ago, which was NOT Taco Tuesday and NOT Cinco De Mayo, but was just really in the mood for Mexican...🤷‍♀️(also, there were only 4 of us eating it lol) So it's just some inspo for today instead of the basic taco spread or an idea for the next time you have to feed a large crowd....or ya know...4 people lol🤷‍♀️ Everything was dairy/gluten free/clean ingredients with the exception of the mini street taco wraps and the cheddar cheese (I don't force my restrictions on anyone else lol). 🥑Cashew Lime Crema 🥑Fresh Pureed Mango Dressing 🥑Roasted Garlic Roman Cauliflower 🥑Cilantro Lime Sweet Potato Cauliflower Rice 🥑Mexican Spiced Ground Chicken 🥑Cashew Queso 🥑Black Bean Sriracha Hummus 🥑Crazy Corn (organic purple, white & yellow) 🥑Pineapple Poblano Guacamole 🥑Roasted Red, Yellow, Orange peppers 🥑Grain free shells and chips And all the fixings👌 👉PRO PREP TIP: (bc it's still Meal Prep Day over here) double the ground meat (I suggest ground chicken) cook up one cup quinoa toss together and top with all the healthy leftover toppings (if you have no more toppings left, pick up a container of fresh salsa, its literally just chopped veggies with no added junk) and now you have a balanced and complete lunch prep for the next 4 days! 🥳Let me know what you're eating today!👇 Happy Sunday! They have fresh ingredients that can be mixed to accommodate most diets including vegetarians. We went yesterday and this was my order. What do you like to order at Chipotle and Mexican restaurants? My dietitian approved order: Chipotle Salad, romaine lettuce, black beans, sofritas plant based protein, salsa/pico de gallo, corn salsa, and top with guacamole. Cinco de Mayo, ok really anytime, is always a great time to explore how to make your favorite Mexican dishes Plan friendly. This super easy recipe for Huevos Rancheros is in The Plan Cookbook. If you are reactive to corn these crackers are perfect GF Carrot and Beet Crackers Simple, inexpensive gluten free crackers that are chock full of protein! Carrot Crackers 2 cups grated carrots 2 Tbsp flax seeds 3 Tbsp chia seeds 1/2 tsp cumin 1/2 tsp chipotle powder Beet Crackers 2 cups grated beet 2 Tbsp flax seeds 3 Tbsp chia seeds 1 tsp cumin 1/8th tsp sea salt ¼ cup extra-virgin olive oil for oiling 2 baking sheets Place all the Carrot Cracker ingredients in a food processor and blend. Scrape down the sides to get all ingredients incorporated. Form into a ball and let sit for 45 minutes for mucilage to form to bind the ingredients. Repeat with the Beet Cracker ingredients. Preheat oven to 225 F° and oil the baking sheets. Take 2 sheets of wax paper and place the carrot dough between them. Use a rolling pin to roll out the dough until it is ⅛-inch-thick. Use a 4-inch round cookie cutter to form the crackers. Repeat the process with the beet dough. Place the crackers on cookie sheets and bake for 50 minutes. Flip the crackers and bake for an additional 50 minutes. I’ll just bring home a pizza.. Scrambling for a QUICK meal after work 🚙 Me too! Alllll the time!! This took 15 minutes.. ⬇️ Taco Bowl!! Super QUICK to whip up after work! Freezer finds & Rotisserie.. Gut Healthy & EASY 🙌🏼 Newbies worry this nutrition plan is tough.. It’s not. Simplify it by ingredients from your food list & pull them together for a healthy meal! No reason to get fancy unless you want to! Make a Cauliflower rice base I like the asparagus mushroom risotto one.. And make it Mexi!! Toss it in a pan & season with garlic powder, onion powder, cumin, oregano & chili pepper. That’s your base! Add Rotisserie chicken, chopped tomatoes, black beans, guac cup and a drizzle of Primal Kitchen Vegan Ranch & dinner is done! ✅ Polar Lime Mule seltzer on the rocks with fresh lime juice for an extra treat! 👌🏼😋 What I love most about this Gut Healthy Nutrition Plan is that it makes me feel amazing of course but also it makes me enjoy cooking more! Ensalada de Nopales con Frijol Un clásico Mexicano que cae deli cualquier día de la semana. Yo utilice frijoles como fuente de proteína pero también puedes usar pollo desmenuzado. Porciones: 2 a 3 Para los nopales: 5 nopales tiernos picados 3 tazas de agua 1 cucharadita de bicarbonato de sodio Para la ensalada: 1/2 taza de tomates cherry picados 1 puño de cilantro picado 3/4 taza de frijoles enteros sin caldo 2 echalotes o 2 cebollinas picadas 1 chile serrano picado (yo utilice chiles jalapeños encurtidos picados) Vinagreta: 1 chorrito de vinagre de manzana 1/2 limón(jugo) 1 cucharadita de sal Pimienta al gusto 2 cucharadas de aceite de oliva o al gusto. Tostadas(si son hechas en casa, la airfryer es la mejor opción, untas con aceite de oliva y sal y las doras por 15 min, volteando a la mitad.) Queso fresco (omitir si no comes lácteos) Aguacate para untar tostadas Procedimiento: Cuece los nopales previamente picados y lavados en el agua con bicarbonato por 5 minutos para que se conserven verde vivo. Picar toda la verdura y mezclar en un bowl junto con los nopales ya frios y el frijol. Prepara la vinagreta mezclando los ingredientes y emulsionando con un batidor de huevo o un tenedor. Combina la vinagreta junto con la ensalada y ajusta sabor de sal y pimienta. One of my favorite things to do is grill avocados they get so buttery and a little smoky from the grill. This is a perfect dip for any Mexican feast ! Sauce: 4 ripe Hass avocados 1/2 red onion 1 poblano pepper 3 freshly chopped chives 1/2 lemon juiced 1/2 lime juiced 1/2 cup fresh cilantro, chopped 1/4 cup toasted cashews or pumpkin seeds 1/2 tsp cumin 1/4 cup olive oil Kosher salt to taste Heat grill to medium heat. Cut the avocados in half lengthwise. Remove the pit from the avocado and discard. Place cut avocado sides on the grill and grill 3-4 minutes. Meanwhile also palace the red onion , lemon and lime and poblano pepper on the bbq and grilled until charred.Remove the avocado from the skin and place the avocado flesh into a bowl. Remove skin and seeds from poblano chop with red onion and add to the bowl. Add the lemon juice, lime juice, red onion, chives, cilantro, pepitas, cumin, salt and pepper. Mash with a fork or put in a food processor until half smooth and creamy. Tacos φακής με guacamole! 🌮 Κατάλληλο για νηστεία, vegetarian, και vegan διατροφή!🌱 Υλικά για 4 tacos: 4 μικρές αραβικές πίτες (ή 4 tacos) 250 γρ. φακές 1 κρεμμύδι 1 πιπεριά 1 κούπα ντοματίνια 250 ml σάλτσα ντομάτας 1 κ.σ. ελαιόλαδο 1 κ.σ. πάπρικα Αλάτι Πιπέρι Υλικά για guacamole: 1 ώριμο αβοκάντο 1/2 λεμόνι 10 ντοματίνια 1/2 κρεμμύδι 1 κ.σ. ελαιόλαδο Αλάτι Πιπέρι Εκτέλεση👩‍🍳: 1. Βράζουμε τις φακές. 2. Ψιλοκόβουμε το κρεμμύδι και την πιπεριά και τα βάζουμε σε ένα τηγάνι σε δυνατή φωτιά με το ελαιόλαδο μέχρι να ροδίσουν. 3. Ψιλοκόβουμε τα ντοματίνια και τα προσθέτουμε στο τηγάνι. 4. Προσθέτουμε τις φακές και την κόκκινη σάλτσα ντομάτας. 5. Cauliflower Chicken Enchiladas 2 Servings 1 Lean 3 Green 2 Condiment Ingredients- 2 medium Cauliflower Tortillas 6 oz Raw Chicken Breast chopped 1 small Dried Ancho Chile Pepper 1/2 tsp Chicken Bouillon 1 medium Garlic Cloves 13 cup Low-fat Mozzarela shredded 2 tsp Low-fat Mozzarela divided (optional)* 1 can Light Cooking Spray Directions- Cut the raw chicken into large pieces. Place in a small saucepan and cover with water, bring to a boil, covered, until cooked through, approximately 10 to 15 minutes. When done shred the chicken with a fork: then set aside. While the chicken is boiling, using another small saucepan, boil the dried ancho chile pepper in 2 cups of water for approximately 10 minutes. After the 10 minutes remove the pepper from the water set aside to cool;. Keep the liquid used to boil the pepper. Once the pepper is cool, remove the stem and inner seeds from the pepper flesh. In a blender or food processor, place the pepper flesh, half-cup of the boiling liquid, chicken bouillon, and garlic clove; puree until smooth. Heat a lightly sprayed skillet for the enchiladas. Heat the enchilada sauce that was made in the blender/food processor in the skillet. Immerse one cauliflower tortilla in the sauce, and turn over once using a heat safe spatula. Once immersed on both sides move the tortilla to a plate, and top with 1/2 of the chicken and 1/2 of the cheese; roll the tortilla folded end down on plate. Repeat with the remaining cauliflower tortilla, chicken, and cheese. Top with 1 teaspoon of the cheese, if so desired. Will you try this?
