I posted what a full workday from home looks like for me in my stories yesterday and y’all asked to see more of what I eat in a day so here ya go! I have been eating at matainance the last 7 months at 2,200 calories a day. This last week I bumped my macros up to 2,350 calories (260 C/70 F/170 P). No particular reason for bumping them up except for I want to make sure I’m eating enough to build muscle and who doesn’t want to eat more food?! I think I missed the mark for a long time that the goal should be to eat as much as you possibly can while being able to reach your goals (whether that’s maintaining your weight or losing fat) rather than trying to eat as little as possible. So we’ll see what happens with these higher numbers but I’m feeling great! I could still be within a range to maintain my weight but I could gain a little too. Won’t know unless you try and are consistent! I’ll stick around here for a few weeks and go from there! Here’s what I ate today: Snack: I have perkenergy every morning when I wake up. I don’t love having a full meal before the gym but the kids ate all my usual protein bites and after logging my meals for the day I realized I needed more fat so had an English muffin 2 Tablespoons offbeatbutters to get in some more fat. Went to the gym and lifted legs! Didn’t have time to do any cardio after but honestly my legs were too tired anyway. 🥵 Breakfast: Chick-Fil-A Egg White Grill an extra egg white strawberry jam. Always. Lunch: Leftovers from last night’s meal plan recipe. Creamy Chicken and Wild Rice Soup (coming out in November’s meal plan) a roll. Snack: builtbar Cookie Dough Puff. My favorite thing they make and now it’s a permanent flavor! Dinner: Chicken Pad Thai Thai Cucumber Salad (both recipes will be in next month’s meal plan too). So easy to make and so delicious! When I'm stressed out, I love taking time to make myself a comfort meal. On Sunday morning, we roasted a vegan ham just so I could make a plant-based ham and asparagus quiche. We enjoyed some of the extra ham on sandwiches tonight, and I tried the Aldi dupe of Olipop, which was very comparable and tasty. A couple weeks ago, I asked B for two numbers so I could randomly pick one of our cookbooks and one of the recipes in it to make. We wound up spending our Sunday evening making the feast that is chickpea chole chawal, complete with homemade raita, from the @weareveganuary cookbook. Scrumptious! This weekend's recipe test was a cookies and ice cream pie, which I am eager to have another slice of this evening. Any guesses what movie I'll pair with it this summer? Eating healthy meals doesn’t need to take up all your time… My favorite easy go-to lunch when I am busy is a big bowl of goodness using up the leftovers. It is so simple… I typically have some batch cooked grains in the house (like quinoa), leftover protein (my family loves mexican spices), & lots of fresh veggies. Layer grain, and top with protein veggies and toppings. Enjoy. This lunch is perfect for boosting protein and veggie intake. Great for balancing hormones and body composition changes. Note - Choose the ingredients that work for you. Personally I am not a fan of cow dairy so I avoid it. What I eat in a day! I started with scrambled eggs, farm fresh sausage, and glazed carrots (leftover) for breakfast at 6:15am. At 9:15am I ate 3.6 oz of Fage 0% Greek yogurt with sliced strawberries and homemade granola. Lunch at 12:15pm was a strawberry citrus chicken salad with citrus dressing. Second snack at 3pm was apples and peanut butter plus a babybel cheese (not pictured). For supper at 6:45pm I had leftover lamb chop over homemade pasta with a mushroom sauce. This came out to 79 grams of protein, about 1300 calories. And all very delicious and satisfying 🥰 #wieiad #healthy #mealplan #mealprep #whatieatinaday #balance

Lentil soup 🫶🏻 Ingredients: 1. Lentils 2. Sweet potatoes 3. Potatoes 4. Zucchini 5. Swiss chard 6. Tomato sauce 7. Garlic 8. Onion 9. Parsley 10. Oregano 11. Olive oil Method: Have all your ingredients chopped and ready to go. Start by sautéing the chopped garlic and onion. Once translucent, add the potatoes, sweet potatoes and oregano. Cook for about 10 minutes before adding lentils and tomato sauce. Cook down for about 30 minutes on medium heat (or until lentils are soft). 10 minutes before you are ready to serve, add the swiss chard, zucchini and parsley. Let it boil on low for the remaining 10 mins. Cook times may vary, so please adjust as needed.
