Supper is: baked chicken, mac'n'cheese, and roasted brussel sprouts. For the baked chicken, the oven temperature was 400°F and the cook time was 1 hour. The chicken was seasoned with a soy-free coconut amino teriyaki sauce, lime juice, pink Himalayan salt, and dried basil. For the roasted brussel sprouts, the oven temperature was 400°F and the cook time was 25 minutes. The brussel sprouts were seasoned with olive oil, garam masala, garlic powder, and a teensy bit of iodized salt. There's some char and that's just lovely because it adds to the nuttiness of the vegetable. An experimental dinner tonight that worked out really well. Tomato free, dairy free, gluten free pasta. I was craving pasta but didn't want to give myself a migraine or an upset tummy. I used a capsicum and cashew dip from the fridge section of the supermarket over gluten free pasta. If it wasn't Friday and I wasn't exhausted I could have found a recipe. Maybe next time. Photo of somewhere i feel calm.... Yesterday I had 3 work meetings plus multiple other tasks then an evening meeting for something else with a short catch up for another committee beforehand. It wasn't a bad day but it took a lot of brain power. I hadn't realised it but by the end of the last meeting I could barely speak coherently. I've never hit that point before that I can remember. Today I was working from home which I was grateful for but I clearly was paying for yesterday's efforts as it was a constant battle to keep my thoughts clear and get things done, even tasks I'd been looking forward to doing. Today's coaching session and another appointment used up the last little bit of thinking I had so this evening is going yo be spent in a fog of telly and attempting to get to bed early... Hey guys, how's it going? Me? I'm doing alright so far, tired, but alright. Did everyone have a good week this past week? Cause if so, then I'm happy for you. Me on the other hand, well, I think the best answer on my end would be..."sort of". Let's just say I've had a rather busy week lately, part of it was taking care of family stuff with some certain members, while the rest of it ended with my usual work schedule, almost all of which involved me getting up really early in the mornings & not getting very much sleep on many of those past nights. Speaking of which, have you ever had to take care of something somewhere and you didn't end up getting home from it until midnight, while you still had some certain things to get taken care of AND go back to work later the next morning to do that something all over again? Because I did, and I'll tell you, it's NOT very fun. But sometimes, these kinds of things can happen, and as long as it somewhat benefits you in the long run, it's not entirely the worst thing in the world, well that, and I also kinda been through worse before anyway, so it's not always so bad in comparison. But yeah, from going to such places like Midland & San Angelo for medical checkups, to taking care of my usual work schedule, this past week has been somewhat interesting for me. On the bright side though, I've managed to somehow get through it all, that new @nintendoamerica game, "Princess Peach Showtime"! just released the other day, and with any luck, this next week may turn out a little easier than I think it will (I'll be crossing my fingers on that last one).
