Recipe time! . Today the first muffin of the year was prepared in our Casa! As you can imagine, there was much excitement all around— especially from the proud baker👨🍳🧁 . Here is the recipe card I use to show the children how to make a single serve muffin. (Admittedly, it’s not the best muffin of all time, but it’s a pretty good result and doesn’t require any eggs. There are certainly never any leftovers!) . Many years ago, children at my old school prepared trays of 12 mini muffins but we found that this tended to create a lot of waste, and was challenging to dole out fairly. The single-serve recipe has been much more successful in my experience. . *Chocolate Chip Muffin* Wash Hands Heat oven to 350° Add: 3 tablespoons of flour ¼ teaspoon of baking powder A pinch of salt 1 tablespoon of chocolate chips 1 tablespoon of sugar 1 tablespoon of milk 1 tablespoon of oil ½ teaspoon of vanilla Mix Put a muffin cup in the muffin dish. Spoon batter into the muffin cup. Bake for 20 minutes. We made banana mug cake together today and loved eating them from our matching @dunelmuk ceramic mugs ☕️ Its the paleo banana bread mug cake recipe from @the.roasted.root and the second time we’ve made it. Such an easy and tasty recipe! In fact my husband, son and I share one portion (I divide it up). My son loves being involved in the prep and it only takes a few minutes to get it ready. The ceramic espresso mug is the perfect size for him and we now have the grown up set in our house as well!
Today was the lantern parade together with the little ones kindergarten group. ✨🕯 Afterwards we shared some St. Martin’s sweet geese. These are baked with an yoghurt (curd)-oil-dough and I heard of this dough the first time when I started working as a kindergarten teacher 🤭 It’s delicious. 🥰 For about 4 geese (and some left over dough for free modelling) you’ll need: 175g flour 2 tbs sugar 1 tsp baking powder Vanilla essence to taste 60g vegan curd (thick yoghurt, or normal yogurt) 75ml oil (like sunflower or canola oil) 50ml plant based milk -> mix everything together and roll out dough (~1.5-2cm thick) and cut out your geese. Make chocolate chip eyes and bake at 180C for about 15-20 minutes or until brown. We’re currently obsessed with pumpkins! For soups, in pasta, on pizza or in a pumpkin patch sensory bin for the little one 🎃. So I recreated the pumpkin bread rolls I made last year. They are just like normal bread rolls but with added pumpkin purée & wrapped with cooking string before baking. You’ll need: 250g flour 1/2 package of dried yeast 115ml plant milk of choice 1tbs pumpkin purée 1/2tsp salt 1tsb vegan butter Let rise for one hour. Then roll into ball shapes and wrap with cooking string. Cooking Friday is back!!! We are so happy to have our cooking Friday’s back at TL! Today our infants and toddlers made homemade applesauce! The ingredients we used are: 6 grannysmith apples 6 honey crisp apples water date syrup This was an amazing first recipe for our students! It involved cutting, pouring, squeezing, mixing, and tasting😋 They all had so much fun and now get to bring home fresh applesauce to their families!
