🍅🌶️ Getting festive at school with a pre-Cinco de Mayo celebration! We enjoyed salsa from scratch using fresh cherry tomatoes we received from the OSNP. Since we couldn’t eat them all before they went bad, we tweaked a recipe we found from @thepioneerwoman to make the salsa. Oh! Brown Butter 53 I’m very happy to be working with @karobisghee to reduce food waste and make some delicious chocolatey goodness for you at the same time. @karobisghee is a collection of remarkable, multi award winning ghee products made from organic, grass fed, West Country butter. Ghee is butter that is gently cooked until the milk solids caramelise and turn brown, adding their nutty, caramel flavour to the fat. The caramelised milk solids are then filtered out to leave a golden, caramel flavour, spreadable butterfat. Until recently Karobi had no use for the filtered out milk solids but now I’m making them into chocolate style bars! This is my first go with the milk solids. It is a robust, milk chocolate flavour bar with a little caramel flavour. There will be more. I strongly suggest you try some @karobisghee for yourself, it is absolutely delicious! 🖤 Stay healthy.

This will streamline the process and make it easier both for truck drivers (donors) and food bank staff (recipients) to complete the donation process of rejected loads to hunger relief organizations. 🍏 🥧 APPLE CRUMBLE PIES I am often kept awake at night thinking about how I can avoid leftover scraps of food going into the bin. I hate the thought of any food going to waste, especially during times when many others are struggling to afford even basic necessities. A scrap of leftover shortcrust pastry the size of a golf ball had been troubling me for days. As I was about to go to sleep I remembered the slowly browning cooking apple that didn’t make it into an overflowing pie so had to immediately make these little apple crumble pies. - Chop up the apple into little cubes and soften in a pan with some coconut sugar and cinnamon - Put some of the apple into each of the pastry cups that have been rolled paper thin, cut into circles and placed in a Yorkshire pudding tin (no need to grease. Pastry doesn’t stick) - Rub some unsalted butter into flour, coconut sugar and oats until it gets a lumpy sand-like texture and sprinkle onto the pies - Bake in the oven on 180 (fan assisted) for 20 mins Seems a bit irrational to bake pies at 11pm, but it alleviated me of any food waste guilt, the smell of baked apple pie whilst drifting off to sleep wasn’t half bad and the joy on the kids faces when I put them into their lunchboxes in the morning was 👌 so it was a triple-win. #applecrumblepie #coconutsugar #nofoodwasted #refinedsugarfreetreats #applecinnamon #homemadeapplepie #minipies

Seven years ago, @indyhungernetwork launched the Food Drop program. It started as a pilot project with just four Indianapolis hunger relief organizations as partners. Since then, the program has expanded to cover Indiana. New partners throughout the state have been added to the program, and the donation process has been streamlined and optimized. The program has successfully redirected over 650,000 pounds of food, and we look forward to seeing it become even more impactful moving forward. We @sosain are excited to accept the passing of the torch from our partners over at Indy Hunger Network! SoSA will be able to use our expertise in coordinating large loads, our network of partners and volunteers, and our resources to expand and improve Food Drop long-term. Hesitate to post a ‘budget’ ninja creami make as they’re a wildly expensive and ultimately pointless piece of kitchen paraphernalia, but as I possess it against all common sense, I’m making an effort to make sure it gets regular use! And it is a lot of fun, I will concede. Made 2 tubs of this frozen yogurt which is clean enough to give to the lil one for breakfast and honestly she’s happy as a clam with this breakfast sundae. Blended 2 tubs of Greek yogurt (one full fat, one fat free) with 2 tbsp honey, some vanilla extract and a punnet of blueberries. After freezing, spin, it’ll come out grainy, add a splash of milk, yogurt or cream and re-spin. Task for today was to use up this huge cauliflower I bought reduced from the co op. Half of it went into this veggie chickpea curry, the other half is for a risotto (ends up like a very unctuous cauliflower cheese 🤤). Finely diced an onion and 3 sticks of celery (in the Aldi super 6 this week) and sautéed low & slow like a soffrito. When soft added a generous amount of crushed garlic, ginger, some mustard seeds and 2tbsp mild curry powder. Cooked it off then added 1 tin chopped tomatoes 🍅, 1 tin of light coconut milk 🥥, & 1 tin of chickpeas - drained and rinsed. Added in the chopped cauliflower, and a lemon cut into wedges and simmered until the cauliflower was cooked and the sauce thickened. Removed the lemon wedges and wilted in the last of the bag of reduced spinach I got yesterday. With lime & coriander rice. Always a pasta! 🍝 Sausage meatballs made by squidging out the casings and mixing the sausage meat with seasoning & breadcrumbs. Air fried for ease (and shape retention!) Finely diced an onion and a few carrots, sautéed in oil, a generous amount of garlic, red wine stock pot, passata, tin of chopped toms 🍅, mixed herbs, sugar, salt & pepper. Cooked the pasta, wilted a huge amount of spinach in at the end, mix. Cooler nights on weekdays are ideal for a pasta bake and they are a wonderful vehicle for all sorts of small amounts of fridge goodies and leftovers. This one used up leftover roast chicken and all sorts of veggies with a store-bought sauce pimped up with herbs and spices stirred through part-cooked penne noodles. Topped with a cheese/breadcrumb/herb sprinkle. I just need to get to the crunchy bits around the edges before Mr W smells it!!! 😂

Admittedly, haven’t cooked at home for a few days! Dad fed me on Friday, my lovely market friends fed me on Saturday and my Mumma made me breakfast this morning. I’m hoping another week will last with not having to buy food! I have quite a bit in the freezer but running out of fresh ingredients. Taco Wednesday? I got a request for tacos again. I didn’t have anymore of the carnitas left to make carnitas tacos but I had everything else. I ran to the store and bought some steak quickly, to grill. I use this pan every time I cook bacon. It’s the perfect bacon pan!! I don’t know why i didn’t think to use it for tacos before!!! I usually fry some taco shells and also throw some on the burner to cook a little. This @imusausa pan work’s amazing. I turn on two burners and put the tortillas on the pan. It fits 8 tortillas, instead of my old way doing one by one. AND it gets them crispy which I want!! It’s so much healthier this way verses me trying them. Plus I can add the meat to the taco as it’s cooking and keep it warm. It’s a win win in every aspect!!
