Today, I prepared one of my favorite pasta dishes, ideal for the spring season. Its vibrant colors and fresh flavors create a delightful meal experience. I hope others will enjoy it as much as we did. If you haven’t tried it yet, now’s the time👩‍🍳 Experience the delicious flavors of black Tagliolini with bell pepper foam sauce and crispy king oyster mushrooms! Here’s my - #olgasmooth - recipe: •250 grams of Tagliolini Neri •2 red bell peppers •3-4king oyster mushrooms •2 spring onions •A bunch of parsley •1 onion •2 cloves of garlic •100 milliliters of vegetable broth •90 milliliters of olive oil •Salt and pepper to taste Preparation: 🍴Bring water to a boil for the Tagliolini. 🍴Peel and halve the onion, then chop it into large, coarse pieces. Peel and crush the garlic. 🍴Remove the stems and seeds from the bell peppers and dice them. 🍴In a pot, heat three tablespoons of olive oil. Add the onion and garlic and sauté over medium heat for five minutes until they become translucent. 🍴Trim the roots and top greens from the spring onions and slice them into fine rings. 🍴Set aside the parsley tips for garnish. Pluck the remaining leaves from the stems and finely chop them. 🍴Add the bell peppers to the onions after five minutes and sauté for another five minutes over medium heat. Add the vegetable broth, cover, and cook for 15 minutes until soft. 🍴In the meantime, clean the king oyster mushrooms, halve them lengthwise, and slice them diagonally into 0.3 cm thin slices. In a pan, heat three tablespoons of olive oil and fry the king oyster mushrooms over high heat for five minutes, stirring constantly until crispy. 🍴Add the spring onions and parsley and season with salt and pepper to taste. Keep warm until serving. 🍴Once the bell peppers are soft, puree them with an immersion blender until smooth and season with salt and pepper to taste. 🍴When the water boils, add salt and cook the Tagliolini for about two minutes until al dente. 🍴Serve the black Tagliolini in deep plates, drizzle with the bell pepper foam sauce, and garnish with the crispy king oyster mushrooms. Yesterday, my son @i.am.ivg and I visited the @mash_hamburg Restaurant, a wonderful find in Hamburg⚓️🛳️ This gem is one of the twelve recommended restaurants featured in the @tastetwelve book, a carefully curated collection of dining spots worth exploring in 2024. We selected two appetizers - the seared scallops with caviar and the delicious Wagyu sandwich. For the main course, we opted for the MASH WORLD TOUR TASTE, a royal feast consisting of a trio of premium meats - Kobe A4/A5 Prime Cut, Danish dry-aged ribeye, and Canadian striploin - expertly carved tableside for two. As for dessert, we savored the Baba au citron! – a heavenly treat of whipped ricotta, lemon sorbet, and Sassicaia olive oil. Today felt like one of those days where everything seems to go wrong – from the endless traffic jams to the relentless rain ☔️ 🚘 But amidst the chaos, there’s solace to be found in the kitchen👩‍🍳 So, let’s turn this dreary day around with a culinary delight – Pan-Seared #Plaice ( #Scholle) with Homemade Mustard Hollandaise and Broccolini. Preparation time: Approximately 30 minutes Ingredients: • 200g broccolini • 100 g butter, diced • 3 scholle (plaice) fillets, approximately 70 g each • 2 tbsp lemon juice • Salt, to taste • Flour for dredging • 2 tbsp butter • 2 tbsp chopped chervil For the Homemade Mustard Hollandaise: • 2 egg yolks • 1/4 cup white wine • 1 bay leaf • 1/2 tsp white peppercorns • 100 g clarified butter • 1 tbsp grainy mustard Instructions: 🍴Preheat the oven to 180°C. Cut the broccolini into florets and blanch them in boiling salted water until tender. Drain and keep warm in a covered pot. 🍴To make the hollandaise sauce, combine the white wine, bay leaf, and white peppercorns in a saucepan. Simmer until reduced by half. Strain and set aside to cool slightly. 🍴In a heatproof bowl, whisk together the egg yolks. Gradually whisk in the reduced white wine mixture. 🍴Place the bowl over a pot of simmering water (double boiler) and whisk continuously until the mixture thickens. 🍴Slowly add the clarified butter, whisking constantly, until the sauce thickens. Stir in the grainy mustard and keep warm. 🍴Season the scholle (plaice) fillets with lemon juice and salt, then dredge them in flour. 🍴In a large skillet, melt the butter over medium heat. BEEF ROULADES: •2 pickles •1 onion •100 g of smoked pork belly •80 g butter •2 slices of toast •1 bunch of parsley •4 beef roulades of 200 g each from the top shell •salt, рepper •2 tbsp hot mustard •3 tbsp sunflower oil •100 g each of carrots, celery, shallots and leeks •100 ml red wine •500 ml brown veal stock MUSTARD MASH: •350 g potatoes •100 ml of milk •butter,cream, salt, nutmeg •100 g coarse Pommery mustard FOR THE SIDE DISH - MUSHROOMS: •150 g mushrooms •Schmorjus •butter, salt, pepper BEEF ROULADES: 🍴Cut the pickles, onions and bacon into strips and sauté in a little butter to a mass. Cut the slices of toast in the shape of sticks and fry them in the remaining butter until golden. Mix both together and finally add the finely chopped parsley. Season the meat with salt and pepper and brush on one side with mustard, then spread the filling mixture on top. Roll up the roulades and secure with kitchen twine or metal skewers. 🍴Fry the meat briefly in sunflower oil and remove it again. Add the diced vegetables, roast them carefully and deglaze with a little red wine. Lay the pieces of meat on the vegetables and pour the veal stock on top. Let the saucepan stew for approx. 90 minutes. Take the roulades out of the pot, strain the sauce and, if necessary, refine with salt and pepper. MUSTARD PURRE: 🍴Make a puree from the cooked potatoes, milk, butter and cream and season with salt and nutmeg. Finally stir in the coarse mustard. CHAMPIGNONS: 🍴Clean the mushrooms and put them in a pan with a little stewed gravy and butter and season with salt and pepper. ARANING ON THE PLATE: 🍴Pull the mustard puree sideways on the plate. Starting my week with a burst of flavor and Monday motivation👩‍🍳🌞🍳 This Turkish Poached Egg breakfast (Çılbır) is my go-to – simple, delicious, and the perfect kickstart for the day. So here is my - #olgasmooth - recipe: Ingredients: •3 eggs •200 g Turkish yogurt •5 g dill •1 clove garlic •30 g unsalted butter •5 g chili flakes •30 ml vinegar •chili flakes •flaky sea salt (for garnish) •sourdough bread (for serving) 🍴 Finely chop dill. Add yogurt to a bowl. Peel and grate garlic into the yogurt. Add salt to the yogurt, mix well, and set aside. 🍴 In a small pan, brown butter over medium heat. Turn off the heat, add chili flakes, stir, and set aside. 🍴 Fill a wide pot with water, add vinegar and bring to a boil. I always learn something new when I visit my son, like the reverse-seared steak technique! Have you tried it yet? Delving into a bowl of homemade borscht with pampuschki, following my grandma's cherished recipe. The aroma and flavors take me back to cherished memories. A taste of love and tradition in every bite🇺🇦❤️ Here is my - #olgasmooth #familyrecipe: Ingredients: • 500 g soup meat (beef or veal) • 1 kg soup bones • 3 liters of water • small pieces of chili pepper • 2 onions • 4 dried bay leaves • 4-5 large, waxy potatoes • 250 g pointed cabbage • 4-5 medium beetroot • 2-3 carrots • 3-4 tablespoons of tomato paste • sour cream or crème fraîche • Salt and pepper • 0.5 bunch of chopped dill • 0.5 bunch of chopped parsley • 1-2 cloves of garlic Instructions: 🍴Rinse the meat and bones under running water and pat it dry with kitchen paper. 🍴Put the meat, bones and water in a large pot, bring it to a boil, and let it simmer for about 5 min. Skim off the foam that forms. 🍴Add one onion that has been blackened in a pan and peppercorns and let it simmer on low heat for about 1-1.5 hours. After about 45 min of cooking time, add 1 heaped teaspoon of salt. Skim off the foam that forms regularly. 🍴Peel and cut the potatoes into bite-sized pieces. 🍴Remove the outer leaves from the cabbage, wash it, and cut it into thin strips. Peel and roughly grate the beets and clean and grate the carrots. 🍴Peel the second onion and garlic and finely chop them. 🍴Remove the boiled onion and meat from the pot, add more water if necessary, and add the potatoes and carrots. 🍴Heat oil and butter in a pan and sauté the onion pieces until translucent. 🍴Add the grated beets and fry in the pan for about 5 minutes. Then add the tomato paste and simmer for 10 min. 🍴When the potatoes are done, add the cabbage. 🍴In the meantime, cut the meat into bite-sized pieces and add it to the pot together with the sautéed vegetables, garlic, parsley, and dill, and let it simmer for another 10 min. 🍴Season the Borscht with salt and pepper to taste, and serve it with a dollop of sour cream or crème fraîche and some dill on top. Instructions: 🍴Prepare the filling: Heat olive oil in a pan. Cook bacon till crispy. Sauté shallots & garlic till translucent. Add mushrooms, cook till browned. Heat vegetable oil in a pan over medium heat until it reaches 180°C. 🍴Working with a few pieces of rice paper at a time, carefully place them in the hot oil and fry for about 2 sec until crispy. Remove the crispy pieces using tongs and transfer them to a paper towel-lined plate to drain. Repeat with the remaining rice paper. 🍴 In a small saucepan over medium-low heat, melt the butter. Add the sesame seeds and minced garlic, sautéing until softened and fragrant (about 2 minutes), but not crispy. 🍴 Remove the saucepan from heat and let the mixture cool completely. Little did we know, when my son and I cooked this dish together for the first time, that it would become my husband's favorite! On this special day of Father's Day and Ascension Day, I wanted to show my appreciation to him by preparing Cod al sugo mediterraneo e polpette di patate, a delightful combination of succulent cod fish, a tantalizing Mediterranean sauce, and crispy potato balls. It's a heartfelt gesture to celebrate the bond between father and son and the joy they bring to our lives! 🐟🍅🥔 Cod al sugo mediterraneo e polpette di patate - a la #olgasmooth: •2 cod fillets approx 250g each •1 glass of Sugo Mediterraneo make it yourself with: 1 red onion, 2 tbsp olives without seeds, 1 tbsp capers and lots of tomatoes cooked •3 potatoes •olive oil •butter •flour and semola •salt and pepper to season •basil to garnish 🍴Cut the skin sideways and let the fish rest a little at room temperature. Heat your oven to 200 degrees with top heat. 🍴 In the meantime you boil your potatoes until they are soft, let them cool down briefly and press them through a potato press or mash them with a masher. Salt and pepper the mixture and roll it into small balls. 🍴Then turn this in semola and set it aside until it is fried in olive oil and butter. 🍴Not let’s make the Sugo: This Mediterranean sauce is made from a finely chopped red onion, about 2 tablespoons of green or black olives, about 1 tablespoon of capers, 250ml of passata (or fresh tomatoes - 500gr) salt, pepper and a little ground chili. While your sauce is simmering - for about 30 min, it is time to place your fish skin-side in flour. 🍴Heat some butter and 2 tablespoons of olive oil in a pan. Fry the fish skin side for about 2 minutes. Then put it in a baking dish with the skin at the bottom & put some olive oil on top and put it in the oven. Let it stay there for about 8 minutes. That varies depending on the thickness of the pieces. 🍴In the meantime, bake your potato balls in the same pan with a little olive oil. 🍴Put the sauce in your plate first and then the fish in the middle. So, on my son's - @i.am.ivg - recommendation, I decided to cook these mussels Chinese-style. The result? These Chilli and Garlic Steamed Mussels are an explosion of flavors in every bite! With perfectly cooked mussels, fragrant garlic, ginger and chili, and a deliciously rich sauce, this dish is a must-try. So why not give this recipe a go and enjoy the last days of the season with a bang? Trust me, your taste buds won't be disappointed!👩‍🍳 Here is my - #olgasmooth - favorite recipe: Ingredients: •1 kg fresh mussels •2 garlic cloves •a thumb-size piece of ginger •2 fresh red chillies •a small handful of fresh coriander sprigs •1 tablespoon vegetable oil For the sause: •1 teaspoon chilli bean sauce •4 tablespoons Shaoxing rice wine •4 tablespoons water •1 tablespoon light soy sauce •½ teaspoon dark soy sauce Instructions: 🍴Sort through the mussels, discarding any that don’t close when tapped gently. Wash the mussels thoroughly by running them under cold water and rinsing them 3 or 4 times, then place the mussels in a mixing bowl. 🍴Finely chop the garlic, ginger and chillies. Mix the sauce ingredients together in a small bowl. 🍴Heat the oil in a wok over a medium heat, then add the garlic, chilli and ginger and stir-fry for 20–30 seconds until fragrant. Beetroot Romance - #borscht with #pampuschki 😋 It's the perfect #soup for any weather and an absolute favorite in the #ukraine 🇺🇦 You will love this soup because it is tasty, healthy, and full of vitamins. Here is my - # olgasmooth- recipe: Ingredients: • 500 g soup meat (beef or veal) • 1 kg soup bones • 3 liters of water • small pieces of chili pepper • 2 onions • 4 dried bay leaves • 4-5 large, waxy potatoes • 250 g pointed cabbage • 4-5 medium beetroot • 2-3 carrots • 3-4 tablespoons of tomato paste • sour cream or crème fraîche • Salt and pepper • 0.5 bunch of chopped dill • 0.5 bunch of chopped parsley • 1-2 cloves of garlic Instructions: 🍴Rinse the meat and bones under running water and pat it dry with kitchen paper. 🍴Put the meat, bones and water in a large pot, bring it to a boil, and let it simmer for about 5 min. Skim off the foam that forms. 🍴Add one onion that has been blackened in a pan and peppercorns and let it simmer on low heat for about 1-1.5 hours. After about 45 min of cooking time, add 1 heaped teaspoon of salt. Skim off the foam that forms regularly. 🍴Peel and cut the potatoes into bite-sized pieces. 🍴Remove the outer leaves from the cabbage, wash it, and cut it into thin strips. Peel and roughly grate the beets and clean and grate the carrots. 🍴Peel the second onion and garlic and finely chop them. 🍴Remove the boiled onion and meat from the pot, add more water if necessary, and add the potatoes and carrots. 🍴Heat oil and butter in a pan and sauté the onion pieces until translucent. 🍴Add the grated beets and fry in the pan for about 5 minutes. Yesterday, my sister and I cooked a special meal for our mom to celebrate her and our dad's 57th wedding anniversary. Lasagna has always been her favorite dish, and we wanted to bring comfort and joy to her table during this difficult time. Six days before their anniversary, our dad passed away, but we know he was with us in spirit as we cooked and shared a meal together. This #lasagna represents love, memories, and the bond we will always have as a #family. 💛 My - #olgasmooth - recipe: Ingredients: •0,5 kg ground beef or mixed ground meat •1 onion, chopped •2 cloves of garlic, minced •1 cup of red wine •1 can of crushed tomatoes •2 tsp of dried basil •1 tsp of dried oregano •Salt and pepper to taste •1 package of lasagna noodles •3 tsp of butter •3 tsp of flour •3 cups of milk •200 gr of grated Parmesan cheese •200 gr of mixed shredded cheese (such as mozzarella, provolone or cheddar) 🍴Preheat your oven to 190°C 🍴In a large skillet, cook the ground over medium heat until browned. Add the onion and garlic, and continue to cook until the onion is soft and translucent. 🍴Add the crushed tomatoes, basil, oregano, salt, and pepper. Bring the mixture to a simmer and then reduce the heat to low. Let it cook for 10 min. Stir in the red wine and let it cook for 2-3 min. 🍴In a separate saucepan, make the bechamel sauce by melting the butter over medium heat. Whisk in the flour until smooth and let cook for 1-2 min. Featuring plump and juicy mussels, sweet corn, and a flavorful cider broth, this meal is sure to impress. Not only is it delicious, but it's also a great way to introduce friends and family to the wonderful world of mussels. Here is our - #olgasmoothandson - recipe: INGREDIENTS: •1kg mussels •100g smoked cooking chorizo, crumbled •3 tbsp olive oil •2 corns on the cob •200g potatoes, thinly sliced •½ red onion, thinly sliced •3 garlic cloves, lightly bashed •1 celery stick, trimmed and thinly sliced on an angle •⅛ tsp cayenne pepper •¼ tsp brown sugar •½ tsp fennel seeds •½ tsp dried oregano •1 tsp paprika •Salt •200 ml dry cider •2 lemons – 1 juiced, the other cut into 4 wedges •25g unsalted butter •20g coriander leaves, chopped Instruction: 🍴Put the chorizo and oil in a large saucepan for which you have a lid and set it over a medium-high heat. Cook, stirring often, for 10 min, until crisp, then use a slotted spoon to transfer the chorizo to a bowl, leaving as much oil as possible behind in the pan. 🍴Meanwhile, using a large, sharp knife, cut each corn cob first in half widthways and then in half lengthways. Cut each quarter in half lengthways, so you now have 16 “ribs”. If need be, use a rolling pin to force the knife through the corn. 🍴Put the corn, potatoes, onion, garlic, celery, spices and a quarter-teaspoon of salt in the hot chorizo oil and cook, still on a medium-high heat, for five minutes, stirring frequently to stop anything catching. Turn up the heat to high, pour in 150ml cider and cook for 3 min, until the liquid has almost evaporated. 🍴Add the mussels, the remaining cider and a half-teaspoon of salt, stir and cover the pan. Leave the mussels to cook for 8 min, shaking the pan occasionally, until they have all opened; discard any that do not. Lift off the lid, turn off the heat and stir in the lemon juice, butter and half the coriander. 🍴Tip everything out on to a large platter, scatter the crisp chorizo and remaining coriander on top, and serve with the lemon wedges alongside, for squeezing over.
