Masala Macaroni (AKA muc-roni) . . Growing up, this was a popular dish in our family and our mums would make a huge pot of it on the weekend. . An easy Indo-western fusion dish that we ALL loved and still do! . Let me know if your family make this too? Serves 3-4 Ingredients: 3 cups macaroni 2 tbsp sunflower oil 2 onions, finely diced 2 medium size maris piper potatoes, peeled and small cube 2 inch piece ginger, minced 2-3 green chillis, minced 1 tsp cumin seeds 1/2 tsp coriander powder 1/2 tsp cumin powder 1 tsp salt 1 tsp tumeric 1/2 tsp chilli powder Juice 1/2 lemon Optional: Black pepper Chopped coriander Cheese Method: Cook the macaroni according to packet instructions in salted water and keep al dente. Heat the oil, and add the cumin seeds and onions. Soften the onions for 5-7 mins, but donโt let them colour. Add diced potatoes, salt, tumeric and cover and cook for 7-10 mins. Then add the ginger and chillis, chilli powder, coriander and cumin powder. Combine well and cook until potatoes are tender. Add the lemon juice, the cooked macaroni and combine well. ๐ ๐ท Creamy Pumpkin Spiced Pork Pasta ๐ท ๐ @makeitscotch challenged me to create a pumpkin spiced pork dish using some specially selected pork. This is certainly an autumn favorite of mine now because it turned out absolutely fabulous โ Pumpkin, Spice and Specially Selected Pork go well! (AD) ๐ ๐ท Taking some inspo from @justjessfood โs pumpkin spiced meatball risotto I have created this pasta fiend dish. ๐ As always I visited a local butcher that is part of the scotch butchers club to get my specially selected pork. ๐ By buying specially selected pork I know its is of great quality and the most sustainably sourced in the world. Specially selected pork is also high in essential minerals and vitamins so be sure to check for the blue quality assured labels when in the supermarket or have a look at makeitscotch.co.uk to find your local scotch butcher club member for your quality assured meat. ๐ Ingredients ๐ (3 portions) - 460g Specialty selected pork - 1 brown onion - 3 cloves of garlic - 1 medium pumpkin - Sprig of sage - 2/3 teaspoon cinnamon - 2/3 teaspoon nutmeg - 210g Pasta of your choice (uncooked weight) - 67g Eat lean spread - 40ml Double light cream - Parmesan to taste ๐ฉโ๐ณ Method ๐ฉโ๐ณ 1. Roast your pumpkin / whole or in chunks. 2. Finely shop onion and garlic 3. Pop the pumpkin into blender (make sure it has cooled by this point) and set puree aside. 4. Add pasta to boiling salty water and cook til al dente. 5. Add pork to high heat pan with a little bit of oil and brown off 6. Add garlic, onions, sage, ham stock cube, cinnamon, nutmeg to the dish and give it a big stir. 7. when the pan is fragrant, mix in cream and eat lean spread with some of the pumpkin purรฉe. 8.
