Hereโs a throwback to my child free days and a delicious brunch that Iโm definitely craving right now ๐ Give this post a save if you like it ๐ Ingredients: - 88g sourdough starter - 400g strong bread flour - 250g room temp water - 11g salt Method: 1. Mix together the ingredients 2. Leave to rest for 30 mins in a covered bowl 3. Stretch & fold the dough several times & leave to rest for 30 mins 4. Repeat step 3, 4 more times 5. Cover & leave to proof at room temp overnight 6. In the morning, turn out the dough on to a floured worktop 7. Perform a few sets of stretch & folds 8. Flip over the dough & form a tight ball by rolling it around so it creates surface tension 9. Put the dough in a floured banneton, cover it & let it proof for a few hours/it bounces back when poked 10. Preheat your oven to 230C (fan) & put an ovenproof dish filled with boiling water at the bottom of the oven 11. Turn out the dough on to an ovenproof dish & score your dough if you like 12. Bake at 230C for 20 mins 13. Turn the oven to 200C (fan), remove the dish with the water & bake for 10 mins 14. Turn the oven to 180C (fan) & bake for 10 mins 15. Shrimp Avocado Tostadas Zesty Shrimp and Avocado Tostadas Ingredients: 1 pound shrimp, peeled and deveined 2 tablespoons olive oil 1 tablespoon taco seasoning 8 tostada shells 1 cup refried black beans 2 avocados, peeled, pitted, and sliced 1 cup shredded lettuce 1/2 cup diced tomatoes 1/4 cup chopped red onion 1/4 cup chopped fresh cilantro Juice of 1 lime Salt and pepper, to taste Directions: Cook the shrimp: In a skillet, heat olive oil over medium-high heat. Add the shrimp and taco seasoning, and cook for 2-3 minutes on each side, or until pink and opaque. Remove from heat and set aside. Prepare the tostadas: Spread refried black beans evenly on each tostada shell. Assemble the tostadas: Layer each tostada with a portion of cooked shrimp, avocado slices, shredded lettuce, diced tomatoes, red onion, and chopped fresh cilantro. Honey Garlic Chicken Noodles! ๐ฏ๐ง Ingredients: โญ๏ธ 400g chicken thighs โญ๏ธ 200g sweet potato noodles โญ๏ธ 4 tbsp sriracha โญ๏ธ 7 tbsp honey โญ๏ธ 1 tbsp cornstarch + 1 tbsp water โญ๏ธ 5 tbsp minced garlic โญ๏ธ 7 tbsp soy sauce โญ๏ธ 1 tbsp teriyaki sauce โญ๏ธ 100 ml water Directions: โญ๏ธ Combine everything in crock pot minus the noodles. โญ๏ธ Cook on low for 7 hours. โญ๏ธ Break up chicken when done cooking. โญ๏ธ Boil noodles for 4-5 minutes until soft. โญ๏ธ Drain and add noodles to crock pot. Stir. โญ๏ธ Divide into 4 containers for meal prep. Enjoy! This recipe is so easy and delicious! Not too sweet or spicy! Inspired by @boredoflunch
Here is another really easy working lunch we have on rotation. Smoked mackerel potato salad. Itโs really just an assembly job. A bed of greens (spinach, rocket, watercress - whatever you have/like). Steamed or boiled new potatoes (a great way of using up leftover potatoes). Any smoked fish - I love smoked peppered mackerel, but hot smoked salmon or trout would be just as lovely here. And the dressing which is really just a citrussy riff on tartar sauce: 1 unwaxed lemon (both the zest and all the juice) 1 tbsp extra virgin olive oil 1 tbsp mayonnaise 4-6 cornichons, finely chopped Handful of fresh herbs (parsley, dill, chervil), finely chopped Flaked sea salt and freshly ground black pepper I love having smoked fish in the fridge for quick and easy dishes like this, or as a better (more sustainable) substitute oily fish for my tuna-obsessed son.
