Out and about with VistAbility's Asian Family Resource Center! 🛒🛍️ On Monday, a small group of participants from Richmond's Asian Family Resource Center visited the Pacific East mall to pick up some groceries as a part of the program's weekly community activities. The group also checked out a bakery (a favorite), a restaurant to pick up lunch, and Ranch 99. 🤔❓What is AFRC? Asian Family Resource Center (AFRC) support people with intellectual and developmental disabilities in living lives of their choosing within their communities as independently as possible. Staff are able to communicate to both the person receiving services and family members in their primary language: Cantonese, Mandarin, Taiwanese, Vietnamese, Mien. fluffy bake friday 😗 kabocha chiffon roll cake: - 5 eggs, separated - 40g oil - 35g milk - 40g kabocha puree - 65g cake flour - 1 tsp cinnamon - 55g sugar 1. Preheat the oven to 305F. In a bowl, mix together the oil and cake flour until no dry spots remain. Add in the milk, kabocha puree, cinnamon, and egg yolks and mix until combined 2. In a separate bowl, whip the egg whites medium speed. Once the egg whites become foamy, add the sugar in 3 parts while continuing to whip. Stop once the meringue reaches medium stiff peaks 3. Add 1/3 of the meringue to the egg yolk mixture and mix until fully combined (no white streaks remain). Then pour the egg yolk mixture back into the remaining meringue and gently fold until combined 4. Pour the batter into a 11x11 pan and tap it on the counter to get rid of any excess air bubbles. Bake for 30 minutes and then at 345 for 5 minutes. Let it cool until lightly warm before rolling into a log. taro swirl milk bread filled with a creamy, nutty, and lightly sweetened taro paste that makes this an almost dessert-like loaf 😋 recipe doesn't call for a specific amount of taro paste so you can adjust to personal preference, but if there's any time to be generous it should be now 💜 Ingredients taro paste: - 320g taro - 210g milk - 55g sugar - 5g honey - 4g purple sweet potato powder 1. Steam the taro for 55-60 minutes until you can pierce it with a fork. Blend with the rest of the ingredients until it becomes a paste. Set aside to chill main dough - 1 batch of my tangzhong milk bread recipe, made right before it rests for the first proof (see tangzhong milk bread posts in profile for details) - 4g purple sweet potato powder mixed with 6g water - Taro paste (as needed) 1. Divide the dough into two pieces. To the second piece, knead in the purple sweet potato powder + water mixture until it's fully incorporated and the dough is purple. Set aside both pieces to proof for 40 minutes 2. Roll out each dough piece into a rectangle. On one piece, spread a layer of the taro paste before covering it with the second layer of dough 3. Starting from the middle of the rectangle, cut vertical strips while leaving the top half untouched. Twist each strip 4-5 times before rolling the dough over itself into a log 4. Place the dough into a loaf pan and let it proof for 30-40 minutes until it rises to the rim of the pan 5. Preheat oven to 355F. Bake for 25-30 minutes until golden (if the top browns too quickly, cover the pan with some aluminum foil). adding a spicy and holiday kick to focaccia 🌶 scallion pancake focaccia topped with Chinese garlic chili sauce (剁椒) for the most festive bread 🤤 Ingredients: - 270g warm water - 3g sugar - 3g instant yeast - 1 tsp salt - 300g bread flour - 1/2 tbsp sesame oil - scallions, garlic, 剁椒 (or any chili sauce of your choosing), and sesame oil for toppings 1. Combine the flour, yeast, and sugar. Add in the warm water, sesame oil, and salt. Mix until no dry spots remain, all the liquid is absorbed, and the dough is sticky 2. Cover the bowl and set aside to proof for 30 minutes at room temp. Stretch the dough by pulling up one corner and folding it over itself. Rotate the bowl and do this 3 more items for each corner. Cover and rest for another 30 minutes before repeating this process again. Do this a total of 4 times 3. After the 4th stretch and fold, cover and let the dough proof overnight in the fridge 4. Grease a pan with sesame oil and transfer the dough into the pan to coat the surface. Stretch the dough to fit the pan before covering and letting it proof for another 1-2 hours 5. Preheat the oven to 425F. Drizzle sesame oil on the surface of the dough and make dimples by poking the focaccia several times. Add on the toppings and bake for 25-30 minutes until golden 6. only thing better than a homemade croissant is a twice-baked homemade croissant 🥐 no matter how my croissant trials go, I can always count on using the leftovers to make the most indulgent almond croissants 🤤 I flavored half of this batch with matcha frangipane and the other half with black sesame, and they were l u x u r i o u s. many more trials to come but these are my favorite so far 🩶💚 Ingredients (makes 4): - 4 day-old croissants, cut horizontally - 1/2 cup water mixed with 1 tbsp of sugar and 1 tbsp of vanilla - 1/2 cup almond flour - 3 tbsp sugar - 4 tbsp butter - 1 egg - 1 tbsp matcha for matcha filling, 1.5 tbsp black sesame for black sesame filling - sliced almonds and powdered sugar for garnish 1. Heat the water, sugar, and vanilla over medium heat until it comes to a simmer and the sugar dissolves. Set aside to cool 2. In a bowl, mix together the almond flour and sugar. Beat in the butter until combined before adding in the egg 3. Mix the filling thoroughly before adding in your flavoring. I split the batter in half and added matcha to one and black sesame to the other for 2 flavors 4. Preheat the oven to 350F. Cut open 4 croissants and brush the insides with the sugar syrup. Add 2 tbsp of almond filling to the insides and place the top halves on. Brush another tbsp of almond filling on the top before sprinkling with sliced almonds 5. Bake for 12-15 minutes until the topping is golden. tag yourself I'm the middle one with my eyes closed trying to sleep away this monday 🙃 red bean bun ingredients (makes 8-9): - 220g red bean paste, divided into 6 pieces - 150g all-purpose flour - 75-80g room-temp water - 3g yeast - 5g sugar - 1/2 tbsp sesame oil 1. In a stand mixer add everything except the red bean paste and mix on medium-high speed until the dough becomes smooth 2. Divide the dough into ~40g pieces and roll each out into a rough circle/oval. Place a red bean ball in the middle and wrap the dough around the red bean. Pinch the seams to close 3. Using a bench scraper, draw lines along one side of the dough ball to create humps and mold it into cloud shape 4. Line a steamer with parchment paper and place the buns inside. Cover and let it proof until nearly doubled in size. Remove the buns from the steamer and bring the water to a simmer before placing the buns back on top 5. Steam for 12 minutes until fully cooked. Let the buns sit in the steamer, covered but with the heat turned off, for 5-10 minutes before removing from the heat. combining two of my favorite asian bakery treats into one-- coconut pineapple buns 💛 (no pineapples involved!) setting me loose in an asian bakery is a recipe for disaster because there are just too !! many !! things !! to choose!! from pineapple buns to coconut buns to egg tarts to 100 other items, the self-restraint it takes to not buy everything is unreal 🫠 bringing together the Chinese cocktail and pineapple bun is my attempt at giving myself more flexibility to eat more things in one sitting, enveloping fluffy milk bread with the crunchy cookie crust of the pineapple bun and filling it with the sweet coconut filling of the Chinese cocktail bun 💛 Ingredients (makes 6-7): - 1 serving of my milk bread dough, made until after the first proof-- see my milk bread post for recipe - 50g butter, room temp - 40g sugar - 15g egg - 70g cake flour - 15g milk powder - 1 egg + 1 tbsp milk for egg wash Coconut filling - 90g shredded coconut - 25g milk powder - 30g sugar - 35g egg - 35g butter 1. Mix all the ingredients for the coconut filling and divide into 6 portions. Separate the milk bread dough into 6 pieces and roll out each into a large circle. Wrap the coconut filling with the bread dough and roll each into a ball 2. For the cookie crust, mix together the butter, sugar, egg, cake flour, and milk powder until completely combined. Divide the mixture into 6 pieces and roll out each into a large, thin circle. Chill for 30 minutes 3. Wrap each of the bread balls with the thin cookie crust layer and use a bench scrapper to carve in the checkerboard design. Proof for 30 minutes until the buns have doubled in size 4. Preheat the oven to 355F. Brush the top of each pineapple bun with egg wash and bake for 20-25 minutes until golden. Preheat the oven to 375F and lightly coat 6 ramekins in butter and sugar. 2. In a bowl, beat together the egg yolks and 30g of sugar until well combined. Sift in the flour and fold lightly until just combined 3. In a pot over low heat, melt the butter with the milk and black sesame, and remove it from the heat once everything is combined. Slowly stream the milk mixture into the egg yolk mixture while mixing constantly 4. Return the mixture to the stove and heat until slightly thickened, still mixing constantly. Transfer everything to a heatproof bowl to let it cool 5. Meanwhile, whip the egg whites in a separate bowl. Then pour the egg yolk mixture back into the remaining meringue and gently fold until fully combined 7. Divide the batter across the 6 ramekins and run a knife around the top rim to create a small ring around the center. Bake for 10 minutes before lowering the temperature to 355F and baking for another 5-7 minutes. ⭐️beef barley wrap Ingredients: Jay chou barley wrap ( 大麦若叶卷餅), thinly sliced short rib slices, mini Persian cucumbers, king oyster mushrooms, egg, cilantro, hoisin sauce, bulgogi/ galbi sauce 1. Wash your vegetables 2. Julienne your cucumbers 3. Slice your mushrooms from tip to bottom & score them. 4. Heat up a barley wrap on a pan. 5. Spread an egg on top & flip. & set aside. 6. Add oil to pan & sear your scored mushrooms. Paint a layer of bulgogi sauce on top. & flip to cook thoroughly. Remove when done. 7. Throw all your thinly sliced short rib meat onto pan and pour in some sauce. Cook thoroughly. 8. Assemble!! Place ur wrap down with egg side facing up. Place 2 slices of mushroom. Then your cucumber. Put in your cilantro & add a line of hoisin sauce. Then throw a bunch of meat on top & wrap tightly.

⭐️costco rotisserie chicken noodle soup -all ingredients can be found at costco & ranch 99 Ingredients: 1 costco rotisserie chicken, bok choy, bean sprouts, noodles, corn, carrots, ginger, cilantro 1. In a giant pot, fill your water up to half & boil. 2. Airfry your corn, carrots, & ginger. I didn't airfry/ roast them for too long bc too impatient & hungry for this. 3. Shred your rotisserie chicken and throw the bones and drippings into pot + your airfried ingredients. Put some salt in. 4. In a separate pot, blanch your vegetables & cook your noodles in the same water. 5. Assemble & garnish with cilantro
⭐️Chicken noodle soup (EASY RECIPE) Ingredients: one asian chicken, scallions, salt, ginger, about 2-3 carrots, salt, cilantro, you choy (油菜） 1. Prep your vegetables by cutting and washing. Dry them off after. 2.CLEAN your chicken well with salt & tweezers. Cut off unnecessary fat & the butt & other questionable parts 3. In a large pot, pour in water about a lil over half. Let it boil and dump in your prepared vegetables. If you want it to be more fragrant, I recommend blooming / roasting your ginger & scallions, & mb carrots. I was clearly too lazy to do that. Then dump your chicken in too. 4. In a separate pot, cook your noodles & check constantly to make sure it's not overcooked. Blanch your you choy too. 5.Take chicken out after 20-25 mins and shred your chicken. Keep the bones for making other stock. 6. Assemble and garnish with cilantro Tip: if you have too much leftover soup, I would recommend making congee with it
