The estate in composed of 4 hectares planted only with the local variety โ Melon de Bourgogne, only from massale selection, from the 1950s and 1960s. A blend of 60% Cabernet Sauvignon and 40% Merlot, this rouge is produced organically, with very low yields, deep and profound classic Graves reds with a hint of rust / iodine and dark fruits. The 2018 Graves is surprisingly โfreshโ and lively for a wine of a warm ripe vintage. It does have beautiful floral and spice-box delicate aromatics to go with the blood and deep soul-warming fruit. Third Growth in the Classification of 1855, its vineyard stretches over two Gunzian gravel slopes where the highest point of Saint-Julien thrones on the beautiful estate. In 1983 it was purchased by the ๐๐๐ฉ๐๐ง๐๐ฌ๐ ๐๐ฎ๐ง๐ญ๐จ๐ซ๐ฒ ๐๐ซ๐จ๐ฎ๐ฉ which set about renovating the vineyards and the winery. Welcoming Vinya del Coll for the first time in Hong Kong - Located in Sant Sadurnรญ dโAnoia โ Penedรฉs, on the Mediterranean Spanish coastline, this is where @raventospepe and @vincent_pastorello decided to unleash this new project. This collaboration was born in 2021 on the Vinya del Coll parcel - a plot of only 1.6 hectare of calcareous-clay soils, specially chosen to produce Xarel Lo and planted in 1965, following biodynamic viticulture and only worked with the help of two horses. Pepe Raventรฒs is from one of the oldest winemaking families in Spain, but also very passionate and not afraid of taking risks โ in 2012 he left the appellation Cava D.O (created by his own grandfather!) and obtained the right to create a new denomination, Conca del Riu Anoia D.O, where he is currently the only one producing under this particular appellation. Welcoming Les Aussigouins for the first time in Hong Kong - This micro-domaine of 0.70 hectare in Anjou was created by Dominique Dufour in 2014 when he retired from his engineer career in aeronautics. He came back to his roots in the Loire Valley, where he is currently biodynamically farming this small vineyard like he would do โin his gardenโ according to Dominique. The Aussigouins parcel is located nearby the famous one Les Noรซls de Montbenaults of Richard Leroy, where the Chenin Blanc is thriving on schist and split soils. Dominique is renting the other half of the parcel to the well known Japanese couple Mai and Kenji Hodgson. Working on very small yields to value quality over quantity, following natural principles and delicate fermentation. ๐ข [New arrival] ๐๐จ๐ฆ๐๐ข๐ง๐ ๐๐๐ซ๐จ๐ง ๐ซ๐ท @domaine_garon is a family-run winery based in the heart of the Cรดte-Rรดtie. Brothers Kรฉvin and Fabien are at the helm. Although they are not yet certified organic, they work in that vein, and almost all the work in the vineyard is done by hand or by horse. Gentle extractions, long macerations and ageing in a mix of new and older French oak draw out the rich complexity of their wines. The familyโs name is one of the oldest in the region, dating back to 1475, but it wasnโt until 1982 that the Garon family started cultivating the neglected vines growing on their land. Today, Kรฉvin and Fabien farm around seven hectares. Their prime vineyards are in the Cรดte-Rรดtie, with three top Syrah cuvรฉes coming from the granite soils of the Cรดte Blonde and one from the white schist soils of the Cรดte Brune, embodying the elegance and structure of the Northern Rhรดne.

Then, gradually, he purchased a few plots in Pommard, Beaune and Hautes Cรดtes de Beaune. All in all, he owned 6 hectares of vineyard. Very little was bottled, most was sold in bulk. In 2009 Bernardโs grandson, Arnaud, joined the domaine and has been expanding its sales activity ever since. He set up his own wine merchant business, โMaison Arnaud Germainโ, to expand the domaineโs range. Its wine list now includes ๐๐๐ซ๐ฌ๐๐ฎ๐ฅ๐ญ, ๐๐จ๐ฅ๐ง๐๐ฒ, ๐๐ก๐๐ฆ๐๐จ๐ฅ๐ฅ๐-๐๐ฎ๐ฌ๐ข๐ ๐ง๐ฒ ๐๐ง๐ ๐๐ฎ๐ฅ๐ข๐ ๐ง๐ฒ-๐๐จ๐ง๐ญ๐ซ๐๐๐ก๐๐ญ. ๐ท ๐๐๐๐ฎ๐ง๐ ๐๐๐ซ ๐๐ซ๐ฎ Only 3600 bottles are produced each year, this pleasant, surprising wine has an intense, magnificent colour. The soft nose is delicate and reveals subtle aromas of blackcurrant, blackberry and red fruits, humus and undergrowth. Young, this wine offers your palate the crisp charm of fresh grapes. With ageing it then blossoms to develop notes truffle, leather and spices, affirming its robust structure. Beaune wines show great aromatic power and fleshy texture, which make them a perfect match for musky and very firm meats such as game animals, roast or braised. Welcoming @domainebonnardot_bourgogne in Hong Kong ! The Bonnardot domain was founded in 1981 in Bonnencontre by the mother รlisabeth Bonnardot, coming from a strong Burgundian history with a family making wine since 1470. She already had a modern view on viticulture as she studied oenology and did an apprenticeship with organic wine master Jules Chauvet. ย Her two sons Ludovic and Emilien took over the vineyards in 2005. They shared the love for organic viticulture and continued the trend that รlisabeth had started - today, the domain is entirely farmed in biodynamic, while the two brothers are working on 15 hectares, 18 different appellations and more than 50 different parcels mostly in Santenay and Hautes Cรดtes de Beaune area, with the cellar located in the middle of the vineyards of Saint Aubin.
