샤를 노엘라 뉘상조르주 2017 Charles Noëllat Nuits-Saint-Georges 2017 Nuits-Saint-Georges, Côte de Nuits, Bourgogne, France 피노누아 100% 알코올 12.5% 수입사 금양인터내셔날 구입처 이마트 ('24.4월, 가격 6만원) ⏳️60분 디캔팅 👀숙성의 가넷빛이 주변부에 자리잡았고, 어두운 컬러이지만 뉘상조르주 치고는 맑게 느껴지는 루비컬러 👃검은 과실 느낌의 자두나 체리타르트향이 메인이고, 농익은 딸기 뉘앙스 살짝, 고사리, 가죽, 허브 👅실키한 뉘앙스의 타닌, 산도는 M, 바디감은 M-, 팔렛에서는 노즈에서보다 숙성뉘앙스가 강하게 느껴짐 💬부르고뉴 피노누아에서는 드문 경험인데 오픈 직후부터 황화수소(H2S)의 냄새가 꽤 납니다. 황화수소 향은 주로 계란 썪은 냄새나 구린내로 비유되죠. 와인을 못 마실 정도는 아닌데, 그래도 잔을 입에 가져갈 떄마다 거슬리는 정도입니다. 💬30분 병브리딩 후 마시기 시작했었는데, 이 냄새를 날리고자 결국 30분 디캔팅 하였습니다. 같은 와인을 드실 분들은 처음에 오픈 해보시고 황화수소 뉘앙스가 느껴지시면, 처음부터 1시간 디캔팅 후 드시는걸 추천 드립니다. 💬디캔팅 후 칠링을 위해 다시 병입하였는데, 디캔터를 보니 숙성에 따른 침전물이 제법 있습니다. 디캔팅하길 잘했네요. 💬뉘 상 조르주 빌라쥬급 와인이지만, 뉘 상 조르주의 전형적인 특징을 보여준다고 말하긴 어려울 것 같습니다. 그래도 어느 정도 숙성된 불곤 올빈 캐릭터가 적당히 잘 느껴지고, 다양한 향의 레이어가 있는 점 감안하면 가성비가 괜찮은 편일 것 같습니다. 💬코르크 뽑은 후 3시간 정도가 지나야 본연의 모습을 보여주므로, 디캔팅 후 재병입, 칠링하시어 천천히 즐기시는 것을 추천 드립니다. 비비노 3.8/5 내평가 오픈 직후 3.0/5, 3시간 후 4.0/5

These might not look the best, but they are bomb. Eggplant Rollatini stuffed with ricotta. When I meal prepped I sliced one eggplant longways about 1/4 inch thick. Laid them on a paper towel and sprinkled them with salt. After they sit for 20 minutes, dab with a paper towel. Toss in olive oil, spread on a baking sheet and roast for 20 minutes at 400 degrees. Let cool and store in the fridge. The next day I made the filling (but it could all be done the same day). Mix together; •1 cup Ricotta •1 clove chopped garlic •1/4 cup grated Parmesan •1/2 tsp dried oregano •1/2 tsp dried basil •1/2 tsp lemon zest •1/4 tsp red pepper flakes •salt and ground black pepper In a foil lined and sprayed 9x13 pan add 1 1/2 cups marinara sauce. Lay out the eggplant slices on a cutting board. Scoop 1 heaping tbsp of filling onto one end of each piece of eggplant, add more until the filling is gone. Then roll up each piece of eggplant and place them seam side down in the sauce. Cover with foil and bake at 425 degrees for 20 minutes. Make noodles while it’s baking. Serve over noodles, sprinkled with pine nuts. Pinot Noir et gel printanier 2024. Après deux légères grêles à la mi-avril, une nuit de gel ces derniers jours ... A priori les bourgeons sur le haut de cette parcelle des coteaux de la vallée de la Senne sont passés a travers le gel. C'est un peu touché sur certaines feuilles plus développées mais il y aussi une grosse attaque d'érinose qui perturbe la lecture. La plupart des pieds ont été récupérés après une ou deux saisons d'abandon, deplantés et replantés il y a 3 semaines, puis les vieux sarments ont été coupés très courts, ce qui a un peu perturbé les bourgeons et a, heureusement, ralenti leur croissance. According to California Certified Sustainable, 38% of California winegrape acres that they monitor are sustainable, and 188 Certified Wineries produce 202 million cases of wine (80% of California wine). That is remarkable and commendable. I have two bottles of Certified #Sustainable #PinotNoir wines from California: Cambria Estate Winery Julia's Vineyard Pinot Noir 2022 and @lacremavineyard Monterey Pinot Noir 2022. Let me tell you about my first sips. La Crema Monterey Pinot Noir 2022 Appearance: A medium-intensity, consistent translucent garnet colour from the rim to the core. Nose: Quite aromatic. Medium-plus intensity aromas of smoky toasty raspberries, red plums, plus red fruit and sweet spices. Palate: This wine is dry, but has a fruity sweetness. Red fruit, raspberries, and red cherries. Light integrated smoky toastiness. It is smooth, soft and round. Almost mouth-filling. Medium acidity and light tannins. There is also a hint of violets and some candied red cherries with air. Finish: Medium-plus length finishing with light tannins. Smoky, tasty red fruit, a touch of candied cherries and some pepperiness on the finish. Cambria Estate Winery Julia's Vineyard Pinot Noir 2022 Appearance: A clear, slightly deeper translucent garnet colour, compared to the La Crema Pinot Noir. Nose: Medium intensity, darker aromas of ripe red fruit, red cherries, dried herbs, light oak toastiness, and sweet spices. Palate: Like the La Crema, this wine is dry but has fruity sweetness. You get sweet cherries and darker, riper red fruit flavours, plus sweet spices. This wine has a medium-plus body and smooth on the palate, but does have a medium tannic backbone for some structure. I also pick up dried herbs and a touch of oak on the palate. This wine has some nice acidic tension. Finish: The flavour fades quickly but then lingers for a while. It finishes with flavours of red fruit, sweet cherries, and toast, plus a touch of pepperiness. Medium tannins on the finish.
