Baking pans. Just like shoes, you should invest in the best. A bad pan can make you think you are a bad baker, but perhaps you merely have the wrong tools. An 8" x 3" round size is the what our instructions call for to make the perfect cake. We recommend aluminum or stainless steel, but NEVER non-stick. A few notes if baking with a non-stick pan until you upgrade... Lining with unbleached parchment paper is a must - no one wants repulsive chemicals in their cake. But there is also rise factor. A cake is not reaching its full height potential without something to grip onto (the non-stick coating is too smooth for the batter to rise to its greatest heights, which makes for the dreamy texture. Please never crinkle the paper which makes for a juvenile looking cake. Take the time cutting the paper to line the bottom and sides properly for an elegant, dinner party-worthy cake. A nearly perfect meal @lago.bellagio in the @bellagio. Oysters are good when they come with the usual accompaniment, but when a chef is creative - in this case with tangerine and Serrano peppers - they can be magical. Perfectly balanced dish. Lamb can be gamy but when cultivated from the best and prepared perfectly it transcends. Every bite an unctuous, soothing adventure. The only disappointment was the flan, which had a lovely vanilla Chantilly and citrus tuille , but the custard itself was plain. Maybe more citrus, but probably just more salt would help it pop. I picked a red wine that was a little too dry, should have left that one up to the very talented bar staff. I have returned home from Sandals Royal Bahamian and as I look thru my photos I have so many great ones. It helps when the water is as beautiful as it was. I wanted to spend some time talking about food at all inclusive resorts. Food tastes are very subjective and anyone who knows me, knows that I am a food (and a wine) snob. I love creative, delicious food. I view a meal as an experience and food quality is an important thing for me on vacation. Having said all that, know that when I go to an all inclusive I have to bring my expectations down, after all they are cooking for hundreds of people. Sandals had some great food, some good food, and some just okay food. I will tell you that I had probably some of the best steak I have ever had an all inclusive. We had a delicious beef tenderloin at the French restaurant that could have been cooked at many fine dining restaurants. We also had a good steak at the steak restaurant. While I don't know for sure, I suspect they may get their beef from the US since they are so close to us ( did I mention our flight time from Fort Lauderdale was 35 mins long). Beef, specifically steak, was the main thing I thought was better in the Bahamas then in Mexico. Honestly, be wary of any establishment charging more than $40 a plate that puts out salt and pepper. A relatively uninspired menu (standard entrees; the same three salads as every other restaurant; Items most hotels have on their jacked up menus) led me to scallops. The dish got better as it went on, presumably because the dish got more integrated and the flavors of the sauces and peanuts combined with the very tasteless scallop (decently cooked - maybe a little over done). So, it’s a presentation issue?
