How better to celebrate the end of Passover than with some authentic Austrian food. The pierogis were almost as good as those from Holocaust survivor Berta Vaisman @gojuanitago these were made with potato in the dough, gnocchi-like. The strudel had the perfect sweetness and the whipped cream was similar to that of survivor Inge auerbacher. And that bread, well it had the perfect crust and soft center. MATZA BREI 🤌🏼 La bonne découverte de ma semaine 🙃💛 Si vous ne connaissez pas cette recette, c’est globalement un pain perdu à partir de pain azyme . Ça peut sembler bizarre mais, croyez-moi, c’est incroyable. C’est la quintessence du petit déjeuner de Pessa’h et sans doute la recette de petit déjeuner la plus sous estimée au monde. Propos de Marc Grossman « Le secret, comme me l’a enseigné ma grand-mère, c’est de faire tremper le pain azyme dans l’eau avant de le tremper dans la préparation à l’œuf ». Sinon, on se retrouve avec une omelette au pain azyme, et ce n’est pas le but. . LA PRÉPARATION ❤️‍🔥 Casser les feuilles de pain azyme en morceaux de la taille d’une bouchée et tremper dans l’eau pendant 2 minutes, jusqu’à ce qu’il soit tendre mais pas réduit en bouillie. Egoutter (sans presser). Fouetter ensemble les œufs, le sel et la cannelle (option). Plonger les morceaux de pain azyme pendant 5 bonnes minutes, jusqu’à ce qu’ils soient bien imbibés. . LA CUISSON 🧈 Dans une poêle, chauffer le beurre à feu moyen-vif et faire revenir les morceaux de pain azyme pendant quelques minutes, en les remuant pour les casser, jusqu’à ce qu’ils soient cuits et bien grillés. Ils doivent être un peu croustillants. Servir avec de la confiture, du miel, du sirop d’érable ou ce qui vous fait plaisir. Vegan Matzah ball soup 🤩 As an Ashkenazi Jew ( a Jewish person whose family spent a long time after the exhile in Europe), matza ball soup (also called kneidlach ) is a traditional dish eaten especially on Passover. Passover is a holiday acknowledging how the Israelites were brought out from slavery in Egypt and led to freedom. Since they needed to leave quickly, there was no time to let the bread rise. Thus, Jews are commanded to acknowledge this by abstaining from eating risen bread for 7 days (in Israel, 8 days abroad). I have been vegan now for almost 10 years - and until yesterday I had not made or eaten vegan matza balls 😱 but now that has been solved. I initially made balls using a different recipe but they did not stay together properly - perhaps because I made several errors in the process (this was my first try making any matzah ball, I never made them myself even before I was vegan). I decided to do more research and try again. This time I read a blog written by someone who tried 4 recipes and explained the best one she found - I used the one she recommended as seen in the picture above. It’s great to figure out ways to keep my Jewish religious and ethnic Ashkenazi traditions - YET also ensure that I am living a plant based and vegan lifestyle. The holiday Passover reminds us of how the Israelites left Egypt and therefore left slavery. The animal agriculture industry keeps animals in cruel conditions and are treated as humans’ slaves. Hey all! Sorry for the hiatus, I’ve been a bit sick but I haven’t forgotten my loyal followers! Unfortunately my ashki stomach didn’t agree with the shtetl diet :/ my doctors said I was “starving myself” but that doesn’t make any sense because then how did the people in the shtetl survive, hmm? Clearly they don’t understand how sensitive an ashki stomach can be 🤭 that’s antisemitism! Light and savoury onion platzels/pletzels from Moishe’s. They might not have conquered the world to quite the extent of the bagel but their lighter focaccia-like texture and buttery flavour are a delight. Despite their clear Ashkenazi roots I decided to eschew the obvious cream cheese and lox approach for the weekend’s brekkie. Instead, I looked to Japan for inspiration - obviously! A somewhat inexpertly fashioned Tamagayoki omelette seasoned with sesame oil and a little soy lent a welcome softness to proceedings and all that was needed was a garnish of fresh spring onion, cherry tomato, coriander leaf and black sesame seeds. Simple but surprisingly tasty. Small break from commissions: a fond memory. August 2015, I was minding my own business at Café Puzzle, my favourite spot in Haifa, when 2 Barbies started antagonizing me. Dafina ✡️🪬: cooked by @queen_of_kindness_7 Ingrédients: 300g de pois chiches, 250g de blé, deux cuillères à soupe de: paprika, curcuma, marakof, 1 tête d’ail entière, 1kg de joie de jarret de bœuf, (1 pied de bœuf et 1 os à moelle facultatif), 1 oignon, 1 dose de safran, 1 cuillère à soupe de miel ou de sirop de dattes, 250g de riz basmati, huile d’olive, sel et poivre. Préparation: dans un saladier, mélangez le blé avec du sel, du poivre, 1 cuillère de paprika, de curcuma, de marakof et un filet d’huile. Dans une grande marmite, mettez les chiches, la tête d’ail entière, la viande en morceaux,l’os à moelle l’oignon épluché et finement coupé. Faites dorer à feu vif tous ces ingrédients en même temps avec 1 petit verre d’huile. Ajoutez 1 cuillerée à café de paprika, 1 cuillerée à café de curcuma, 1 cuillerée à café de marakof, le Spigol et du sel. Ajoutez le sirop de dattes, puis le riz. Placez le blé avec les épices dans des gazes superposées et posez le tout par-dessus les autres ingré dients. Mouillez à mi-hauteur du riz et du blé. Portez à ébullition et laissez cuire à feu moyen pendant 15 minutes environ. Confire toute la nuit à feu Tradition- Baissez le feu, couvrez la marmite et laissez très doux. Notre arrêt sur image du jour nous emmène à la découverte d’une pâtisserie juive ashkénaze qui prend ses racines dans la Perse antique. Connaissez-vous les Hamantaschen où oreilles d’Aman? Ces sablés fourrés accompagnent chaque année la fête de Pourim, relatée dans le livre biblique d’Esther, et qui commémore la délivrance des Juifs de Perse, alors menacés d’un pogrome. I've made deli roll three times already. It's super easy to make, and I make a mustard version. It has puff pastry, spicy brown mustard, brown sugar, smoked turkey and pastrami. Rugelach - there's no proper English or German name. It's basically a sweet pastry made of wheat, creamcheese, nuts, and/or chocolate, sometimes cinnamon, sometimes fruit. Older versions are made with yeast and resemble the French croissant. All rugelach are shaped like a crescent or a horn of a ram, sheep, or goat. The yiddish meaning of the word is literally "little horn." Why is it worth mentioning? Because I see that jewish food is still very popular in mainstream society ... and I'm sure even radical haters of "zionists," Israel and the jewish people, are enjoying it from time to time. Some are not aware that bagels, doughnuts, hummus (okay, dear Arabs, we can discuss this), "braided white yeast bread" (challah), and many other culinary specialities descent from jewish origins. Maybe before you hate someone, try to see what actually connects you. Do you perhaps have something in common and love the same things? Channukah Day 8: cycling back to the latkes I tried making some sweet potato latkes this time. I added a little onion too to make them specifically savoury latkes and then topped them with more salt beef. This wasn't your thinly sliced salt beef, this was a proper chunk (courtesy of a trip to Waitrose because I was up at 5.30am for work yesterday morning so there was no way I was making salt beef when I finally got home). I personally don't like pickles at all so the latke in the picture was donated to my mum, who does like them. Of course, the mustard was not skimped on and luckily, it has the vinegar to help cut through the richness of the beef and the latke. I did want to make jalebi this year to celebrate Channukah, but I just didn't have the time to do it around work so those will have to wait until next year!

Making my Chanukah latkes each year brings me closer to my wonderful Bubie, Sheila Bacon (yes - her real name ☺️) She set up a salt beef and latke bar in Sydney soon after her arrival from London on her #tenpoundpoms ticket. I can’t help but think of her at ‘The Nosh Bar’ everytime the house is filled with the smell of fried potatoes and onions!!! Both my mum and bubie loved to cook - cooking delicious food to show people they are loved is how I grew up. This is a gift they have passed to me that I am forever grateful for. I’ve always longed for two things …my bubies’s latke recipe (the authentic Nosh Bar one) and just one photo of her at her cafe. Maybe one day I’ll discover one… for now I’ll just have to imagine. It’s Channukah, and that means it’s time for the latkes. These are potato pancakes fried up and are a traditional ashkenazi Jewish food during Channukah. I’m also taking the opportunity to show off the menorah that I made because I’m really proud of it – my dad made the little drip trays because candles burning down into wood is a recipe for disaster… This year I have a series of Channukah posts celebrating foods from different Jewish groups around the world. I’m starting with the Ashkenazi Jews as this is probably what most people (who I know at least) are most familiar with. Ashkenazi Jews are generally the group who are depicted most often on TV and in film. We have our more modern roots in north/eastern Europe which is where the ashkenazim ended up when our ancestors were fleeing persecution in the middle ages. Yiddish (which you may have heard of...) was the language of the Ashkenazim. As a group who were based in Europe for a period of time, Ashkenazi cuisine evolved to include the foods that were available. This means a lot grains, root veg and fruits that grow in a cooler climate and generally, foods that were cheap as the Jewish populations were not well off and often subjected to antisemitism in the laws of the land that made it difficult for them to be involved with the local economy. I can’t remember a channukah where we didn’t have latkes at some point. We tend to grate them by hand rather than using a food processor (they taste better that way), soak the shreds in water to get as much starch out as possible, squeeze out the liquid, and then mix the shredded potato with egg, salt and pepper before frying them up. They can be eaten with sugar (yum), cheese (also yum), applesauce (not my thing but generally quite popular), or more exotic toppings like above where I have topped the latkes with mustard and salt beef.

LATKES AU SAFRAN Les latkes, un des classique de Hannouka ! Dans cette recette, le twist réside dans l’ajout de safran ! Le 1er secret : il faut enlever le plus d’eau possible des légumes ! Les 2ème secret : il faut récupérer l’amidon ! Les ingrédients, et le pas à pas de la recette sont en story permanente ! (Par contre pour le sel, 1 tsp c’est largement suffisant). I made rye bread with caraway seeds. I made sure to grind the caraway seeds using a mortar and pestle beforehand. It's nice and soft on the inside, but the crust is really hard and...crusty. I needed to make rye bread because I love caraway seeds. They taste and smell so cozy. I think I'll do a breakfast for supper tonight and make eggs to eat alongside the rye bread.
