On weekends, I like to have something different than what we normally have during the week. Usually that means pancakes! I absolutely love making pancakes in my cast iron pan. Even though I have an electric coil stove, the cast iron heats up well, retains heat, and is my secret to picture perfect pancakes. Each flapjack is cooked with a pale ring encircling the uniform tan center. It’s finally beginning to feel like winter in Michigan. We just had a snowstorm roll through, which meant planning activities to keep busy indoors. We spent our weekend watching movies with friends, eating daal chawal, and drinking Kashmiri chai. I had been meaning to try out @thida.bevington s BlackBerry Brownies for the longest time ever, and finally managed to get together all the ingredients(for some reason, every where I went, they were out of white chocolate!!). I wasn’t able to achieve the glorious fuschia pink color of the ganache on her brownies, but the expert herself confirmed that the color may vary because of the blackberries as well. I finished these off with white pearl sprinkles, and rather like how they remind me of a clear night sky. These are incredibly easy to make, and taste absolutely delicious! One of my absolute favorite desserts is Shahi Tukray. Literally translating to “Royal Pieces” in English, this indulgent bread pudding is made with thick French Brioche bread, soaked in heavy cream and a sweet amber colored cardamom- saffron syrup. I experimented a lot until I stumbled across Shayma’s recipe from @spicespoon. I must say I haven’t looked back since, and whenever I make these I get raving reviews! The only modifications I make are - using Trader Joe’s French Brioche Bread - reducing the saffron to a tsp - decorating with “chaandi ka warq”(aka silver leaf). If I haven’t planned ahead for the week by cooking over the weekend, I usually like to make something super quick. Like these shrimp tacos. They are fantastic, very easy, and can feed a crowd. Would probably be a great idea if you plan to host.. and design an “assemble yourself taco” station! Method: Season shrimps, sliced bell peppers, red onions in butter, s&p, garlic, cumin and chili powder. Toss on to sheet pan lined with aluminum foil, and bake at 350 F for 6-8 minutes or until shrimp turn pink. In the meanwhile, heat a stack of tortillas wrapped in aluminum foil at 350 F for 15-20 minutes. Assemble tacos with shrimps, guacamole, salsa, sour cream, and fresh cilantro. For me, potent memories of my childhood revolve around food. These fried "pappar" were one of them. When i was a kid, we would visit Lahore during the monsoons, during which our evenings were spent mostly quarreling & playing with cousins, interrupted by snacks lovingly prepared by my nani, khala & mami. We would carefully slip the ring shaped pappars onto each finger, then nibble away at them, flaunting them as jewellery adorning our hands. Growing up in Saudi Arabia, eating these was a weekend ritual. We would often shop for our groceries at a store called Panda. The first stop would be at the bakery, to place an order for za’atar and cheese pies. These were expertly hand crafted pies, drizzled with extra virgin olive oil and baked in a fiery brick oven. When we’d picked our produce and stocked up on pantry items, we would circle back around to pick these up. A white cardboard box awaited us, with steaming pies layered between wax paper. I remember the drives back home. With a trunk full of groceries, sitting in the backseat of my dad’s Camry and polishing off these fatayer. Pictured here is a za’atar pie. I’ve made it a couple of times since and it always gets rave reviews. . . Words of advice if you take on this challenge: 1. Be patient. 2. Use the fridge to cool the frosting on the cake as you apply it in layers. 3. Do not attempt to grind granulated sugar to powdered sugar for the frosting (cause that’s what you have in your pantry.)
