So I've been using @marukanvinegar to pickle cucumbers for the longest time... but vinegar definitely has more use than to pickle. For a quick snack tonight I went the non-traditional route and added it into my guac. The subtle hint of sweetness added by the rice vinegar is pleasantly refreshing. This was split between mine and Harry's food. I then added the peppers and tomatoes and put them in the oven for 20 minutes. I had some little salad potatoes to use, so I did fajita roasties. Again, this made four portions. I then used a simple recipe of 250g of flour and 170ml of warm water to make the tortillas. They should have been slightly thinner than what they were. They were more like flatbreads, but they were good! The guacamole is made by me also with two large avos so it made a fair bit! Tomorrow's dinner is; half of the veg and tempeh, one tortilla, a quarter of potatoes and a serving of guacamole. . my homemade chipotle bowl stuff already prepped: - prepared the black beans (canned, I heated with some water and chipotle paste) the day before - marinated 2 chicken breasts in adobo chipotle paste 2 days before - store bought guac - store bought shredded cheese - frozen mixed fajitas - jar queso stuff i did the afternoon of - diced tomatoes and onions and jalapenos - shaved / chopped cilantro - sliced and juiced limes - made cilantro lime rice - mixed ingredients to make pico de gallo (tomatoes, lime juice, jalapenos, onions) - mixed ingredients (same as pico except itโs frozen corn kernels instead of tomatoes) - seared marinated chicken breasts (I prefer chicken thighs but again we only had breasts) - sautรฉed some frozen fajitas (a little limp bc I didnโt defrost them and put them in the pan frozen which naturally makes water come out) in the chicken pan - whipped sour cream (daisy brand. the best) to make it a little more liquid-y - heated some queso and added some water and half and half to make less salty and texture more liquid-y - added a dollop of guac - constructed me bowl - chopped some lettuce the individual components couldโve been more similar to the real thing but when itโs all mixed the taste is basically spot on just missing the salsas (salsa verde, red hot salsa) because homemade salsas are a lot of work and flavor balancing and I wasnโt trying to do all that yet strawberry lemonade (floridaโs natural) on the side 042824 #food #chipotle #rice #lime #beans #cheese #cream #cilantro #guac #guacamole #avocado

We cooked it on high heat in a cast iron skillet so it got nice and crispy, and we served it with basmati rice (we used the 90 second packets from @aldiusa which made the cooking process WAY easier), @aldiusa chunky guac because we couldnโt find ripe avocadoes, homemade pineapple mango salsa (3/4 of a large ripe pineapple, 3 honey mangoes, 1 red bell pepper, juice of 2 limes, 1 jalapeรฑo, half a red onion, and salt), homemade cabbage slaw (1 bag of broccoli slaw and 1 bag of red cabbage slaw from @wegmans mixed with lime, salt, and olive oil), @daisybrand sour cream, @wegmans roasted salsa verde, and cilantro on the side since my dad hates cilantro! Headed over to @fatbutchershop without a real plan for dinner and, as I oftentimes do, headed home with a new cut of meat Iโve never tried. I treated this Santa Fe steak similar to a skirt steak. Marinated in a @ninjakitchen blended concoction of lime juice and zest, chipotles and adobo sauce, sriracha, salt and pepper, garlic, olive oil, and cilantro.
