If you’re having Sunday scaries, meal prep this Asian noodle salad so you’re excited for your lunch this week :) Also a great lunch to whip up in 15-20 min if you’re WFH! 1️⃣ Quick pickle veg: Julienne some carrots and cucumber and splash on some rice vinegar with a pinch of salt. Let it quickly pickle while you prepare your other ingredients. 2️⃣ Marinate tofu: To make this super quick, just buy super firm smoked tofu and cut it into thin strips. In a Tupperware, mix together 1 tbsp soy sauce, 1 tbsp black vinegar, 1/2 tbsp honey, and a pinch of white pepper and chili flakes. Throw in the tofu strips, shake the container, and let marinate as you continue prep. 3️⃣ Noodles: A whole range of noodles would work for this: soba, rice… here I used black fern root noodles. Cook them and shock with cold water when done. 4️⃣ Assemble: Put everything in a bowl together. I added in kimchi with a lot of kimchi juice and a leftover Asian salad dressing I had from takeout, but you could also quickly mix together some Gochujang and rice vinegar for a sauce. Fern Root Fan Noodle Salad. Fern root fan noodles are a new ingredient to me. They are made from powdered fern root fans, a type of bracken and made into gloriously black noodles. They are typically eaten as a cold appetizer, and embody the sour/spicy flavours of Guizhou. Noodles, Cucumber, Chiles, Green Onions and Cilantro are tossed with a vinaigrette of Sichuan oil, black vinegar, soy sauce and sugar. I made @mr_wilyeung ‚s Chili oil stir fried noodles using these #fernrootnoodles . I bought them out of curiosity at our local Asian supermarket. They are amazing!🤩 Texture wise they remind me of the noodles you use for 냉면 . Has any of you cooked with them yet? Unfortunately that supermarket closed down and I‘m not sure I can find them again. Late night sour spicy fern roots from #joyluck yesterday evening. Chinese cravings come back with the wintery breezes and this is one of my favourite places to eat chinese. Table for one, "45 minute wait" - ok - shocked faces (lucky I like aimless wandering round #chinatown, pre-prinks), then placed on a table for 8, gazing happy out the window contemplating life / no entry sign with a steamy jasmine tea. Favourite #dumplings in London are from here: clammy, thin and delicious (sweet cabbage and juicy pork filled), with chilli oil and theyre not too doughy or filling so you can wolf them down full speed. Smacked cucumber slathered in garlic and the limpets pivot round the main event - the #fernrootnoodles, that sit boiling hot right up till the end because theyre cooked in oil and theres fat hunks of raw garlic and ginger and roasted peanuts nestled in. Re-energized after toughmudder, and packed with a takehome box of leftover ferns for sunday dinner - I turn around to a six seater table cloth of carnage: giant prawn shells and heads, clunky bones that look like skulls and a glimpse of menu reading "crispy yellow croakers and shredded pork ear". For now I'll stick to the dumps and noods but I love it.

Not heavy, head turning, soup spurting serenaders but modest little clampets sweating sweet with pork juice and cabbage so tasty and moreish you didnt even need chilli oil to dress them.
