🌱 FENOUIL AU ZAATAR 🌱 . Toujours pas d'emoji fenouil, comment c'est possible ça ?! J'ai découvert un peu sur le tard ce légume délicieux cru (en marinade au citron) comme cuit (vapeur, rôti). Peu calorique et plein de fibres, il a tout pour plaire. . Dans cette version, je l'ai fait rôtir au four après l'avoir émincé et mélangé avec de l'huile d'olive et du zaatar (mélange d'herbe qui sentent bon la Provence, de sésame et de sumac qui apporte un peu d'acidité Mais légère). . J'ai ajouté une feta végétale en milieu de cuisson, elle aussi marinée, avant de tout mélanger en fin de cuisson, pour accompagner des céréales. This is a super easy and versatile baked dessert with lots of flavor and texture. Use your choice of berries or try stone fruit or apples. If using apples, add some cinnamon and nutmeg to the crumble. Berry crisp 1.5 cups of berries, fresh or frozen 2 tablespoons maple syrup 1/2 teaspoon vanilla extract 1 tablespoon corn starch Crumble 3/4 cup old fashioned rolled oats 1/4 cup nut of your choice. I use chopped pecans or sliced almonds 1/4 whole wheat or flour of your choice 3 tablespoons brown sugar 2 tablespoons maple syrup Pinch of salt I use a 5 x 5 baking dish but this could easily work for an 8 x 8. Just bump up the amounts by a quarter or so. Bake at 350 for about 40 to 50 minutes, or until the topping is golden brown the edges are bubbly. Wait about 15 minutes before eating. I’ve been craving a scrumptious galette for days Ingredients: 1 @bobsredmill mill GF pizza kit 1 leek, steam, boiled or sautéed 1 @kitehillfoods Hill almond ricotta 5-10 cloves of garlic, chopped 1 small bag of arugula (or spinach) 1 yellow squash, sliced 1 small jar of pimento peppers 1 bag of asparagus (steamed, blanched or roasted) 1. Prepare the GF dough per bag instructions (I use flax meal instead of chicken eggs). Sometimes I’d like adding rosemary or Italian seasoning so that the dough has another layer flavor. 2. With rolling pin spread over a baking sheet liner as if you were making thin crust pizza (I use reusable ones, no need for oil if you’re SOS) 3. Spread the almond ricotta onto the thin dough, skip the edges 4. Sprinkle garlic over ricotta 5. Spread leeks. I find that flavor and texture might be highly improved if you sauté the leaks first. 6. Add arugula 7. Layer slices of yellow squash 7. Then asparagus 8. Then add pimento peppers 9. Folded over the edges of the dough, even if it looks rustic, that’s part of the beauty of this dish. 10. -지난 겨울엔 고구마를 한 30kg 쯤 먹은 것 같다. 한번도 뵌 적 없는 김의준님이랑 내적 친밀감 최고치를 찍었던 시절,, 이지만 사진 하나 안 찍었고 -맛의 궁합이 좋은 유부와 우엉으로 김밥! 한번 할 때 넉넉히 해서 유부+우엉+땡초+(표고버섯도 잘 어울림)+소금 넣고 주먹밥 까지 만들어 두고 냉장 혹은 냉동 해 두면 귀찮은 날 렌지에 데워 먹기 좋다 -김밥과 늘 함께 하는 두부캐슈마요 데친 두부와 불린 캐슈넛 1:1, 레몬즙, 한살림감귤농축식초(신맛 보다 단맛이 강해 설탕 대신 사용), 소금, 생파슬리 넣어 블렌더에 갈아 주면 끝🙃 어쩔땐 홀그레인 머스타드를 넣기도 하고 그때그때 내키는 대로, 냉장고 상황에 따라 들어 가는 게 달라지기도 한다. 간만 잘 맞으면 어떻게 해도 기본 이상은 되는 듯.

Got some walking in today. It was lovely outside. Windy, but the wind isn’t bad when it’s warm out. Breakfast: Same as always (what a surprise) Lunch: Salad with baby kale, baby arugula, baby spinach, cucumber, red onion, radish, celery, grape tomatoes, and a new dressing that will be up on the site tomorrow! Also added some dulse flakes and vinegar to boost the nutritional value. Raspberries too! Dinner: Raw veggies and hummus. One serving of Chickapea brand pasta, a pound of French cut green beans, 8 oz white mushrooms, and a tofu Alfredo sauce. Also added black cumin. 🌟Cheezy Queso Brown Rice Casserole with Broccoli and Beans 🥦 🫘 (by @vegan.sisu, inspired by Gena Hamshaw) LOVED this dish!! The oil-free, vegan cheezy sauce was divine. Meg cut the fat in half by subbing in white beans 👍. Even though this dish is lower fat, it’s rich, filling, and satisfying. Just like the name, this recipe is loaded with so many healthy ingredients. Her changes also lowered the salt too ❤️. Meg’s post (April 17, 2024) shows the original recipe in photos. Her modifications are in the text. I wrote up her recipe, with changes, for my files. It’s that good and going in my keeper file 😉💚. Thanks Meg! Vegetable korma, dal and rice. First time making a Dal in the pressure cooker. I left it to cook for 10 mins then to depressurise for about 10 mins while I cooked the korma and rice. Best Dal ever! A study of thousands of front-line healthcare workers across six countries found that those eating plant-based diets had 73 percent lower odds of suffering a moderate or severe course of COVID-19. When combined with pescatarians (who eat fish but no other meat), the workers still had significantly lower odds, 59 percent. The biggest difference in risk was found between those eating plant-based versus low-carb. Compared to plant-based healthcare workers, individuals eating low-carb, high-protein diets had nearly four times greater odds of suffering a serious infection.⁠ ⁠ The greatly reduced risk was independent of underlying risk factors for COVID-19 mortality—such as being overweight or having heart disease, high blood pressure, or diabetes. The apparent plant-based protection went above and beyond.⁠ ⁠ Harvard researchers collected data from nearly 600,000 participants and found that those scoring higher on a plant-based diet scoring system not only had a significantly lower risk of suffering a severe course of COVID-19, but also a significantly lower risk of getting infected in the first place. And, again, this was after taking comorbidities into account, alongside non-dietary risk factors, such as exercise and smoking.⁠ ⁠ Why might a plant-based diet be helpful? Most restaurants are happy to accommodate a request for a raw or healthy high raw meal. Yes, sometimes the options are a salad, salad, or salad, and often not a meal-size one either. But hey, I absolutely love salad and appreciate the conversations such a request can lead to. Generally, wait staff is excited to come up with something and I ALWAYS share my gratitude for their effort. I had this lunch two days in a row when hubby and I spent time at #rickettsglenstatepark and #worldsendstatepark . After I got back from Fremont, @therealchefaj arranged a meeting with her group at one of her favourite Asian style restaurants, @phovegan . We were about 14 - 15 people. I got to listen to story after story of people who had reversed disease, many of them as seniors. Cancers, kidney disease and diabetes, hypertension and many other issues, and of course so many had lost a lot of weight too. They showed some of their before and after photos. @estherlebeck and her husband, Ben were there as well. From what I understood, many of them regularly attended vegan meetups. They would all meet at a restaurant or have a potluck. They all knew each other, and this was their way to socialise. This way they all helped each other stay on track. The restaurants that we went to were 100% vegan and even had a separate menu for oil-free and SOS-free food (salt, oil, and sugar-free). They served a choice of brown or white rice too, so everyone could eat exactly as they wished. Thanks to @lindamvegan , Chef AJ, and others, the Roseville and Sacramento area was quite rich in restaurants catering to the needs of WFPB. Chef AJ brought fabulous WFPB brownies to this meet up since the restaurant did not have any WFPB desserts. They were delicious, so everyone had a second helping of those. And they were healthy too. I made a fresh batch of falafel today with lots of fresh coriander to give them a green colour and lovely fresh taste. I used some of my homemade fermented chilli hot sauce on my lunchtime wrap. I fermented 250g of fresh red chillies I bought from @pickwellfarm for two weeks and added some apple cider vinegar, agave syrup, water, and tamari and blended it all together. Really lovely, hot and sweet. 1️⃣1️⃣ Things About Me If you've been here awhile, you'll see my page has taken a new direction, so it's time to reintroduce myself! 1 🤱 I'm a mom of two beautiful girls, a 6 month baby and a toddler just over 2. Becoming a mother has been the best (and most challenging) experience of my life! 2 🤰I gave birth to both of my babies at home, unassisted (freebirth). Both were incredibly powerful experiences, yet unique from each other. I am called to share and support women through pregnancy, birth, and postpartum, though at the moment my time is limited. 3 📚 I have a Master's degree in Social Work, as well as a background in nutrition, and a passion for so much more. I've worked as a child services worker, holistic health consultant, and English teacher. My past jobs have shown me truths about society, with social work especially exposing a lot of darkness, that I now want to work for myself. Freedom is key. 4 🌏 I have traveled over the world, starting with trips after universiry, and have spent the most time in Vietnam 🇻🇳 (3 years) and Ecuador 🇪🇨 (over 2 years). 5 🗣️ I have a passion for language learning, with Vietnamese being my favorite so far. I learned Vietnamese by living with locals and avoiding English and all Westerners for months upon months. I have unforgettable memories from this time ❤ 6 💗 I met my partner on the set of a movie near Ha Long Bay, Vietnam. I was an extra 😉 We didn't see each other again for 2 years, and then we met again and soon started traveling the Mekong Delta together. The rest is history 🤰 7 🍉 I was 100% vegan for 10 years, and raw vegan/fruitarian for 2 or 3. I still eat a plant based diet, but have let go of labels and rigidity.
