I slept with the windows open last night. Which means I woke up chilly, so I made oatmeal for breakfast. 🥣 I cooked a mixture of steel cut + rolled oats (I like the combined texture) in lightly salted (yes. Oats require salt!) water + a bit of pumpkin pie spice. Once they were cooked, the whole lot was topped with a generous sprinkle of flax meal, korintje cinnamon + some pecans along with a teeny tiny pat of butter. Очень кратко поясняю: В мире коммерчески популярны четыре вида корицы: китайская (cinnamomum cassia), индонезийская (cinnamomum burmannii), цейлонская (cinnamomum verum) и сайгонская (cinnamomum loureiroi). Как правило в магазине или на рынке вам будут предлагать палочки индонезийской или китайской корицы. Молотая корица в наших супермаркетах тоже будет китайской или индонезийской. Цейлонскую корицу (она же благородная) из магазинов продает только goodwine (на фото как раз их корица), на рынках ее нет. Сайгонской к сожалению у нас днем с огнем не сыщешь. Теперь о качестве и "настоящести". У цейлонской корицы аромат гораздо мягче чем у ее грубоватых сестер из индонезии и китая.В ней меньше крахмала и мизерная доля кумарина. В напитках я однозначно предпочитаю цейлон, но множеству блюд нужна более выраженная коричная нота и китайскую, индонезийскую и сайгонскую корицы я использую не реже чем цейлонскую. Для кулинара все корицы важны и нужны. Все корицы это медицинские растения и все полезны. Для того чтобы от кумарина содержащегося в корице получить какой-то вред надо есть ее регулярно столовыми ложками на заватрак обед и ужин.
