Last night, I had a chicken in the slow cooker both to cook the chook and have stock in the freezer for whatever should come up. So I woke up with a strong desire for my version of Chicken Congee!! Most of the aromats (lime, basil, lemon grass, coriander and mint) came from my garden. It makes cooler days warmer, and funny tummies better... The first time I was offered Congee, I was backpacking with my eldest daughter in Thailand. We were on an overnight bus from Bangkok to Chang Mai and we stopped at a service station in the middle of no where. We were all woken and herded from the bus by the hostess (acting rather like a flight attendant). English was pretty basic, as was our Thai, but she conveyed that we should try this simple but filling morsel. She said the magic words...khoa (rice), gai (chicken) and porridge! We trepidatiously tried a tiny bit on the end of our spoons (which was strange because we had both been pretty gung-ho about trying most things). Katie screwed up her little 7 year old face and remarked: "doesn't taste like any porridge I've ever had! But it's not too nasty." And there began my search for this amazing, healing and delicious anything food.
