🍷 @restaurantbente Restaurant Bente offers a diverse dining experience that caters to all walks of life, whether you’re a CEO or a student embarking on your first semester. The ambiance inside reflects the vibrancy and multicultural vibe of Torshov and East Oslo, with dim lighting and an open kitchen adding to the inviting atmosphere. We sampled a variety of dishes, including scallops, burnt Jerusalem artichoke with parsley sauce and hazelnuts, and duck breast with arabica sauce, accompanied by pickled berries. While the scallops were enjoyable, the standout dish for me was the Jerusalem artichoke—it was simply delicious. The duck breast, although tasty, arrived slightly cold, and the sauce had separated. Unfortunately, we received fish instead of the lamb we had ordered, and while the hake with mussel sauce and kale was flavorful, it was overly salty and contained numerous bones. I wished the sauces were thicker, as they seemed a bit thin overall. The grilled olives with lime leaf oil and bread with whipped butter were delightful additions to our meal, and we thoroughly enjoyed them. Additionally, the cauliflower was good, but it felt like it was missing something. The portions were quite small, but the prices were reasonable, making it accessible to all. The wine glasses were generously poured, and the wine prices were fair as well. Despite the mix-up with our order, the staff at Restaurant Bente were incredibly kind and gracious, offering us the fish dish free of charge since it wasn’t what we had originally ordered. Unfortunately, we didn’t have time to wait for the lamb dish to be prepared. Overall, while there were some hiccups with the food, the attentive service and pleasant atmosphere made up for it. GREAT GRANDDAUGHTER SAUCE Ages ago, some farmer's wife mixed egg yolk and butter. In the late 1600s, the first known recipe of "sauce hollandaise" was put to paper. Egg yolk, butter, salt, nutmeg and a touch of vinegar. Sauce Hollandaise is one of the five French "Mother Sauces". Later on, lemon juice replaced the vinegar and the nutmeg was sidelined. In 1836, Jean-Louis-François Collinet opened his new restaurant "Le Pavillion Henri IV". To kick it off he made a new sauce, replacing the lemon juice in the Mother Sauce with white wine vinegar (unwittingly going closer to the original) and adding shallots, chervil and tarragon. He named the Daughter Sauce "Béarnaise" in honour of Béarn, the region in which Henri IV was born. Then, in the early 1900s, the chef Clémence Lefeuvre was making béarnaise sauce for a dish of pike for her noble employer, but forgot to add the tarragon and the egg yolks. Or made a conscious decision to do so (many of these food inventions are mythically framed as accidents). Et Voilá! The Granddaughter Sauce "Beurre blanc" was born. Over time, cream was added as a stabilizer. Cut to: 1959. Hotel manager Otto Fredrik Borchgrevink at Park Hotel in Sandefjord wanted to give his guests a simplified taste of the French cuisine he remembered well from his study years. He cut the shallots, the chervil and the vinegar from the beurre blanc, leaving him with butter, cream and salt. To which he added a touch of parsley. And thus the Great Granddaughter Sauce "Sandefjordssmør" (Sandefjord Butter) was born, the only genetic imprint from the OG Mother Sauce left being the butter and the salt. This church has been funded and operated by the Norwegian government since 1864 in effort to “provide havens for Norwegian seamen around the world” but still has 28 locations around the world for expats and travelers. On each Saturday in San Pedro promptly at 12:30, someone comes out and hangs a sign in front with the word ÅPENT, meaning “open” in Norwegian. This is a welcome signal to many area folks that are from Norway or have descendents from the Scandinavian country. A large pot of Norwegian-style rice porridge is prepared at this time each week, and quite a few people come to enjoy it in the church’s lounge. You can dress up your porridge with butter, sugar, cinnamon, raisins, or a combination of everything. Do not forget to pour yourself a glass of lingonberry juice to accompany your porridge, or whatever is on offer. Apparently it is important to drink “something red” while enjoying your snack. Please let us know if you’ve tried this recipe before and how you liked it! #Ingredients For 4-6 portions. 500 grams of white fish (e.g., cod, haddock), in pieces 1 onion, chopped 2 carrots, sliced 2 celery stalks, chopped 3 medium potatoes, peeled and diced 1 liter of fish stock 200 ml of cooking cream 2 tablespoons of oil or butter 2 bay leaves Salt and pepper to taste Chopped fresh dill for serving #Instructions In a large pot, heat the oil or butter and sauté the onion, carrots, and celery until they are tender. Add the potatoes and fish stock. Bring to a boil and reduce the heat, simmering until the potatoes are almost done. Incorporate the fish and bay leaves. Cook for about 10-15 minutes or until the fish is well-cooked. Add the cream and heat without allowing it to boil. Season with salt and pepper to taste. 𝗖𝗼𝘂𝗻𝘁𝗿𝘆 𝟯𝟴/𝟭𝟵𝟱 𝗼𝗳 𝗪𝗼𝗿𝗹𝗱 𝗖𝘂𝗹𝗶𝗻𝗮𝗿𝘆 𝗧𝗼𝘂𝗿: 𝗡𝗢𝗥𝗪𝗔𝗬 🇳🇴 -Originally cooked & posted SEPTEMBER 11, 2023. RECIPE IN COMMENTS- My husband was gifted 3 pounds of fresh ground elk meat and it was the perfect opportunity for us to try a traditional Norwegian dish, called Elgkarbonader. Known as the “King of the Forest”, elk is a staple of the Norwegian diet. It is often used in stews and soups, and another favorite preparation is to form it into patties. These elk patties, (Elgkarbonader) are liberally seasoned with salt, pepper, nutmeg, and thyme; mixed with an egg, heavy cream, and flour; and then panfried to juicy perfection in a cast iron skillet. Elgkarbonader is traditionally served with boiled potatoes, lingonberry jam, and vegetables on the side. I won’t lie; this meal was a bit outside my comfort zone. If I detect even the slightest hint of gaminess in meat, it’s game over for me. I also had little confidence that my six-year-old would try elk if he knew what it was, so I neglected to disclose that little fact until he was finished. We were pleasantly surprised at the mildness of the elk. It was very lean, but the texture was way too soft for our liking; it reminded us of the texture of raw meat, even though it was fully cooked. 😵‍💫 I don’t know if it would help, but if I made this dish again, I would make the patties thinner. Norway is a beautiful country in Northern Europe, located on the Scandinavian Peninsula and neighbored only by Sweden to the east. It is known for its Viking history, breathtaking scenery, coastal fjords, glaciers, and mountains. Norway has long been a popular destination for outdoor recreation and sports such as skiing, hiking, and fishing, and famously hosted the 1994 Winter Olympics in Lillehammer. Sinduda02.18.24 Course04: Anson Mills Farro Bianco - Chef’s Take / “First we need to talk about this Farro Bianco from Anson Mills. By now, it’s no secret that the best grains available all come from heirloom seeds and there is nobody better at doing it to a commercial level like Glenn Roberts and his company. This dish is my take on Sopa de Fideos but backwards. Traditionally, the soup is tomato based using broken noodles with cilantro, lime, and crema. I ate this soup a lot growing up and to be honest...I hated it. We ate it so much I turned into sopa. While I might have not enjoyed it in the past, it’s now a dish that lives in my memory and I want to eat today and reminisce on living and eating in Mexico. For Sinduda, I am cooking the farro with heavily salted water, straining it, and then folding it with creme fraiche & butter. It’s then finished with a tomato based salsa ranchera. Norwegian Blueberry Compote Pancake Cake 😋 Ingredients: 2 cups all-purpose flour 3 tablespoons sugar 1/2 teaspoon salt 1/2 teaspoon baking powder 2 large eggs 1 1/2 cups milk 4 tablespoons unsalted butter, melted 1 teaspoon vanilla extract 2 cups fresh blueberries (for compote) 1/2 cup sugar (for compote) 1 lemon (zest and juice for compote) Powdered sugar for dusting Directions: For the Pancake Batter: In a large bowl, whisk together flour, sugar, salt, and baking powder. In another bowl, beat eggs, milk, melted butter, and vanilla extract. Combine the wet and dry ingredients until smooth. Heat a non-stick pan over medium heat. Pour 1/4 cup of batter for each pancake. Cook until bubbles form, then flip and cook until golden. Repeat with remaining batter. For the Blueberry Compote: In a saucepan, combine blueberries, sugar, and the zest and juice of one lemon. Simmer over medium heat until the berries break down and the sauce thickens, about 10 minutes. Layer pancakes with blueberry compote in between each pancake. Dust the top with powdered sugar. It commemorates Bergen's historical pressed cod dish Persetorsk.
