- Homecooked dinner ▪️ Chicken Mushroom in Oyster Sauce ▪️ Steamed white cabbage & tofu with wolfberries and egg flower gravy My chicken dish only needs 2 ingredients: chicken fillet & shitake mushrooms, and a couple of condiments and seasoning easily found in any Asian kitchen. Here's how I prepared my quick-cook chicken mushroom in oyster sauce 🤭: 1. Cut the chicken fillets into big chunks 2. Marinate the chicken with soy sauce, sesame oil, rice wine, and cornflour 3. Remove stems from shitake mushrooms and cut them into slices 4. Heat oil in a wok, add shitake mushrooms in and fry 5. Add oyster sauce 6. Add marinated chicken 7. Add soy sauce, rice, wine, and water 8. Ready to serve once the chicken is cooked 9. TERIYAKI TRAY BAKE . Throwing together a super quick and easy teriyaki dinner. Would usually use fresh grated garlic and ginger but I’m way too tired today (everyday 😆) and it’s still nearly as good! . MARINADE 1/2 cup teriyaki sauce . 1 tablespoon ginger paste . 1 teaspoon garlic paste . 1 tablespoon cider or rice wine vinegar . Mix the marinade ingredients and coat your protein thoroughly (I’m using chicken). Ideally leave for several hours in the fridge for maximum flavour. Pop everything into a roasting tray and oven cook until done! Garnish with coriander and spring onion 🌿 . || 30 MIN PAELLA || . I love Spanish food! This is a quick(ish) method I use to make paella at home for a fun summer dinner. I’ve used prawn and chorizo in this one but you can substitute with veg, tofu or beans . Ingredients . 🍚 300g Paella rice . 🧅 1 onion . 🥄 3 tablespoons Cajun spice . 🧄 1 clove garlic . 🌶 1 red chilli . 🌶 1 red pepper . 🍃 Peas . 🍅 Three tablespoons of tinned tomato . 🌽 2 vegetable stock pots . 🥄 1 tablespoon Paprika . 🌿 Bunch of fresh parsley . 🍋 1 lemon . 💧 3 cups boiling water . 🥄 Black pepper . 🍤 1 pack of prawn and 1 pack of chorizo . 1️⃣ Peel and chop the onion and garlic and add to the pan with olive oil. Cook for 5 minutes . 2️⃣ Chop the pepper, chilli and half the parsley, and add to the pan. Cook another 5 minutes . 3️⃣Stir in the tinned tomato, veg stock, paprika and Cajun spice . 4️⃣ Add the prawn and chorizo or alternative toppings and cook another 5 minutes . 5️⃣ Add the paella rice and stir, then add 3 cups of boiling water. Add the peas . 6️⃣ Make sure everything is covered by the water, stir one more time and then cover the pan and simmer on low heat for 15 minutes . 7️⃣ Check the rice is soft, if not cook a little longer and add some water if you need. || LENTILS 5 WAYS || . Nutritious, packed with protein and fibre and a staple Indian dish I’ve been enjoying since I was 8 months old! Bearcub is too young for it now but I’m looking forward to him trying it soon 😊 . Here are 5 easy spice and flavour ideas you can use for your lentils. I use red split lentils and boil them with 3/4 teaspoon salt and a pinch of turmeric while I’m preparing the flavour base. . 1️⃣Heat 1 teaspoon of whole cumin seeds and 1 teaspoon of black mustard seeds in a little olive oil. Add to the cooked lentils with a handful of fresh coriander and sliced green chilli and simmer for 5 minutes . 2️⃣ Cook 1/2 a diced red onion, 1 diced tomato, 1 chopped garlic clove and a 4cm piece of grated ginger in olive oil. Add to the cooked lentils and simmer. . 3️⃣ Add 1/2 teaspoon curry powder, a chunk of margarine and fresh ground black pepper to the cooked lentils and simmer. . 4️⃣ Add in some veg while the lentils are cooking!
