Nourishing Wellness Grandma's Healing Fennel Soup 🍜😍 Ingredients: • 2 tablespoons olive oil • 1 onion, chopped • 2 cloves garlic, minced • 2 fennel bulbs, thinly sliced • 2 carrots, diced • 4 cups vegetable broth • 1 cup water • 1 teaspoon dried thyme • Salt and pepper to taste • Fresh fennel fronds for garnish (optional) Directions: 1 In a large pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until fragrant and translucent. 2 Add the sliced fennel bulbs and diced carrots to the pot. Cook for 5-7 minutes, stirring occasionally, until the vegetables begin to soften. 3 Pour in the vegetable broth and water. Stir in the dried thyme, salt, and pepper. 4 Bring the soup to a boil, then reduce the heat to low. Cover and simmer for 20-25 minutes, or until the vegetables are tender. 5 Once the soup is cooked, remove it from the heat. Use an immersion blender to blend the soup until smooth, or transfer it in batches to a blender and blend until smooth. 6 Taste and adjust seasoning if needed. It's time to ditch the diets. OMG. Sick of it is an understatement. My whole teenage and adult life were dedicated to shrinking myself. I'm EXHAUSTED!! Society and even the people who loved me used to make me feel that to be accepted, I had to be skinny. So here I am, trying to figure it out. I have also realised that this whole diet culture is just one big lie. We were made to believe that low fat/ fat-free diets were good for us. Actually, they did more damage than anything else. Made me feel that I was broken as I failed so many times following them. Researching menopause and diets, took me down a completely different path, and I'm all for it. Almond Flour 90 Second Bun   There are almond flour bun recipes going around social media these days so I had to try to create one of my own. This is a great bun! My version of the recipe is good for either a breakfast bun or a savory bun – it all depends on the seasonings you add to the batter. It is made in a couple of minutes, then microwaved for 90 seconds and it’s done. You can eat it right away or let it cool, then toast it. It holds its shape and is a very tasty great base for any type of open faced or closed sandwich filling you like! So there are 642 calories in my steak. Which I know, just from a quick check of the packaging. Why is it useful to know that? Because I don’t have to worry about eating too much, or too little, for my own routine… especially with a healthy non restrictive diet which I follow… 🥗🏋️‍♂️ Calorie counting can be a helpful tool to keep you (and me!) on track. Here are 3 positives and 3 negatives to keep in mind 🧠: Positives: 1️⃣ Helps create awareness of portion sizes and food choices 2️⃣ Can aid in weight loss/ gain or weight maintenance goals 3️⃣ Encourages mindful eating and promotes a balanced diet Negatives: 1️⃣ May lead to an unhealthy obsession with numbers if you are prone to eating disorders 2️⃣ some people will only see the calories, rather than the whole picture and not intake enough micronutrients 3️⃣ Can be time-consuming… at first! Counting calories works very well for a lot of people, but if you don’t fancy it, there’s a few things to focus on that’ll get you in the same direction counting would… Base meals around protein, veg/ fruit and fibre rich carbs. Portion meals appropriately for your goals and be mindful but not restrictive. Find what foods work for you and what doesn’t, a diet you can stick to is a diet worth doing. You can also count calories short term for your current training/ diet phase, you can start to get a feel for the calorie content of foods without having to constantly calculate. Try using apps like MyFitnessPal or keeping a food journal to help track your intake. Not long ago, I was neck-deep in stress, powering through the day with too much coffee and unwinding with wine. My eating habits were chaotic, often stress-eating processed foods and sugars, which was worsened by coming out of emotionally abusive relationships that left me seeking validation in unhealthy ways. I realized I couldn't keep living like this after hitting burnout and adrenal fatigue. I decided to make some changes, focusing on small, manageable steps. I cut back on coffee and wine, prioritized getting more water and restful sleep, and tackled my emotional eating by being more mindful about my food choices. I started incorporating daily walks and adjusted my exercise routine to be nurturing rather than punishing. Setting boundaries became crucial in managing my stress, both at work and in my personal life. I also made time for supportive family and friends, which grounded me and helped me feel less isolated. These changes gradually strengthened my sense of balance and happiness. I learned to find joy in simple, everyday moments rather than seeking it from external sources.
