Cooked roasted orange 🍊chicken 🐓from a NYTimes recipe. Tried this 2 years ago and it was a hit. Most ingredients from #TraderJoes #annarbor. The recipe has you juice 2-3 tangerines to get 1/4 C. I got a bag of mandarin oranges from #TJs. The recipe also uses a whole chicken; I used boneless thighs. And I included garlic🧄; the recipe does not. I used a piri piri pepper 🌶️instead of the cayenne/chili flakes the recipe states. I blended the juice, soy sauce, brown sugar, garlic, ginger 🫚(I peeled using a spoon - easy!), dry sherry, rice vinegar, and S & P. Poured some into a large baking dish. Added the chicken and remaining oranges I quartered, and poured the remaining mixture over the top. Roasted at 400°. Spooned the liquid over the chicken after 25 mins. Cooked another 20 mins. The liquid wasn’t thick, so I removed the chicken and oranges, scraped the “wall fond” off the dish, and boiled the liquid in a pot to reduce and thicken. Served the chicken on brown jasmine rice. Spooned the syrupy liquid on top and garnished with green onions and sesame seeds. This was delicious. The soy sauce - orange combo is a winner with many different proteins. I’ve done a similar method with salmon. I was very disappointed in the eclipse today. I was prepping food in the kitchen and looking out our back windows this afternoon. I went outside on our western-facing deck with my round-slotted spoon and a piece of paper to see the expected silhouette. Many years ago we had a partial eclipse in Little Rock and I made a pinhole “projector”: punch a hole in one piece of paper and hold that over another, both facing the sun. I saw the moon partially obstructing the sun. I saw a recommendation to use a colander and piece of paper for the same effect. My spoon had round holes. Each time I went outside the spoon and paper showed only round silhouettes. I used my phone’s camera’s selfie option to view the sun and still saw a full disc. Even when it got very dark here. The wife went outside with eclipse glasses and saw partial obstruction. So I’m bummed. I probably won’t make it for the 2044 eclipse. While preoccupied with celestial matters, I made butter chicken. I checked several recipes, and there are several recipes, for this. I use a Spencer Watts recipe with adaptations from Sam Sifton and the NYTimes. I sautéed slice onion and minced ginger in EVOO. Added sliced garlic, tomato paste, and coriander and cumin seeds. Later added dried cumin, turmeric, coriander, fenugreek, paprika, Aleppo pepper, garam masala, curry powder, a can of tomatoes I crushed with our avocado masher, a can of coconut milk, half a qt of chicken broth, lime zest and juice, and a cinnamon stick I halved. Simmered and added almost 3 lbs boneless, skinless #chicken thighs from #traderjoes #annarbor. Simmered gently for almost an hour. I cut the chicken into smaller pieces and returned to the sauce. Added fresh chopped parsley. Tasted for S & P. I served this over rice. I added #sriracha to my serving. We liked this. Lots of flavor depth. The chicken thighs tolerate long cooking and remain tender. I regularly enjoy looking at new recipes and trying some of them, but occasionally we want some old favorites. Years ago I saw an Ina Garten video where she says she does roast chicken every Friday night for her husband and her. I don’t want to enjoy that as frequently, but it’s good to keep in the regular rotation because they’re so delicious. So I did it last weekend. Got 2 Miller #Amish chickens from @sparrowmarket #Annarbor and did a no-frills recipe. Tied the legs, seasoned with Aleppo pepper, EVOO, and S & P, and roasted in the convection oven at 425° for an hour. Let rest for 15 minutes before carving. These were small, but delicious. A leg quarter or breast half was a sufficient serving. I like to roast chickens in a skillet (oven safe) because it makes for easier pan sauces. And I can start the cooking stove-top to give the dark meat a head start. I added some wine to the pan drippings and heated to dissolve the fond and reduce. Poured this mixture into a regular glass, let cool, and put in the fridge. The next day I spooned the fat off the top and enjoyed these delicious drippings with leftover chicken. If I had more time, I would add herbs to the chicken in the skillet, but even this simplified version was very tasty. Two chickens will give us several servings over the week. I usually serve roast chicken with rice, so it can absorb the tasty pan sauce. Tonight I made some more #traderjoes brown jasmine rice and sautéed some snap peas as a green vegetable. 💚🍲Creamy pan fried gnocchi with homemade pesto & spinach. This ones so easy, give it a go! The flavours are fabulous. I used Grana Padano instead of Parmesan as it has a more delicate flavour, but feel free to use either. Recipe serves approx. 2: 🧀🌿Homemade pesto ingredients, serves approx. 2. Blitz the following in a food processor, or bash in a pestle & mortar: -A handful of fresh basil leaves -A small handful of pine nuts (slightly toasted) -A handful of Grana Padano finely grated -A small squeeze of fresh lemon -1x garlic clove halved -1x tbsp olive oil (more or less for desired consistency) -Salt & pepper Other ingredients: -Approx. 3 large handfuls of spinach -50ml double cream -2x tsp butter -1x pack of gnocchi (cook in boiling water first, then pan fry) @sainsburys -‘What the cluck’ veggie ‘chicken’ @vegetarianbutcher -Salt & pepper -2x tsp olive oil ⭐️Method: -Boil the gnocchi in salted water for a few mins, until they float to the top, drain, rinse, then drain again. -Brown the veggie chicken off in the pan on a medium/high heat until slightly golden on both sides. -Add the butter & gnocchi to the pan, fry until caramelised & crispy. -Add the spinach & pesto & cook until wilted, season with salt & pepper then mix together. -Pour in the cream and cook for a minute or so. Mix again. -Finish with a little grated Grana Padano on top. Serve in bowls with garlic bread or on it’s own. Enjoy!😍

#MissKims restaurant in #Kerrytown #AnnArbor started a dinner club. Once a month, for 2 or 4, with optional #cocktails. We decided to try it to support #local #smallbusiness. I’d tag the restaurant and eponymous chef, but the latter blocked me from her and the restaurant’s Insta pages several years ago. We differed on the United States’s founding principles. I registered to get the 1st dinner installment Wednesday at 4:00 pm. I got email and text notices to get the food at 3:00. I inquired and learned afterwards that the software was based on CDT, but has been corrected. The food was ready when I arrived at 3:45. This initial offering was salad, #beef & chicken, roasted vegetables, rice, and mochi cakes. A #vegetarian option is available. We got the cocktail: It was very tasty. Citrusy. Not nearly 2 servings. The ample salad had a nice vinaigrette and pumpkin seeds in separate containers. The big surprise was the beef and chicken. Uncooked! It wasn’t advertised as something customers needed to cook at home. I followed the instructions and roasted at 400° for a bit longer than recommended. Could be our oven or the portion size. The vegetables were cooked and I just warmed them in the oven after cooking the proteins. The beef looked like short ribs. Tasty with a little chew. The chicken thighs were very moist and tender, with a little 🔥 kick from the #gochujang. The short grain rice just needed microwaving for a minute. The roasted #veggies were delicious. Miss Kim does smashed potatoes 🥔 very well. We ate about half the beef and chicken and most of the vegetables and rice. So these were generous servings. The mochi cake dessert was delicious. Chocoholics would rejoice! The tasty caramel sauce and whipped cream were in separate containers. We liked this and look forward to next month’s special. When I retrieved our meal, I noticed over a dozen sacks for other people.
