I’ve had it twice already and polished the full plate myself!! Full of flavour, easy and addictive 🫶🏽 Ingredients: -1 large sweet potato, peeled and cubed -2 tbsp olive oil + 2 tbsp for drizzle @odysea_ltd -1/2 lemon -1/2 garlic bulb (4/5 cloves) -1 spring onion sliced -Seasoning 1 tsp of : salt @blackthornsalt pepper, smoked paprika @lachinatasmokedpaprika za’atar, oregano, cumin powder. Method: -Wash, peel slice the sweet potato, chop into cubes. -Add to a baking tray and drizzle with olive oil, and seasoning. Mix well. -My potato was large so I batched half for a mid week meal, ready and prepared. -Add the lemon and garlic and airfry for 20-25 minutes on roast option on 180c I used my @ninjakitchenuk megazone. -Half way through, shake the potatoes and remove the lemon and garlic. -Remove lemon skin and add to a bowl, squeeze the garlic or mash with the back of a knife. -Add the sliced spring onion and 2 tbsp of olive oil -Optional, I add 1/2 tsp Za’atar, salt and pepper for extra flavour. -Mix well. Pumpkin & Feta Salad By @veganbyeden Makes 2 serves ▪️250g Kent pumpkin ▪️300g chickpeas, rinsed & drained ▪️60g leafy greens/salad mix ▪️50g vegan feta cheese ▪️Small drizzle of olive oil + seasoning (see below) Cook the pumpkin & chickpeas in air fryer but you can use your oven at the same temperature. 1️⃣ Peel pumpkin & cut into bite sized cubes. Season with a small drizzle of olive oil and a pinch of salt, pepper and cashew parmesan, 2️⃣ Cook in the air fryer at 200°C for 10 mins, tossing 2 to 3 times. 3️⃣ Rinse & drain chickpeas. Add a pinch of salt, pepper, curry powder, garam masala & I like to add about 1 tbsp of bbq sauce. Toss to coat. 4️⃣ Once pumpkin has cooked for 10 mins, add chickpeas to air fryer. Cook for a further 5 mins. 5️⃣ Assemble salads by adding leafy greens to bowls and top with the cooked pumpkin and chickpeas. Crumble feta on top and enjoy! One-Skillet Baked Greek Lemon Chickpeas and Rice by @crumbs.and.caramel 🌿A simple and tasty recipe, perfect for sharing! Get the recipe below! 👇🏼 Ingredients 1 tbsp olive oil 1 yellow onion, diced 4 garlic cloves, minced 1 tsp dried oregano 1/4 cup white wine 1 cup long-grain white rice, rinsed 2 cups cooked chickpeas, drained and rinsed 1/2 cup sun-dried tomatoes, oil packed 1 tbsp oil from oil packed sun-dried tomatoes 2 tbsp fresh dill, chopped 1/2 tsp salt 1 large lemon, sliced and seeded 2 1/4 cups vegetable stock, boiling 1/3 cup Kalamata olives, pitted 3 cups baby spinach 1 pint cherry tomatoes, sliced in half salt, pepper and chili flakes, to taste Instructions Preheat the oven to 375°F. In a large cast-iron skillet over medium, heat the olive oil. Add the diced onion and cook until soft and translucent, about 5 minutes. Add the garlic and oregano. Cook for another minute, then deglaze with the white wine. Cook for another minute until the wine has reduced but things still aren't starting to stick to the pan. Stir in the rice, stirring to coat. Add the chickpeas, sun-dried tomatoes, oil from the tomatoes, dill, and salt. Mix well. Carefully pour the hot stock over the mixture and gently mix. Wedge the lemon slices into the mixture. Cover tightly with tin foil, and bake for 35-40 minutes, or until the rice is cooked. Carefully remove the foil, and stir in the spinach, olives and cherry tomatoes (or serve them over the top). Let sit for 5 minutes so the spinach wilts. And I’ve made a few 🙊🌶These cauliflower nuggets are coated in crispy cornflakes and homemade spicy buffalo sauce. 1 cauliflower, 400g. 1 dl. flour 1,5 dl. oat milk (or other plant milk) 2 teaspoons of paprika 100g. cornflakes (not sweetened) 
Chop the cauliflower into bouquets. In a bowl mix flour, milk and paprika. Mash the cornflakes into small pieces in a blender. Dip the cauliflower bouquets in the flour mix + cornflakes afterwards until we’ll coated. Place on a baking tray and bake for 20-25 min. at 200ºC. Buffalo sauce: 
3/4 dl. plant butter, melted 1/2 dl. hot sauce (hot chili sauce or tabasco) 1 teaspoon of apple cider vinegar 1 pinch of garlic/onion powder Mix all the sauce ingredients together and set a side until the cauliflowers are done. Pour on top of the cauliflower or use for dipping. Serve while crispy. 2️⃣ tomato & garlic toast 🍅🧄 toasted on the pan with olive oil until super crunchy, covered with garlic, and then I spread with cream cheese, add the tomatoes, cress, salt, pepper, chilli flakes and lemon juice. my latest go to breakfast or lunch (also very good with avocado on top) 🥰 ps, I use violife cream cheese for this one + basil leaves on top, but parsley or spinach works great too! . .

🌱🩷 Pesto de fresh de pătrunjel cu semințe de dovleac Este oare legal sa ai atâta vitamina C și antioxidanți într-un castron? :)))) Pentru ca am un pătrunjel forte frumos și foarte mare, (păstrat de anul trecut) și pentru ca aveam pofta de un sos fresh și super rapid am decis sa fac un soi de pesto din el. Las rețeta mai jos 🤗🩷 Ingrediente: 200 g pătrunjel 100 grame de semințe de dovleac 4 linguri ulei de măsline extravirgin 4 linguri fulgi de drojdie inactivă Zeama de la o lămâie Sare după gust Mod de preparare: Semințele de dovleac se trag la tigaie la foc mic până capătă o culoare ușor aurie. Apoi punem toate ingredientele im blender și le mixam pana obținem o pastă omogenă. 🌿Gnocchi in a creamy green sauce🌿 By @beferox Recipe: Creamy Green Sauce🌿 Serves 2 . Ingredients: •2 handful basil leaves •1 1/2 handful parsley •4 tbsp. (mixed) nuts or seeds e.g. pine nuts, sesame seeds, pumpkin seeds, flaxseeds etc. •1 clove of garlic, peeled •2 tbsp. olive oil •1/3 cup water •250ml soy / oat cream (e.g. soy cuisine from Alpro) •1/2 cup oat milk •1 tbsp. lemon juice •1/2 tbsp. dried oregano •1/2 tbsp. dried basil •Salt and pepper . Vegan Black Pepper Tofu By @foodpassionical Prep time: 10 minutes Cook time: 10 minutes (2 servings) Ingredients: 1 block tofu (400g), cut into cubes 3 cloves garlic, sliced 1 onion, roughly chopped 1 small carrot, sliced 2 stalks scallions, cut into 1 inch 2 tbsp cornstarch 1 tsp black pepper 2 tbsp oil for cooking Sauce mixture: 1 tbsp shaoxing wine 1 tsp sesame oil 1 tbsp soy sauce 1/4 tsp dark soy sauce 1/2 tsp mushrooms powder 1 tbsp vegetarian oyster sauce 1 tsp sugar 4-5 tbsp water Method: 1.) To squeeze out the water from the tofu, wrap the tofu in a clean towel and put heavy burden on top. Cut the tofu into cubes, coat with cornstarch and set aside. 2.) In a small bowl mix together all the sauce ingredients and set aside. 3.) Heat oil in a frying pan on a medium heat, pan fry the tofu till golden brown and set aside. 4.) In a same frying pan, add in the garlic and onion sauté till fragrant. Add in carrot and cook for 2 minutes, then add in the sauce mixture, tofu and black pepper. Stir to mix well, lastly add in the scallions. Stir fry to combine everything and remove from the heat. 😋Nourishing guilt-free two-coloured dessert time!❤️⁠ ⁠ This is one of my favourite desserts– it is so nourishing, guilt-free yet yummy! ⁠ ⁠ Why is it guilt-free? No refined sugar is used, while also being dairy and gluten free! ⁠ Without dairy, it’s not so creamy or rich, so tahini was added as healthy fat, to make rich flavour and texture. 😋⁠ ⁠ Plus, I’m using Japanese medicinal superfood - Kuzu (aka kudzu) which is alkalising! Vegan Black Pepper Tofu By @foodpassionical Prep time: 10 minutes Cook time: 10 minutes (2 servings) Ingredients: 1 block tofu (400g), cut into cubes 3 cloves garlic, sliced 1 onion, roughly chopped 1 small carrot, sliced 2 stalks scallions, cut into 1 inch 2 tbsp cornstarch 1 tsp black pepper 2 tbsp oil for cooking Sauce mixture: 1 tbsp shaoxing wine 1 tsp sesame oil 1 tbsp soy sauce 1/4 tsp dark soy sauce 1/2 tsp mushrooms powder 1 tbsp vegetarian oyster sauce 1 tsp sugar 4-5 tbsp water Method: 1.) To squeeze out the water from the tofu, wrap the tofu in a clean towel and put heavy burden on top. Cut the tofu into cubes, coat with cornstarch and set aside. 2.) In a small bowl mix together all the sauce ingredients and set aside. 3.) Heat oil in a frying pan on a medium heat, pan fry the tofu till golden brown and set aside. 4.) In a same frying pan, add in the garlic and onion sauté till fragrant. Add in carrot and cook for 2 minutes, then add in the sauce mixture, tofu and black pepper. Stir to mix well, lastly add in the scallions. Stir fry to combine everything and remove from the heat. 𝗖𝗨𝗥𝗥𝗬 𝗗𝗘 𝗖𝗔𝗠𝗢𝗧𝗘, 𝗖𝗢𝗟𝗜𝗙𝗟𝗢𝗥, 𝗘𝗝𝗢𝗧𝗘𝗦 𝗬 𝗡𝗨𝗘𝗭 𝗗𝗘 𝗟𝗔 𝗜𝗡𝗗𝗜𝗔 • Aceite de oliva • 1 cdta de semillas de comino • ½ cdta de semillas de mostaza negra o marrón • 15 hojas de curry frescas o secas • 1 cdta de jengibre fresco, rallado • 1 chile verde, picado • ½ cdta de comino en polvo • ½ cdta de cilantro en polvo • ½ cdta de hinojo en polvo • 1 cdta de sal • 1 cdta de garam masala • ¼ cdta de cúrcuma en polvo • 1/8 cdta de asafétida (o 1 diente de ajo picado) • 3 camotes, picados • ½ coliflor, en floretes • ¼ de taza de anacardos • 2 tazas ejotes, picados • 1 taza de leche de coco enlatada • ½ cda de maicena • Cilantro fresco, picado • Nuez de la india tostada Calienta un poco de aceite de oliva en una cacerola grande a fuego medio. Agrega las semillas de comino y de mostaza y cocina hasta que comiencen a reventar, aprox. 1 min. Agrega las hojas de curry, jengibre, chile verde y cocina, revolviendo, durante 10 segundos para liberar los aromas de las especias. Agrega el comino en polvo, cilantro en polvo, hinojo en polvo, sal, garam masala, cúrcuma y asafétida (o ajo) y cocina durante 30 segundos. Agrega los camotes, coliflor, nuez de la india y ½ taza de agua y deja hervir a fuego lento. Tapa, reduce el fuego a medio-bajo y cocina a fuego lento, revolviendo con frecuencia, hasta que el camote comience a ablandarse, de 3 a 5 min. Agrega los ejotes, tapa y cocina hasta que todas las verduras estén tiernas, 2 min. Si la mezcla parece demasiado seca, agrega un chorrito de agua. Agrega la leche de coco y cocina a fuego lento, sin tapar, hasta que los camotes estén tiernos, de 10 a 12 min. Revuelve la maicena y 1 cda de agua. Añade al el curry y cocina, revolviendo, hasta que espese, 3 min.
