During Saturday's At-Home Session, we had the opportunity to speak with Philippe Pascal of Givry's Domaine du Cellier aux Moines, one of the oldest domaines in Burgundy. The winery has a history that dates back to 1130 and, since 2004, Pascal has owned the domaine. In 2016, he began the process of converting the estate to biodynamic agriculture. At Home with Jean Gonon this morning, thanks to @pressoir.wine and their winemaker series. We enjoyed our coffee with Jean as he talked about his winemaking techniques (“we don’t want to do what other people are doing”) and his collaborative approach with his brother Pierre (“it is easy because we are different”). He pleaded the 5th on when they would release the next VV cuvée. It took us back to our visit at Gonon two springs ago, when we tasted in the cellar with Jean - truly an extraordinary visit.
